CROCK POT WHITE CHICKEN CHILI
This white chicken chili recipe is adapted from a Betty Crocker slow cooker recipes cookbook. I often use frozen chicken breasts, and it can also be prepared conventionally on the stove top. Great comfort food!

Steps:
- Place chicken in a 4 quart slow cooker.
- Top with beans and corn.
- In a medium bowl, combine taco seasoning, chiles, condensed soup, and chicken broth. Pour over top of ingredients in the crock pot.
- Cover and cook on low for 8 to 10 hours.
- Before serving, stir gently to break up chicken, then stir in the sour cream.
- Serve topped with green onions and jack cheese, if desired.

- Chicken should be cooked and shredded. I just boil mine the night before, & shred in the morning. Beans should soak the night before in a pot of water. Drain beans in the morning. Place chicken and rinsed beans in crockpot.
- Add taco seasoning, cumin, chiles, condensed soup, water and chicken broth.
- Mix well with wooden spoon.
- Cover and cook on low for 8 to 10 hours.
- Add potato flakes before serving to thicken.
- Serve topped with sour cream, green onions, and cheddar/jack cheese.

- 1. Cook chicken breasts, remove meat from bones and chop. (Reserve broth from cooking for use later in the recipe.)
- 2. In a medium pan, sauté onions, garlic and jalapenos in olive oil until soft.
- 3. Mash or puree one can of the beans. Place pureed beans in crock pot. Add the other two cans of beans.
- 4. Stir in onion, garlic and peppers. Stir in the rest of the ingredients, adding chicken and corn last.
- 5. Cook on low for 4 hours. Serve with shredded cheese.

- Rinse and sort the navy beans (removing any small rocks, etc.) Place into the bottom of a 6-quart crock pot.
- In a large skillet, heat the canola oil over medium-high heat and brown the chicken on both sides. Place chicken on top of the navy beans in the slow cooker.
- Chop the onions and celery and add to the same skillet that you cooked the chicken. Cook for 5 minutes over medium heat then add the garlic and cook for a further 2 minutes.
- Add the garlic powder, onion powder, cumin, salt, oregano and black pepper. Stir to combine.
- Stir in the jalapeños and stock and bring to a boil.
- Pour mixture into the crock pot on top of the chicken.
- Cover and cook on low for 6 hours or high for 4 hours.
- Remove chicken from crock pot and shred then add the cilantro and serve.
