SLOW COOKER CINNAMON SUGAR CANDIED ALMONDS



Slow Cooker Cinnamon Sugar Candied Almonds image

Sweet and crunchy cinnamon sugar candied almonds just like you get from the mall or a festival but made right in your slow cooker!

1.5 cups sugar
1.5 cups brown sugar
3 Tablespoons cinnamon
1/8 teaspoon salt
1 egg white
2 teaspoons vanilla
4.5 cups raw almonds
1/4 cup water

Steps:

  • Spray your slow cooker with non-stick spray and set aside.
  • In a large bowl, add the sugar, brown sugar, cinnamon, and salt. Whisk together.
  • In another large bowl, add the egg white and vanilla and whisk until frothy.
  • Pour the almonds in the egg mixture and toss them around to coat thoroughly.
  • Pour the coated almonds into the sugar mixture and toss to coat.
  • Pour the entire mixture into the slow cooker and turn to low.
  • Cook for 3-3.5 hours, stirring every 20 minutes. It will look like not much is happening for a long time but your house will smell good!
  • After 3 hours, pour in 2 Tablespoons of water and stir well. If they look dry, add another 1 Tablespoon of water. This is going to make the crunchy coating and things will start looking right.
  • Replace cover & cook for another 20-30 minutes.
  • Meanwhile, line a baking sheet with parchment paper.
  • When done, pour the almonds onto the prepared baking sheet and separate any that stuck together. Let them cool slightly to harden then enjoy!

1 tablespoon curry powder
1/2 teaspoon seasoning salt
1 lb blanched almond

Steps:

  • Mix butter, curry and seasoned salt.
  • Pour over almonds in crock pot and mix to coat well.
  • Cover and cook on low for 2 to 3 hours.
  • Turn to high, uncover pot mix and cook for 1 to 1 1/2 hours.

1 tablespoon vegetable oil
2 lbs stewing beef, trimmed and cut into 1 inch cubes
2 onions, finely chopped
4 garlic cloves, minced
1 teaspoon minced gingerroot
1 -2 long red chili peppers or 1 -2 green chili pepper
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon turmeric
1 teaspoon salt
1/2 teaspoon cracked black peppercorns
4 green cardamom pods or 4 white cardamom pods
4 whole cloves
1/2 cup beef stock or 1/2 cup water
1 bay leaf
1/4 cup ground almonds
1/2 cup plain yogurt (optional)
hot cooked rice

Steps:

  • In a skillet, heat oil over medium-high heat.
  • Add beef, in batches, and brown.
  • Using a slotted spoon, transfer to slow cooker stoneware.
  • Reduce heat to medium.
  • Add onions and cook, stirring, until softened.
  • Add garlic, gingerroot, chilli pepper, cumin, coriander, turmeric, salt, peppercorns, cardamom and cloves and cook, stirring, for 1 minute.
  • Add beef stock and bay leaf and bring to a boil.
  • Pour mixture over beef.
  • Stir to combine.
  • Cover and cook on Low for 8 to 10 hours or on High for 4 to 5 hours, until beef is tender.
  • Stir in almonds, cover and cook on High for 10 minutes.
  • Stir in yogurt, if using, and serve over hot cooked rice.

3 pounds boneless, skinless chicken thighs, trimmed
2 medium onions, halved and thinly sliced
8 garlic cloves, thinly sliced
16 thin slices peeled fresh ginger (about 1 ounce)
2 tablespoons curry powder, preferably Madras
1 teaspoon ground coriander
1 teaspoon ground cumin
Coarse salt
2 packages frozen green peas (10 ounces each)
2 cups unsweetened coconut milk
1/2 cup toasted cashews (optional, for serving)
1/4 cup cilantro leaves (optional, for serving)

Steps:

  • In a 5-quart slow cooker, toss chicken, onion, garlic, ginger, curry powder, coriander, and cumin to coat. Season with 2 teaspoons salt. Cover, cook on high setting until chicken is fork-tender, about 4 hours (do not uncover while cooking).
  • Stir in coconut milk and peas; cover, cook until peas are heated through, about 20 minutes.
