1 ½ pounds raw peanuts, in shell
¾ to 1 cup kosher salt

Steps:

  • Combine peanuts, salt, and 14 cups water in a tall, oval 6-quart slow cooker. Cover and cook on HIGH 18 hours or until peanuts are soft. Drain peanuts before serving or storing. Store in zip-top plastic bags in refrigerator up to 2 weeks.

2.5 pounds Green peanuts (, in the shell - raw peanuts may be substituted. see recipe notes.)
1/3 cup Cajun seasoning
1 tablespoon Garlic powder
2 Tbsp Salt (season with more or less to taste throughout the cooking process.)
2 Tbsp Red pepper flakes (, more or less to preferred spice level)
8 cups Water (6-8 cups. Fill until the peanuts start to float off the bottom of the crock. )
2 - 4 Whole Jalapenos or Habaneros (, optional. Canned sliced jalapenos may be used.)
2 Ham hocks (optional)

Steps:

  • Place ham hocks (if using) on the bottom of the 6-qt slow cooker. Then add the peanuts, cajun seasoning, garlic powder, salt, and red pepper flakes. Pour in enough water to cover the peanuts and stir to combine.
  • Cover and cook on HIGH for 6 to 8 hours or LOW for 12 to 16 hours until peanuts are cooked to your desired softness. Stir occasionally, and test salt level. Add more if you prefer a saltier brine. Add additional water if needed to keep peanuts covered.
  • Serve hot or cold.
  • Storage: Store cooked peanuts in the refrigerator in zip top bags with brine for up to 7 to 10 days. Freeze peanuts with brine in zip top bags up to 6 months. Allow to defrost and serve warm or cold.

3 jalapenos, (sliced)
1/2 cup kosher salt
2 tablespoons red pepper flakes
2 tablespoons Creole or cajun seasoning, (I use Tony Chachere's)
1 tablespoon garlic powder
10 cups water

Steps:

  • Place peanuts in a 6-quart crock pot.
  • Add jalapenos, salt, red pepper flakes, cajun seasoning, and garlic powder.
  • Pour in approximately 10 cups of water.
  • Cover and cook on LOW for 22 to 24 hours. You may need to add a little more water before they are finished cooking.
  • Drain and serve warm or cold.

1 (3 ounce) package dry crab boil (such as Zatarain's® Crab and Shrimp Boil)
½ cup chopped jalapeno peppers
1 tablespoon garlic powder
½ cup salt
2 tablespoons Cajun seasoning
½ cup red pepper flakes

Steps:

  • Place peanuts, crab boil, jalapenos, garlic powder, salt, Cajun seasoning, and red pepper flakes into a slow cooker. Pour in water to cover the peanuts and stir to combine. Cover and cook on Low until peanuts are soft, at least 24 hours. Stir occasionally, and add water as needed to keep peanuts covered. Drain; serve hot or cold.

2 lbs raw peanuts, in shell (green ones are best but hard to find up north)
water, about 4 quarts
2 tablespoons cayenne pepper
1/4 cup crushed red pepper flakes
6 -10 whole black peppercorns
6 garlic cloves, peeled left whole
1/4 cup salt (kosher is best)

Steps:

  • Add all ingredients to a large pot
  • stir well.
  • set on high heat to boil.
  • once boiling reduce heat to a low simmer
  • simmer until soft usually about 3 hours stir occasionally.
