¼ cup grated Parmesan cheese
2 teaspoons Italian-style seasoning
1 cup milk
1 pound skinless, boneless turkey breast meat - cut into strips
¼ cup olive oil

Steps:

  • In shallow bowl, combine bread crumbs, Parmesan cheese and Italian seasoning. Pour milk into another shallow bowl. Dip turkey in milk, then in crumb mixture.
  • Heat olive oil in a large skillet over medium heat. Cook turkey for 8 to 10 minutes or until golden brown, and juices run clear.

2/3 cup seasoned bread crumbs, divided
1/3 cup finely chopped onion
2 teaspoons low-sodium Worcestershire sauce
2 teaspoons A.1. steak sauce
1 garlic clove, minced
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 pound extra-lean ground turkey
1-1/2 teaspoons olive oil
SAUCE:
2 tablespoons olive oil
2 tablespoons all-purpose flour
1-1/2 cups reduced-sodium beef broth
1 tablespoon low-sodium Worcestershire sauce
1 tablespoon A.1. steak sauce
1 can (4 ounces) sliced mushrooms, drained

Steps:

  • In a large bowl, combine 1/3 cup bread crumbs, onion, Worcestershire sauce, steak sauce, garlic and seasonings. Add turkey; mix lightly but thoroughly. Shape into four 1/2-in.-thick oval patties. Place remaining bread crumbs in a shallow bowl. Press patties into crumbs, patting to help coating adhere., In a large nonstick skillet, heat 1-1/2 teaspoons oil over medium heat. Add patties; cook 3-4 minutes on each side or until a thermometer reads 165°. Remove from pan., In same pan, heat 2 tablespoons oil over medium heat. Stir in flour until smooth; gradually whisk in broth, Worcestershire sauce and steak sauce. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in mushrooms. Return patties to pan. Reduce heat; simmer, covered, 2-3 minutes or until heated through.

Turkey Steak was another historic recipe found among the treasures of the old farmhouse. It is simple and really good. The way it is worded tells me that it's a pretty old recipe. Instead of a whole Turkey I tested it with a whole turkey breast. Since that is what the recipe focused on.

1 turkey breast (5-8 lbs) or you can parboil a 30 lbs turkey
1 qt milk
8 eggs
salt & pepper, to taste
2 c flour enough for dredging
2 c bread crumbs
deep fat

Steps:

  • 1. Parboil a turkey of 26-30 lbs. ( I made it simple by using just the turkey breast) until fairly well done. Lift out breast and cut steaks as you would from a beef tenderloin.
  • 2. Dip steaks in a batter made of milk, eggs, salt, and pepper. Dredge in flour; shake off excess. Then dunk back in batter and dredge in breadcrumbs.
  • 3. Fry in fat (350^) until golden brown. (Cook in a deep fat fryer)

4 turkey breast steaks
3 tablespoons plain flour, seasoned
1 egg, lightly beaten
1 1/2 cups bread, crumbs
5 tablespoons finely grated parmesan cheese
2 tablespoons butter
3 tablespoons sunflower oil
parsley, and lemon wedges to serve

Steps:

  • Lay the turkey steaks between two sheets of plastic wrap. Hit with a rolling pin until flattened.
  • Snip edges of the steaks with scissors a few times to prevent them from curling during cooking.
  • Place the seasoned flour on one plate, the egg in a shallow bowl and the breadcrumbs and Parmesan mixed together on a third plate.
  • Dip each side of the steaks into the flour, then egg, then breadcrumbs and cheese until evenly coated.
  • heat the butter and oil in a large frying pan and fry the turkey steaks over moderate heat for 2-3 minutes on each side until golden.
  • Garnish with parsley and lemon wedges.

  • pre-heat the oven to 190 degrees, meanwhile make your bread crumbs in a food processor
  • add the parsley & olive oil
  • add the juice and rind of lemon
  • beat the egg and season with salt and pepper

3 tbsp plain flour
1 large egg
100g fresh breadcrumb
zest 1 lemon , plus lemon wedges to serve (optional)
small handful parsley , chopped
450g turkey breast steaks
2 tbsp sunflower oil
4 vines cherry tomatoes
350g broccoli , cut into small florets
400g can butter bean , drained
4 tbsp pesto

Steps:

  • Heat oven to 180C/ 160C fan/gas 4. Put the flour into a wide, shallow bowl with a little seasoning. Whisk the egg in a second shallow bowl with 1 tbsp water. Add the breadcrumbs, lemon zest and parsley to a third shallow bowl.
  • Get the kids to dip each turkey steak into the flour, shaking off any excess, then into the egg, and finally into the breadcrumbs - press the crumbs into the turkey to make sure they really stick. Put the steaks on a large baking tray, drizzle with oil and bake for 20 mins. Add the cherry tomatoes to the tray and bake for a further 5 mins.
  • Meanwhile, boil a pan of water, then add the broccoli and cook for 5 mins. Add the butter beans and cook for 2 mins more until broccoli is really tender. Drain well and leave to steam-dry for 1-2 mins. Tip back into the pan, add the pesto and get the kids to mash everything up with a potato masher. Divide the turkey smash and tomatoes between plates - adding lemon wedges for those who want to squeeze some over.
