If you like loading your baked potatoes will all those delish dairy ingredients, then you'll love this soup recipe, too! Original recipe calls for only four slices of bacon, but I -- being a little piggy -- love the bacon, so we always use more like 8 to 12 slices. You decide which you prefer.

- Put the Ore Ida hash brown potatoes in the crockpot. Add in the chicken broth, cream of chicken soup and half of the bacon bits. Add a pinch of salt and pepper. Cook on low for 8 hours or until hash browns potatoes are tender. An hour before serving, cut the cream cheese into small cubes. Place the cubes in the crock pot. Mix a few times throughout the hour before serving. Once the cream cheese is completely mixed in, it's ready to serve. Top with cheddar cheese and some additional bacon bits.

- Preheat a large slow cooker by turning it to the High setting and covering with the lid.
- Place the cut-up potatoes in a microwave safe bowl, and microwave on High for about 8 minutes, until the potatoes are cooked and steaming hot.
- While the potatoes are cooking, place the butter in the preheated slow cooker, and cook and stir the onions and garlic for about 5 minutes, until the onions turn golden. Stir in 1/2 cup of milk, and whisk in the flour until smooth. Gradually whisk in the remaining 3 cups of milk, and let the mixture come to a simmer in the slow cooker. Simmer for about 10 minutes, until the soup begins to thicken.
- Stir in the hot cooked potatoes, crumbled bacon, sour cream, Cheddar cheese, Parmesan cheese, seasoned salt, parsley, red pepper flakes, celery salt, and dried basil. Stir to mix the soup well, reduce the slow cooker setting to Low, cover, and cook for 3 hours, stirring occasionally. Sprinkle with chives and serve.

I used a couple recipes I found here but ended up altering them enough that it was worth posting as a new recipe. This soup was amazing! The kids and adults all loved it. I served it with some toasted parmesan garlic bread and it was a delicious meal. (Note: I used 4 cups of water with 2 cubes of veg bullion and 2 cubes of chicken bullion. I also used about a cup of frozen broccoli/cauliflower/carrot mix. In place of Cajun seasoning, you can substitute salt, black pepper, dried thyme, red pepper, paprika, garlic powder, onion powder or flakes, and ground celery seed to taste.)

- In a stock pot, melt butter, add onions and garlic and saute over medium heat till tender, about 5 minutes.

I got this recipe from a newsletter (via email). This recipe is courtesy of Linda Dixon. I made it and I loved it. If you like a cream-type of potato soup and dill, this is the one for you. - 1. Turn crockpot on high. Put your hash browns (southern style, not the shredded style) in first. Sprinkle garlic and onion powder and beef bouillon granules on top. Pour chicken broth on it. Stir. Pour cheese on top of it and DO NOT STIR! If you turn your crockpot on at noon, your soup will be ready to thicken at 5PM!
- 2. After at least 5 hours of cooking on HIGH (that's counted as soon as you turn on your crockpot because it takes a little while to get hot), you'll need to thicken your soup. To do that...... Mix Half and Half with the flour and blend well - I use a shaker so it's really mixed good. Pour into your soup mixture and stir together easily - you don't want to smash all your cubes of potatoes. Take the "crock" out of the "pot" and salt and pepper to taste. I never have to salt it if I use bouillon. Be careful that it doesn't burn after you've added your cream mixture.
- 3. When you're ready to serve, garnish with bacon, cheese and sour cream, if desired. I did not want to garnish it, but I did want the taste of bacon in this soup, so I used a teaspoon of TASTEFULLY SIMPLE's BACON BACON and it was heavenly.
- 4. I serve with hot corn bread and sweet iced tea. Garlic bread would be nice, too. I'm not kidding here, this soup is to die for and SO easy!

Well, this is a no brainer! I am probably the only one that had never seen this recipe until recently. Saw on FB and knew I had to adjust to our tastes and try it. It is a definite keeper! Added ham and cheddar cheese to increase protein and make it a meal. Used O'Brien instead of regular hash browns to add the onion and peppers. Used lower sodium products to cut back on sodium content. I doubled the recipe for leftovers. A creamy, cheesy potato soup that uses your slow cooker to do all the work. Delicious and satisfying.
