SPICED POTTED SHRIMP

In the history of British cuisine, potting perishable foods - that is, sealing ingredients in a crock under a thin layer of clarified butter - was a way to preserve them. Thanks to modern refrigeration, preservation is no longer the point, but luscious, buttery potted dishes are still popular throughout Britain. Here, diced shrimp are aggressively seasoned with anchovy, celery seed, lemon zest and garlic before being sealed into ramekins. Potted shrimp is a very rich dish, best served in small quantities with hot toast on the side to melt the solidified butter back into a creamy sauce. Or, scoop out the shrimp and butter and mix it with hot pasta to create an instant scampi-like dish.

1 1/2 cups unsalted butter (3 sticks)
4 anchovy fillets, chopped
2 teaspoons fresh thyme or lemon thyme, minced, more for garnish
1/2 teaspoon lemon zest
1/4 teaspoon plus 1/8 teaspoon mace (or nutmeg)
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
Pinch cayenne
Pinch celery seed
1 pound peeled shrimp, cut into 1/4-inch dice
1 garlic clove, grated on a Microplane or minced
Lemon wedges, for serving
Tabasco, for serving
Hot toast, for serving

Steps:

  • Melt butter in a large skillet over medium heat. Let cook, skimming the foam off the top of the butter, until the white milk solids fall to the bottom of the pan. Carefully pour about half the clarified butter into a measuring cup with a spout and set aside. Leave remaining butter and all those milk solids in the skillet.
  • Add anchovy, thyme, lemon zest, mace, salt, pepper, cayenne and celery seed to skillet. Stir in shrimp and cook over medium heat until pink, about 3 minutes. Remove pan from heat and stir in garlic.
  • Divide shrimp among 8 ramekins, top with the remaining herbed butter from the skillet and chill until set, about 1 hour.
  • Pour reserved clarified butter on top and chill until set, about 15 minutes, or up to 5 days (or freeze for up to 1 month). Remove ramekins from the refrigerator at least 20 minutes to 1 hour before serving with lemon wedges, Tabasco and hot toast.

SLOW COOKER SHRIMP IN PURGATORY

This recipe is inspired by eggs in purgatory, a Southern Italian dish in which eggs simmer in a spicy tomato sauce. Shrimp aren't commonly thought of as slow cooker material, but here, the sauce simmers for several hours, and the quick-cooking shrimp is dropped in just a bit before you want to eat. (You can use frozen shrimp; just thaw them first.) Cooking the sauce on high allows the onion and garlic to tenderize and melt into the sauce. The tomatoes and roasted peppers caramelize slightly as they simmer, so when fully cooked, the sauce should be a shade darker than when you started. The sauce holds well on the warm setting. Serve the shrimp in shallow bowls on its own, or over orzo, couscous or polenta and with crusty bread. Find a skillet version of this dish here.

3 tablespoons olive oil
1 yellow or red onion, minced
8 ounces roasted red peppers, drained and chopped (about 1 cup)
2 tablespoons minced jarred Calabrian chiles or minced jarred cherry peppers, stems removed, or cherry pepper relish
8 garlic cloves, minced
1 teaspoon dried oregano
1/2 to 1 teaspoon red-pepper flakes, plus more as needed
1/2 teaspoon fennel seeds
1 (14-ounce) can whole or crushed tomatoes
Kosher salt and black pepper
1 to 1 1/2 pounds peeled, deveined shrimp
1 tablespoon capers, drained
2 scallions, thinly sliced
1/2 cup grated Parmesan, plus more for serving

Steps:

  • In a 6- to 8-quart slow cooker, combine the oil, onion, roasted red peppers, Calabrian chiles, garlic, oregano, red-pepper flakes, fennel seeds and tomatoes. (Crush the tomatoes by hand if using whole.) Season with 1/2 teaspoon salt and several generous grinds of black pepper. Stir well to combine, then cover and cook on high for 5 hours. (The sauce holds well on warm for up to an additional 3 hours.)
  • Increase the heat to high if it has switched to warm. Stir in the shrimp, capers and scallions. Cover and cook until the shrimp are curled and opaque, 15 to 20 minutes, depending on size and quantity. Turn off the heat and taste the sauce. Add more red-pepper flakes and salt and pepper, if you like. Sprinkle the cheese over the top and serve, passing more Parmesan and red-pepper flakes at the table.

3 lbs round tip roast
1 -2 tablespoon cracked black pepper
2 cloves garlic, minced
3 tablespoons balsamic vinegar
2 tablespoons Worcestershire sauce
1/4 cup reduced sodium soy sauce
2 teaspoons dry mustard

Steps:

  • Make shallow slits in the top of roast.
  • Rub cracked pepper and garlic into roast.
  • Combine other ingredients into a bowl-pour over the meat.
  • Cover, cook on low 8 – 10 hours or high 4-5 hours.
