My Grandmother used to make a simpler version of this soup using just ground hamburger. I decided to give my take on her soup and it turned out so warm and comforting on a cold day. It's become a favorite for my family.

2 1/2 c dried pinto beans, no need to soak them
32 oz. + 2 c chicken broth
1 c chopped onion
2 carrots, peeled and chopped
1 rib celery, chopped
1 large garlic clove, minced
10 oz diced tomatoes with green chilies
1 lb breakfast sausage, cooked and drained
1 bay leaf
1/4 tsp smoked paprika
salt & pepper to taste

Steps:

  • 1. Put all the ingredients in your crock pot, cover and cook on high for 6 1/2 hours.

1 pound ground beef
1 onion, chopped
1 (1.25 ounce) package taco seasoning mix
1 (15 ounce) can white beans, undrained
1 (15 ounce) can red kidney beans, undrained
1 (15 ounce) can white kidney beans, undrained
1 (15 ounce) can ranch-style beans, undrained
1 (15 ounce) can pinto beans, undrained
1 (15 ounce) can black beans, undrained
1 (15 ounce) can white hominy, drained
1 (10 ounce) can diced tomatoes with green chile peppers

Steps:

  • Cook and stir ground beef in a skillet over medium high heat until browned and crumbly, 5 to 10 minutes; drain fat. Transfer beef to a slow cooker and sprinkle with onion and taco seasoning mix.
  • Stir white beans, red kidney beans, white kidney beans, ranch-style beans, pinto beans, black beans, hominy, and tomatoes with green chile peppers into beef mixture.
  • Cook in the slow cooker set to Low until cooked through and flavors blend, 4 to 5 hours.

This is a really good and easy slow cooker recipe for pinto beans, it's really good with some fresh cornbread on the side. One of my favorites!! You can add the jalapenos to your taste. We like it with a little kick but it's just as good without them.

1 (16 ounce) package dried pinto beans
1 (32 ounce) box chicken broth
1 teaspoon salt
1 teaspoon black pepper
3 fresh garlic cloves, finely chopped
1 small onion, finely chopped
3 -4 jalapenos, finely chopped (i like it spicy you can leave this out)
1/2 teaspoon cumin powder (also optional)

Steps:

  • Rinse dried pintos under cool water and drain
  • Put them into a large bowl and cover with hot water and let sit over night.This helps cut down on cooking time and take some of the "gas" out. They will swell quite a bit so you need a large bowl.
  • In the morning, rinse beans well with cool water, drain and then put in crock pot.
  • Add chicken broth and all other ingredients.
  • Fill with water till water is about an inch or 2 above beans.
  • Cook on low all day for about 8-9 hours.
  • Cook up some cornbread and you are ready to eat!

1 (16 ounce) package dry pinto beans
2 tablespoons baking soda
1 tablespoon fiesta pinto bean seasoning
1 tablespoon sugar
1 tablespoon vegetable oil
1/2 tablespoon pepper
1 small onion, cut into chunks
ham hocks, ham bone or 2 cups cooked ham

Steps:

  • Sort your beans and remove and broken pieces or pebbles. I use one 16 oz package of beans. Place in a large bowl or pot, covering with water.
  • Add the baking soda to the water, and let the beans soak at least 6 hours or overnight. After 6 hours or overnight drain the water from the beans.
  • Add the beans to a 6 quart crock pot and cover with fresh water. You want the beans to be covered by at least one inch.
  • Add the pinto bean seasoning, sugar, vegetable oil, pepper and onion. Taste the beans after several hours of cooking and add more seasonings if you think it needs it. I used a total of one tablespoons pepper.
  • Add one of the following for additional seasoning, one ham hock, ham bone, or slice of country ham cut into pieces.
  • Place lid on crock pot and cook on high for about 6-8 hours. make sure the beans stay covered with water, so check occasionally. If you need more water, then add it. The beans should have a soup consistency.
  • In 6 hours, test beans and if they are cooked. Remove ham bone and pull of the meat or remove meat from ham hock and serve. Don't forget the wedge of cornbread.

These beans turn out fabulous in the slow cooker! I developed this recipe after finding too many hard beans after cooking with a pot on the stove.

1 pound dried pinto beans
1 onion, chopped
¾ green bell pepper, diced
2 celery ribs, chopped
3 cloves garlic, chopped
1 pound Black Forest ham, cubed
1 teaspoon ground cumin, or to taste
1 tablespoon dried oregano, or to taste
2 bay leaves
1 tablespoon lard
5 cups chicken broth, or as needed to cover

Steps:

  • Cover pinto beans with water in a large bowl; allow beans to soak overnight.
  • Place onion, green bell pepper, celery, garlic, Black Forest ham, soaked pinto beans, cumin, oregano, bay leaves, and lard in a slow cooker.
  • Pour enough chicken broth into the slow cooker to cover the other ingredients.
  • Cook on High until beans are very tender, 5 to 6 hours.
