Creamy Crock Pot Macaroni and Cheese image

Yummy!! Free up your oven and cook this classic dish in your crock pot! I made this is my taller older, 4 qt. crock pot rather than my new larger oval shaped one that tends to run hot. This could also be baked in the oven if necessary.

1 lb macaroni
4 tablespoons butter
2 1/2 cups shredded cheddar cheese (I use combination of freshly shredded medium cheddar and extra sharp cheddar)
10 1/2 ounces cheddar cheese soup, undiluted
12 ounces evaporated milk
1/4 cup sour cream
2 eggs, beaten (optional)
1/2 teaspoon salt
1/2 teaspoon white pepper
1/4 teaspoon mustard powder (optional)

Steps:

  • Cook macaroni 4-6 minutes, keeping macaroni very al dente. Drain. Toss hot pasta with butter.
  • In a greased crock pot, add cheese, soup, milk, sour cream, eggs, salt, pepper and mustard powder. Mix to combine.
  • Add pasta to crock pot. Stir to combine well.
  • Cook on low 2 1/2 hours, stirring occasionally. (Careful because when I cooked mine 30 min too long, it started to become grainy!).

An easy, creamy mac and cheese recipe for the crock pot. No need to precook the noodles. Edited to add: I make this at least once a month without any burning or sticky mess. I know all Crock pots are different, because I have one that is "hotter" than the other. Perhaps a "hotter" crock pot is not suitable for this recipe.

4 3/4 cups milk (plus extra near end of cooking to achieve desired moistness)
1/2 cup light cream or 1/2 cup half-and-half
1/3 cup flour
3 tablespoons butter, softened
3 ounces cream cheese, cubed
1 teaspoon Worcestershire sauce
1 teaspoon mustard
2 tablespoons minced onions
3 -3 1/2 cups monterey jack and cheddar cheese blend (or just cheddar)
1 -2 teaspoon salt (to taste)
3/4 teaspoon white pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder
4 cups uncooked elbow macaroni noodles

Steps:

  • Spray your crock pot (5 quart size or larger)with nonstick cooking spray.
  • Pour milk and cream into crock pot. Stir in flour to dissolve.
  • Add all remaining ingredients to crock pot and stir well.
  • Cover and cook on low for 2 1/2 - 3 hours, or on high for 1 1/2 hours; giving a stir about halfway through cook time, then again during last 10-15 minutes.
  • Stir again before serving. Add additional milk, if desired, to desired moistness.

This is a lighter version of macaroni and cheese with a creamy consistency. This could be made lower fat using light Velveeta. *Note* If you don't like it real thick, you can decrease the cooking time by an hour or so and it will be just as good, just not AS thick :)

1 1/2 teaspoons instant minced onion
12 ounces Velveeta cheese, cubed
1 (12 ounce) can low-fat evaporated milk
1 cup 1% low-fat milk

Steps:

  • Cook macaroni according to package directions and drain.
  • Add remaining ingredients to cooked macaroni stirring well.
  • Lightly spray crock pot with cooking spray and add macaroni mixture.
  • Cook on low for 3 hours, stirring a couple of times during cooking.
