Easy and delicious pineapple chicken. My family loves this recipe. Great served over rice. Add 3 to 4 tablespoons of your favorite ginger-carrot salad dressing for extra tang and flavor.

Steps:
- Put flour into a shallow bowl. Dredge chicken thighs in the flour to coat; tapping thighs to remove excess flour.
- Arrange chicken thighs in the bottom of your slow cooker crock; top with pineapple chunks.
- Whisk pineapple juice, soy sauce, brown sugar, ketchup, and garlic together in a small bowl; pour over the chicken and pineapple in the slow cooker.
- Cook on Low for 4 hours.

- Heat oil in a skillet over medium-high heat. Brown chicken in hot oil, about 2 1/2 minutes per side.
- While chicken is cooking, mix brown sugar, soy sauce, honey, garlic, and ginger together in a small bowl.
- Transfer chicken to the bottom of a slow cooker. Place pineapple and onion on top of the chicken. Pour sauce over top.
- Cover and cook on High for 3 hours.
- Preheat the oven to 500 degrees F (260 degrees C).
- Remove chicken from the slow cooker and place on a baking sheet.
- Bake chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 15 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- Meanwhile, mix cornstarch and water together in a small bowl. Add it to the slow cooker, stir, and cook until sauce has thickened, about 30 minutes. Add snap peas and chicken and cook until heated through, 15 to 20 minutes more.

- Lightly coat a 5-quart or larger slow cooker with baking spray and arrange the chicken thighs in a single layer on top. Drain the pineapple juice from the can into a large liquid measuring cup or mixing bowl. Whisk in the cornstarch. Once smooth, stir in the soy sauce, garlic, ginger, sesame oil, red pepper flakes, and black pepper. Pour over the chicken. Add the pineapple chunks and red pepper.
- Cover the slow cooker and cook on LOW for 4-5 hours or HIGH for 1 1/2 - 2 hours, until cooked through.
- With a slotted spoon, remove the chicken and vegetable mixture to a plate. Strain the sauce into a small saucepan. Simmer over high until it reduces by half, about 4-5 minutes, stirring very frequently. Add back to the slow cooker with the chicken mixture. Add the water chestnuts and green onion. Stir to combine. Serve hot with cauliflower rice, brown rice, or quinoa.

- Thoroughly coat chicken in flour mixture.
