CROCKPOT COWBOY STEW

We also like to top the stew with sour cream. This is a super easy, yummy recipe.

Number Of Ingredients 10

1 lb hamburger
2 clove garlic, chopped
15 oz tomato sauce
1 can(s) diced italian seasoned tomatoes
1 can(s) corn, drained
2 can(s) whole baby potatoes, drained
1 can(s) tomatoes with green chilies
1 can(s) ranch style beans
1 c water
sliced jalapeno peppers for garnish (optional)

Steps:

  • 1. Make sure that your crockpot is at least 5qts.
  • 2. Brown the hamburger with the chopped garlic cloves on the stove top. Drain the fat. Let sit in the pan for a bit to cool.
  • 3. Open all of you cans, and dump them into the crockpot. Drain the corn and the potatoes, but add the rest of the can liquid to the crockpot.
  • 4. After adding all of the can contents, add the browned meat and a cup of water. Stir with a spoon to mix a bit.
  • 5. Cover and cook on low for 8-10 hours, or on high for 4-5. Soup and stew tastes better the longer you cook it, so opt for the longer cooking time if you can.
  • 6. Garnish with sliced jalapeno peppers, if desired.

We stay so busy that I have made this as a quick meal served with cornbread or with just crackers. I try to keep extra cans in the cupboard so if need be I can make it at the last minute. My husband likes to rewarm it to eat the next day!!

2 can(s) vegall
1 can(s) diced tomatoes large can
1 can(s) cream style corn
1 can(s) chili no beans
1 lb ground beef - browned
salt and pepper

Steps:

  • 1. Brown ground beef and drain.Pour all cans liquid included into crock pot mix in ground beef. Salt and pepper to taste.
  • 2. Cook on high until bubbly. It can be eaten right away, but this soup is also great on the 2nd day!!
