3 medium carrots, sliced
2 celery ribs, sliced
1 small onion, chopped
1 bay leaf
1 teaspoon Italian seasoning
1/4 teaspoon pepper
1 package (24 ounces) frozen fully cooked Italian meatballs, thawed
1 carton (32 ounces) beef broth
2 cans (14-1/2 ounces each) Italian diced tomatoes, undrained
2 cups water
3/4 cup dry red wine or additional water
3/4 cup ditalini or other small pasta
4 cups fresh baby spinach (about 5 ounces)
Grated Parmesan cheese

Steps:

  • Place first 11 ingredients in a 6-qt. slow cooker. Cook, covered, on low until vegetables are tender and flavors are blended, 5-6 hours., Stir in pasta; cook, covered, on high until pasta is tender, 15-20 minutes. Discard bay leaf; stir in spinach until wilted. Serve with cheese.

This is a wonderful soup made with frozen meatballs and lots of fresh veggies! It has morphed from the original recipe into my very own and my family loves it.

1 lb meatballs (frozen)
1 1/2 tablespoons instant minced onion or 1 1/2 tablespoons shallots
1 garlic clove, chopped
1 1/2 teaspoons dried basil
1 (15 ounce) can diced tomatoes with juice or 4 chopped fresh tomatoes
4 cups broth
1 cup water
3 sliced carrots
1 zucchini, cut lengthwise then sliced
1 summer squash, cut lengthwise then sliced
1 chopped red pepper
4 -8 ounces cooked bow tie pasta
grated parmesan cheese

Steps:

  • Combine all ingredients except pasta in crock pot.
  • Cook on low 8 to 10 hours.
  • Add salt to taste.
  • Add cooked pasta and heat through.
  • Top each bowl with grated Parmesan cheese.
  • Do not be afraid to substitute different veggies for your own preference.

1/2 lb extra lean ground beef, browned and drained
1 medium onion, chopped
1 garlic clove, minced
8 ounces tomato sauce
1 (14 1/2 ounce) can low-sodium stewed tomatoes
1 teaspoon dried oregano
1 teaspoon italian seasoning
salt and pepper, to taste
8 ounces pasta, cooked and drained
10 ounces frozen spinach, thawed and drained
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Place all ingredients, EXCEPT for cooked pasta, spinach and cheeses, in a slow cooker and mix well.
  • Cover and cook on low 7 to 8 hours or until bubbly.
  • Increase slow cooker to high; stir in pasta, spinach and cheeses. Cover and cook for 10 minutes or until heated through and cheeses are melted.
