This recipe has been in my family for at least three generations, passed down from my Canadian grandmother. It's been a favorite wintertime dessert for us and always included for Easter dinner and other holiday meals. -Ann Searcey, Kettering, Ohio

1/2 cup butter, softened
1/2 cup sugar
2 large eggs, room temperature, lightly beaten
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup shredded peeled carrots
1 cup shredded uncooked peeled potatoes
1 cup each raisins, chopped dates and nuts
VANILLA SAUCE:
1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
2 cups cold water
1/4 cup butter, cubed
2-1/2 teaspoons vanilla extract
Dash ground nutmeg

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine the dry ingredients; gradually add to creamed mixture. Stir in the carrots, potatoes, raisins, dates and nuts. , Pour into a well-greased 6-cup pudding mold or metal gelatin mold. Cover with foil. Place on a rack in a stockpot. Add 1 in. of boiling water to stockpot; cover and boil gently for 1-1/4 to 1-1/2 hours or until a toothpick inserted in the center comes out clean, replacing water as needed. Let stand for 5 minutes before unmolding., Meanwhile, in a small saucepan, combine the sugar, cornstarch and salt. Stir in water until smooth. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened. Remove from the heat. Stir in the butter, vanilla and nutmeg. Serve with warm pudding.

3/4 cup hard margarine or 3/4 cup butter, softened
3/4 cup granulated sugar
2 large eggs
1/2 cup prepared oranges or 1/2 cup apple juice
2 cups raisins
1 1/2 cups cut mixed mixed glace fruit
1 cup fine dry breadcrumb
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup all-purpose flour

Steps:

  • Cream margarine and sugar together in bowl. Beat in eggs, 1 at a time. Add orange juice. Beat.
  • Combine remaining 9 ingredients in separate large bowl. Stir together well.
  • Pour orange juice mixture into dry ingredients. Stir until moistened.
  • Turn into greased 8 cup pudding pan. Cover with greased foil, tying sides down with string. Place on wire trivet in 5 quart slow cooker.
  • Pour boiling water into slow cooker to reach halfway up sides of pudding pan.
  • Cover. Cook on High for 5 hours.

SLOW COOKER GOLDEN SYRUP SPONGE

This slow cooker golden syrup sponge is incredibly easy to make and so delicious - a light, fluffy sponge drenched in golden syrup. Serve with warm custard or clotted cream on a cold Winter's day. Comfort food of the highest order!

150g golden syrup
175g soft butter
175g caster sugar
3 large eggs, at room temperature
1 teaspoon vanilla extract
175g self raising flour
3 or 4 tablespoons whole milk

Steps:

  • Preheat your slow cooker. Generously butter a 1.5 litre pudding basin. I use a plastic pudding basin (with a lid) that's especially designed for steamed puddings. Pour the golden syrup into the buttered basin.
  • Cream the butter and sugar together until very light and fluffy. Gradually beat in the eggs one at a time, making sure each one is well incorporated before adding the next. Stir in the vanilla extract.
  • Using a large metal spoon, fold in the self raising flour and milk until you have a batter that drops easily from the spoon. You might not need the 4th tablespoon of milk.
  • Spoon the batter into the pudding basin on top of the golden syrup. Place a little circle of tin foil on top and pop the lid on top to secure. Place the basin in your pre heated slow cooker. Carefully pour in boiling water until it comes about half way up the basin. Place the lid on top and cook on high for about 3 1/2-4 hours.
  • Using oven gloves, carefully remove the basin from the slow cooker. Pour the boiling water down the sink (again, please take care as it will be scalding hot!) Place the pudding basin upside down on a serving plate. The pudding should slip right out of the basin. Serve with warm custard, clotted cream or ice cream.

1 cup light molasses
3/4 cup melted butter
1/2 cup warm milk
2 eggs, beaten
1 cup all-purpose flour, plus additional for tossing fruit
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 pint candied mixed fruit (or diced dried fruit such as pineapple, pears, apples, and plums)
1 cup raisins
1 1/2 ounces brandy
Holly sprig, for garnish
Hard Sauce, recipe follows
1/4 pound butter
1 cup sugar
1 pinch salt
1 teaspoon vanilla extract
1-ounce brandy or rum

Steps:

  • Combine the molasses, butter, milk, and eggs in a mixing bowl. Next, combine the flour, baking soda, salt, cinnamon, and cloves in a large mixing bowl. Add the dry ingredients to the wet ingredients in 3 additions. Toss candied fruit and raisins lightly with flour to prevent sinking and add to batter. Stir in brandy.
  • Pour into a greased and sugared steam pudding mold and place on a rack in a large covered pot with water that comes halfway up the sides of the mold. Cover and steam for 2 hours, checking occasionally to make sure water hasn't boiled out. Let cool for 5 minutes on a rack before turning out. Dust with powdered sugar and serve with a sprig of holly and Hard Sauce.
  • Beat all ingredients together until very well combined. Serve with pudding.
