1 pound red potatoes, cut into 1 inch cubes
1/2 cup onion, chopped
24 ounces frozen corn
3 cups chicken broth
1 teaspoon pepper
2 cups half & half
2 tablespoons cornstarch
1/2 pound bacon, crisply cooked and chopped

Steps:

  • Add potatoes, corn, onion, broth, salt, & pepper to crockpot. Cover and cook on high 3 to 4 hours. In a small bowl, mix half & half and cornstarch, whisking until smooth. Add half & half mixture and bacon to crockpot. Cover and cook another 10 to 15 minutes, or until sauce is thickened. Serve and enjoy!

1 (15 ounce) can creamed corn
2 -3 medium potatoes, chopped
1 onion, chopped
1/2 teaspoon salt
pepper
2 cups chicken broth
2 cups milk
1/4 cup butter or 1/4 cup margarine

Steps:

  • Combine first 7 ingredients in crock pot.
  • Cover and cook on low for 7 to 9 hours.
  • Mash up potatoes a bit if desired.
  • Stir in milk and butter and cook on high about 1 hour more.

4 slices bacon, minced
1 medium onion
5 cups milk
1 cup heavy cream
2 medium potatoes, peeled & diced
2 tablespoons chopped green chilies
12 ears fresh corn, kernels removed
1/4 cup chopped fresh chives
salt & pepper
1 dash cayenne pepper

Steps:

  • Cook bacon over medium heat until browns and crisp.
  • Remove and cook onion until translucent.
  • Add bacon, onion, potatoes, chilies, corn and milk.
  • Cook on high for 4 hours.
  • Pour 1/2 soup into blender and puree.
  • Return to crock pot add cream and stir in the chives and seasonings to taste.
