SLOW COOKER SWEET POTATOES

6 to 7 sweet potatoes, peeled and cut into chunks
1 1/2 tablespoons cornstarch
4 tablespoons salted butter
1 cup packed brown sugar
1 teaspoon pumpkin pie spice
1/4 teaspoon cayenne
1 teaspoon vanilla extract
Juice of 1 orange
Pinch of kosher salt
Chopped walnuts, toasted, for serving
Chopped fresh parsley, for serving

Steps:

  • Toss the sweet potatoes with the cornstarch in a bowl to coat well. Add the mixture to a slow cooker and dot with the butter. Sprinkle over the brown sugar, pumpkin pie spice and cayenne. Pour in the vanilla, orange juice and 1/4 cup water. Season with salt. Place the lid on the slow cooker and cook on low, stirring once or twice, until the potatoes are tender, about 3 hours.
  • Toss the potatoes once more and transfer to a serving dish. Sprinkle with the walnuts and parsley and serve.

5 teaspoons cornstarch
1/4 teaspoon salt

1 cup apricot nectar
1/2 cup hot water
2 teaspoons grated orange zest
2 tablespoons butter
1/2 cup chopped pecans

Steps:

  • Place sweet potatoes in a 13x9-in. baking dish and set aside. In a saucepan, combine sugar, cornstarch, salt and cinnamon; stir in apricot nectar, water and orange zest. Bring to a boil, stirring constantly. Cook and stir 2 minutes more. Remove from heat; stir in butter and pecans. Pour over sweet potatoes. Bake, uncovered, at 350° for 20-25 minutes or until heated through.

1 fully cooked boneless half ham (2 1/2 to 3 lb)
2 lb sweet potatoes, peeled and cut in half lengthwise, cut into 1/2-inch slices
1 large sweet onion, cut in half lengthwise, cut into 1/4-inch slices
1/2 cup Progresso™ chicken broth (from 32-oz carton)
1/2 cup packed brown sugar
1/4 cup butter, melted
2 tablespoons honey
1 teaspoon dried thyme leaves
1 teaspoon ground ginger

Steps:

  • Spray 6-quart oval slow cooker with cooking spray.
  • Make cuts about 1 inch apart and 1/4 inch deep in diamond pattern in top of ham. Place ham cut side down in center of slow cooker. Arrange potatoes and onion evenly around ham. Pour broth on top of potatoes and onion.
  • In small bowl, mix remaining ingredients. Pour mixture on top of ham, potatoes and onion.
  • Cover; cook on Low heat setting 4 to 5 hours or until potatoes are tender and instant-read thermometer inserted in center of ham reads at least 145°F. Remove ham to cutting board; cover loosely with foil, and let stand 15 minutes.
  • To serve, cut ham into slices, and transfer to serving dish. With slotted spoon, transfer potatoes and onions to serving dish with ham. Spoon some of the cooking juices on top of ham, if desired.

¼ cup water
2 tablespoons maple syrup

¼ teaspoon ground nutmeg
¼ teaspoon salt
10 miniature marshmallows, or more to taste

Steps:

  • Spray the inside of a slow cooker with cooking spray.

My mother thinks this sounds like the recipe she used at Thanksgiving that I have been bugging her for. She can't find her book and she found this at About.com. I tried it today to take to a friend's Ayyam-i-Ha party, as he was making turkey. It was really good and got many compliments. I have to admit that during its day of cooking it reeked of garlic and I was a little worried about it. But when it was all done, it smelled good and tasted wonderful.

3/4 cup apricot filling

5 -6 sweet potatoes, peeled & cut into chunks
2 Red Delicious apples, peeled & cut into chunks
8 ounces apricot preserves
1 cup light brown sugar
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
3/4 cup orange juice, with pulp prefered
1/2 cup Jack Daniels Whiskey

Steps:

  • Peel & rinse the Sweet Potatoes & the apples.
  • Cut into chunks a little bigger than the size of a quarter.
  • Add remaining ingredients EXCEPT the OJ & the JD.
  • Place into small crock pot.
  • Add the OJ & JD -- stir well.
  • Cover & cook on low setting for 6-8 hours.
  • Check after 6 hours for doneness & every ½ hour after that.
  • Serve & ENJOY!

⅓ cup butter, melted
