SLOW COOKER SPICY COCONUT CHICKEN DRUMSTICKS

A slightly spicy and creamy coconut chicken and sauce that braises for hours in the slow cooker while you're getting a million other things done!

1 (14 oz) can coconut milk
1 tsp dried basil
2 Tbsp Sriracha
1 Tbsp garlic thai chili paste
1 Tbsp soy sauce
1 cup diced onions (I used a yellow onion)
1/2 cup chopped cilantro, plus more for serving
3-4 lbs of chicken drumsticks (I put 10 in my slow cooker)

Steps:

  • Combine basil, coconut milk, Sriracha, garlic thai chili paste, soy sauce, onion and cilantro in the slow cooker. Stir.
  • Using a double layer of paper towels pull the skin off of the chicken legs. Add the now skinless chicken legs into the slow cooker. Nestle them into the sauce.
  • Cover the slow cooker and cook on LOW for 6-8 hours, Chicken will be very tender.
  • Serve the chicken and sauce over rice and top with extra cilantro.

10 medium chicken drumsticks
1/2 cup hot sauce ((see Notes))
1/4 cup ghee, (cubed)
1/2 tsp garlic powder
1/2 tsp onion powder
salt and pepper (to taste)

Steps:

  • Place all of the ingredients in your slow cooker, and cook for 2.5 hours on high.
  • Near the end of the 2.5 hours, preheat the oven to 400˚F. Line a baking sheet with aluminium foil.
  • Once the slow cooker is done, place the drumsticks on the prepared baking sheet, and cook in the preheated oven for 30 minutes.

1 (5 ounce) bottle hot red pepper sauce
¼ cup butter, cubed
½ teaspoon garlic powder
½ teaspoon onion powder
salt and pepper to taste
1 ½ cups blue cheese salad dressing

Steps:

  • Place the drumsticks in a slow cooker, and sprinkle evenly with pieces of butter. Pour the hot sauce over the chicken, then season with garlic powder, onion powder, salt and pepper. Cover, and cook on High for 3 hours, or until tender. Serve chicken legs with blue cheese dressing on the side.

nonstick cooking spray
4 chicken drumsticks, skinned*
1/2 cup picante sauce
2 teaspoons cayenne pepper sauce (such as Frank's Red Hot) or 1/8 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
1/4 teaspoon dried thyme, crushed
1 bay leaf
2 teaspoons olive oil

Steps:

  • Lightly coat an unheated 3- or 3 1/2-quart slow cooker with cooking spray.
  • Place chicken in the bottom of the cooker. In a small bowl combine picante sauce, pepper sauce, paprika, thyme, and bay leaf. Spoon over chicken in cooker.
  • Cover and cook on low-heat setting for 6 hours or on high-heat setting for 3 hours.
  • Transfer chicken pieces to a serving bowl. Remove bay leaf from sauce in cooker; stir in the oil. Spoon sauce evenly over the chicken. Cover and let stand for 10 minutes to absorb flavors.
  • To serve, spoon 1 teaspoon sauce over each drumstick. Discard remaining sauce.
