4 cups cubed good white bread
3 tablespoons good extra virgin olive oil
3 tablespoons finely grated Parmesan
½ teaspoon minced fresh garlic
Kosher or coarse salt and freshly ground pepper (to taste)

Steps:

  • Preheat the oven to 375°F. Spray a rimmed baking sheet with nonstick cooking spray. In a large bowl toss the bread cubes with the olive oil, Parmesan, garlic, and salt and pepper.
  • Spread the croutons on the baking sheet, leaving some space between them. Bake for about 8 to 10 minutes, until the outside in lightly browned and crisp. The middle should still be a bit soft. Remove them from the pan and cool.

Tomato Soup With Parmesan Croutons image

1 tablespoon butter
1 tablespoon olive oil
3 large carrots, peeled and finely diced
1 clove garlic, grated on a rasp grater
1 medium onion, finely diced
2 tablespoons tomato paste
Three 28-ounce cans whole tomatoes
4 cups vegetable or chicken broth
2 tablespoons finely minced fresh parsley
1/2 cup heavy cream
2 tablespoons chopped fresh basil
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1/2 baguette, sliced into rounds
Olive oil, for drizzling
1/2 cup grated Parmesan

Steps:

  • For the soup: In a large pot, heat the butter and oil over medium-high heat. Add the carrots, garlic and onions and stir and cook for 5 minutes. Add the tomato paste and cook, stirring, another 2 to 3 minutes. Add the canned tomatoes, broth, parsley and 1 cup water and stir. Bring to a boil, then reduce the heat, cover the pot and simmer for 15 minutes.
  • Use an immersion blender to puree the mixture, still leaving some texture to the tomatoes. Add the cream, basil and some salt and pepper, and simmer for another 5 minutes.
  • For the croutons: Drizzle the baguette rounds lightly with olive oil. Place little piles of Parmesan in a nonstick skillet. Place a baguette round on top of each pile. Turn on the heat to medium. Press with a spatula as you melt the cheese into each round. When set, flip to the other side to toast.
  • Serve the soup with 1 or 2 croutons on top.

CRISPY GARLIC PARMESAN CROUTONS

Turn a good salad into a great one with crispy garlic parmesan croutons. This garnish will work for salads, but they are also great as a snack.

4 cloves garlic (minced very fine)
1/2 cup olive oil
1 (8-ounce) loaf French baguette or similar style bread (for best results, use day-old bread)
3/4 cup finely grated Parmesan cheese, divided
1/2 teaspoon dried Italian herbs
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper (freshly ground)
Pinch of cayenne

Steps:

  • Gather the ingredients.
  • Combine the garlic and olive oil in a small mixing bowl. Let sit out at room temperature for at least 4 hours to infuse.
  • Preheat oven to 300 F. Cut the bread into 1-inch cubes and add to a large mixing bowl. Add 1/2 cup of the cheese, dried herbs, paprika, salt, black pepper, and cayenne.
  • Strain the garlic oil over the bread cubes, pressing the garlic with the back of a spoon to get every drop of garlicky goodness. Toss with a spatula until the bread is evenly coated.
  • Pour the mixture onto a baking sheet and place in the preheated oven for 15 minutes. Remove, and stir the croutons, as the ones on the outside will cook faster than those in the center. Return to oven, and cook for 15 more minutes.
  • Remove from oven, and sprinkle the last 1/4 of cheese over the croutons. Return to oven, and cook for 10 to 15 minutes, or until browned and crunchy. Allow them to cool completely before storing in an airtight container.

This recipe comes from Ina's book, The Barefoot Contessa Cookbook. She says it was devised to use leftover baguettes and she uses them as crackers for appetizers, on top of soup and as a snack. She suggests that you grate whole parmesan rather than buying the already grated kind.

1 baguette
1/4 cup olive oil
1 tablespoon kosher salt
2 teaspoons ground black pepper
1/4 cup grated parmesan cheese

Steps:

  • Preheat the oven to 400 degrees.
  • Slice baguette diagonally into 1/4 inch thick slices. Depending on the size of the baguette, you should get about 20 to 25 slices.
  • Lay the slices in one layer on a baking sheet and brush each with olive oil and sprinkle liberally with salt and pepper. You can use either plain or flavored olive oil such as basil or garlic. The measurements for the salt and pepper in the ingredients are just estimates and you use whatever amount suits you. Sprinkle with the grated parmesan and bake for 15 to 20 minutes until they are browned and crisp. Serve at room temperature.

1 large garlic clove peeled and left whole
2 tablespoons olive oil
4 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven broiler.
  • Rub the bread's crust all over with the garlic clove.
  • Slice the bread on the bias 1/4 inch thick. Arrange the slices in a baking dish, brush with the oil and sprinkle with Parmesan cheese.
  • Place under the broiler until golden brown on one side. Turn and brown lightly on the reverse side.

Superb Squash Soup with the Best Parmesan Croutons image

This fantastic soup is best made with varieties of squash that have dense, orange flesh, such as butternut or onion squash. It's important to use good chicken stock and season the soup well to bring out the nutty, sweet flavor of the squash. Once you've mastered this recipe, you can take the soup in different ways by adding pearl barley, dried pasta, or some chopped bacon. Even the smallest amount of dried porcini. P.S. I made this in my pressure cooker the other day, with really great results - it's so quick!

16 fresh sage leaves
2 red onions, peeled and chopped
2 sticks celery, trimmed and chopped
2 carrots, peeled and chopped
4 cloves garlic, peeled and chopped
2 sprigs fresh rosemary, leaves picked
1/2 fresh red chile, to taste, seeded and finely chopped
Sea salt and freshly ground black pepper
4 1/4 pounds butternut squash, onion squash, or musque de Provence, halved, deseeded and cut into chunks
2 quarts good-quality Chicken or vegetable stock
Extra-virgin olive oil
Extra-virgin olive oil
16 slices ciabatta bread
1 chunk Parmesan, for grating

Steps:

  • Put a very large saucepan on a medium heat and pour in a couple of glugs of olive oil.
  • Add the sage leaves and fry for around 30 seconds or until dark green and crisp. Quickly remove them with a slotted spoon to a bowl lined with paper towels - you'll use these for sprinkling over at the end. In the pan you'll be left with a beautifully flavored oil, so put it back on the heat and throw in your onion, celery, carrot, garlic, rosemary leaves, chile and a good pinch of salt and pepper. Cook gently for about 10 minutes until the vegetables are sweet and soft. Add the squash and the stock to the pan, bring to the boil and simmer for around 30 minutes.
  • While the soup is cooking, make your croutons. Drizzle a little olive oil over the ciabatta slices, and press some grated Parmesan onto each side. Place in a non-stick pan without any oil and fry until golden on both sides.
  • When the squash is soft and cooked through, whiz the soup with an immersion blender or pour it into a standard blender and pulse until you have a smooth puree* (but you can leave it slightly chunky if you like). Most importantly, remember to taste and season it until it's perfect. Divide the soup between your bowls, placing 2 croutons on top of each. Sprinkle with a few of your crispy sage leaves and drizzle with a swirl of good-quality extra-virgin olive oil.

  • Preheat oven to 300. Line a baking sheet with a silicone baking mat.
  • Stir olive oil and garlic together in a bowl. Let sit at room temperature until flavors are infused, about 3 hours.
  • Place bread cubes in a large bowl. Pour garlic oil through a strainer onto the bread; toss to coat bread with oil. Add 1/2 cup Parmigiano-Reggiano cheese, Italian seasoning, paprika, black pepper, salt, and cayenne pepper; toss to coat. Spread bread cubes out in a single layer on the prepared baking sheet.

1 teaspoon dried oregano, crumbled

1/2 teaspoon pepper
1/2 cup olive oil
1 loaf of Italian bread, cut into 3/4-inch cubes (about 7 cups)
1/4 cup finely grated fresh Parmesan

Steps:

  • In a small saucepan combine the garlic, the oregano, the basil, the thyme, 1/2 teaspoon of the salt, the pepper, and the oil and simmer the mixture for 5 minutes, and discard the garlic. In a bowl toss the bread cubes with the oil mixture, spread them in a jelly-roll pan, and bake them in ht e middle of a preheated 350°F oven for 8 minutes. Sprinkle the croutons with the Parmesan and bake them for 7 minutes more, or until they are golden. Sprinkle the croutons with the additional salt and let them cool. The croutons keep in an airtight container for 1 week. Serve the croutons as a topping for tossed green salad.
