En casa a todos les encantan la carne con papas y queso. Pero ¿alguna vez las serviste como croquetas doradas? Pues acaba de nacer un nuevo platillo favorito de la familia.

1/2 taza de cebolla picada
1/4 taza de chiles verdes, de lata, picados y escurridos
1/4 cucharadita de hojuelas de chile rojo (ají) seco
2 tazas de bistec de paleta de res (chuck steak), cocido y desmenuzado
2 tazas de puré de papas
1/2 taza de queso cheddar suave desmenuzado KRAFT Shredded Mild Cheddar Cheese
1 huevo, batido
25 galletas saladas de mantequilla redondas, trituradas
2 tazas de aceite

Steps:

  • Cocina revolviendo los 3 primeros ingredientes en una sartén, rociada con aceite en aerosol, a fuego medio-alto durante 10 min. o hasta que la cebolla esté tierna pero crujiente.
  • Mezcla la carne, el queso y el puré en un tazón grande. Agrega la mezcla de cebolla; mezcla todo bien. Deja enfriar completamente la mezcla. Forma 15 croquetas alargadas (3 pulgs.). Sumérgelas una por una en el huevo y pásalas por las migas de galletas, volteándolas para cubrirlas por ambos lados.
  • Calienta el aceite en una cacerola grande a 375°F. Agrega las croquetas en tandas; cocínalas 3 min. por lado o hasta que estén doradas de ambos lados. Escúrrelas en toallas de papel. Sírvelas tibias.

From "Tapas" by Adrian Lissen. It's been a while since I've made these, but I recall that everyone loved these when we had a tapas party. Easiest if you make them the day before, then fry them right before serving.

2 lbs potatoes, peeled and cut in uniform pieces
2 egg yolks
1/4 cup butter (2 oz)
salt
pepper
1 pinch nutmeg, ground
1 teaspoon sherry wine
3 ounces parmesan cheese, grated
1 pinch dry mustard
2 tablespoons flat leaf parsley, minced
seasoned flour
1 egg, beaten with a bit of milk
breadcrumbs

Steps:

  • Cook potatoes in boiling salted water until tender. Drain.
  • Put potatoes back in pan and heat over low flame until completely dry, stirring to prevent scorching.
  • Put potatoes in a food processor with the egg yolks, butter, salt and pepper. Pulse a few times.
  • Add the nutmeg, sherry, parmesan, mustard and parsley. Pulse until the consistency of very thick mashed potatoes. If the mixture is too wet or runny, put mixture in a large bowl and incorporate a bit of flour, working in with your hands.
  • Adjust seasoning, then form small cylinders (about 3 x 1 inches).
  • Roll croquettes in seasoned flour to cover, shaking off excess.
  • Dip in beaten egg mixture, then roll them in breadcrumbs. Set aside and repeat until all potato mixture is used up.
  • Deep fry at 375 degrees until golden brown, drain and keep warm until served.
  • NOTE: these can be prepared in advance thru step #7 and refrigerated in an airtight container. Bring to room temp before frying.
