I love BBQ and I love easy. I put this together by trying others, mixing and matching, adding my own taste and here it is.

- While I boil the pork for 20-30 minutes to decrease fat, I mix all other ingredients together in a large enough bowl and stir to mix well.
- Put pork in the crock pot, adding sauce as you go, until you get to about an inch from the top.
- Use as much sauce as you can as it will be needed later to put over the rice.
- With a big spoon, give a stir to blend all together.
- Put on the lid, turn on high and let it cook for about 5 hours.
- After that, you may want to keep it a little longer on low to keep it hot.
- Serve this with some white rice, baked beans (or just pork& beans), cole slaw and some toasted garlic bread and you have yourself a meal.
- Be sure to use lots of the sauce over the pork and rice.

- Place onion wedges on crock bottom with a little water (approx. 1/3 cup).
- In glass dish, coat rib pieces with Worcestershire, then dredge in spices on all sides.
- Criss cross ribs in layers over onion (largest on bottom), slightly coating with BBQ sauce.

- 1. Ribs: Sprinkle both sides with the garlic powder and Everglades seasoning. Place a paper towel over top and allow to rest while you make the sauce.
- 2. Sauce: Place all ingredients, except chopped bacon and the liquid smoke, in a saucepan. Mix well and heat stirring occasionally. Do not allow to burn. Once it begins to come to a soft boil, remove from heat, stir in bacon bits. Place the sauce in a bowl or glass measuring cup and cover with Saran Wrap. Set aside. (Do not refrigerate)
- 3. Spray your Crock Pot with cooking spray. Place ribs in and sprinkle with the mesquite liquid smoke. I used a cap full. Cook on low for 4 1/2 hours.
- 4. Check meat after the 4 1/2 hours. Should be a little pink. Drain the liquid and cover the ribs with the BBQ sauce and cook for another 1 1/2 to 2 hours.
- 5. My Crock Pot cooks a little hotter than normal so you may have to adjust your times or cook until a meat thermometer reads 145°. I must add that your house is going to smell so yummy while this is cooking. Enjoy.

- 1. Turn on your crockpot and allow it to begin heating up, add your 4 cups of water.
- 2. Heat oil in a frying pan, season your ribs,also add some seasoning to your flour if you like. Dredge your ribs in the flour and lightly brown each rib and place them in the water.

- Mix condensed soup, Lipton soup mix (zaar wanted a size, but I'm not sure how much is in one envelope), and pork gravy in crock pot.
- Place ribs in crock pot. Layer on whole carrots and sliced mushrooms.

- I like to cook mine a long time so they fall apart in the crock pot.

- In a large pot simmer pork ribs in water with 1 teaspoon of salt for 25 minutes to render the fat, remove and set aside.
- In a skillet saute the chopped onion in olive oil until transluscent

- Soak dried New Mexican chiles in boiling water for 30 minutes.
- Remove chiles from water, dry off, and chop finely, discarding stem and seeds; set aside.
- Brown ribs in oil in skillet over medium heat on both sides.
- Place browned ribs in the bottom of the crock pot.
- Toast cumin seeds in a small dry skillet until just fragrant but do not burn; allow to cool.
- Stir together oregano, salt, pepper, chopped tomatoes, vinegar, chopped chiles, and toasted cumin seeds in a small bowl.

The secret of this - brown ribs before you put them in the crock pot! Brown food tasts good - food can't get brown in a cockpot. I suggest if you are cooking this on a week night and have to go to work the next day. Prep this the night before and put it all in the cock pot as you are walking out the door the next day!

- 1. If you are using dried mushrooms please soak in water and set aside.
- 2. Heat a large skillet on high, add oil. Let the oil get hot - add garlic and ribs. Do not move the ribs untill you think they are browned - check ONE if you are not sure. If you move the meat in the pan it will never brown. Turn ribs and brown on other side.
- 3. Remove and place in crock pot.
- 4. Add onions, peppers, and mushrooms to pan. If you are using dried mushrooms drain before using!! Add salt to taste. Cook for about 5 - 7 minutes.
- 5. Add red wine and deglaze the pan. Move the veg around and be sure the brown stuff from the bottom the pan is coming up, this is where the flavor is!
- 6. Add all this liquid , and veg to the crock-pot, now add the tomatoes and dried thyme. Allow to cook in your crock-pot for 8-10 hours or store in refrigerator and cook in crock-pot the next day.

- Sprinkle the pork ribs with rub, and RUB! This isn't an exact science, so if some spots are bare, meh, no biggie.
- Layer in slow cooker. Nothing else needed.
- Set time for either low or high, depending on your needs.
- You can do 6-hours on low and then another 1.5-hours on high. with no additional liquid.
- You can do 10-hours on low, also.
