Steps:
- Mix marinade ingredients.
- Place pork chops in slow cooker.
- Cover pork chops with marinade and top with onion rings and lemon slices. Cook on high for 2-4 hours or low for 4-6 hours depending on how quickly your slow cooker cooks.
- Pork is medium well done when it is 160° and is well done when it is 170°.

LEMON PORK CHOPS (CROCKPOT)
This is a different take on pork chops. Very moist and delicious. They will be very tender and may fall apart so you must be very careful when removing to serve. They are great served on a bed of your favorite pasta and with a nice salad.

- 1. Whisk together V-8 juice, tomato paste, onion, garlic and pepper(it should take at least 4 cups to cover the chops completely in the Crockpot). Set aside.
- 2. Slice the lemon so there will be 1 slice per pork chop.
- 3. Place two pork chops in the bottom of the Crockpot. Place 1 lemon slice on each pork chop and gently pour 1/2 juice mixture over the chops so as not to disturb the lemon slices.
- 4. Place the other two pork chops on top of the first chops. Place one lemon slice on each chop and, again, gently pour 1/2 juice mixture over the chops so as not to disturb the lemon slices. If the juice mixture does not cover the chops, just add a little more V-8 juice to cover.
- 5. Cook on low for 6 to 8 hours (depending on the thickness of the chops).
- 6. These chops will be very tender and may fall apart so you must be very careful when removing to serve.

CROCKPOT LEMON PORKCHOPS
This is one of my mother's favorite recipes. It was always great to come home and smell this in the crockpot! And the meat is SOOOO tender - it literally falls off your fork in pieces! This recipe can be revised for small or large families very easily.

Steps:
- Whisk together equal amounts of water and ketchup (it usually takes at least two cups of each to cover the chops completely in the crockpot). Set aside.
- Slice lemon into enough slices that each chop has it's own slice.
- Lay first two chops in bottom of crockpot; top each chop with a lemon slice; pour 1/2 of ketchup and water mixture over the chops (carefully so as not to disturbe the lemon slices).
- Lay next two chops on top of previous chops; top with lemon slices; cover with remaining ketchup and water mixture (if necessary, an additional cup of ketchup and cup of water can be combined and added to the pot to completely cover the chops).
- Cook on medium for 6 hours.
- Remove CAREFULLY from crockpot to serve - the meat will be VERY tender and may fall apart! Salt and pepper to taste!
