RUSTIC SLOW COOKER COUNTRY-STYLE PORK RIBS RECIPE
Rustic country-style pork ribs are easy to prepare and will reward you will melt-in-your-mouth tenderness and rich flavors.

- Trim excess fat from the ribs if necessary. Season with a little bit of salt and pepper and set aside.
- Heat cooking oil in a non-stick pan over medium-high heat. Add half of the ribs and sear for 4 minutes. Flip and continue searing for another 4 minutes, or until nicely browned. Transfer the browned ribs to the slow cooker and continue browning the other half of the ribs. Transfer to the slow cooker.
- Add the onions to the same the skillet. There should be plenty of oil and fat left in the pan, but if not, add another tablespoon of oil. Saute until deep golden brown, constantly stirring, about 3-5 minutes.
- Add the garlic and continue cooking for another 30 seconds.
- Add the water, salt, pepper and the rest of the seasonings. Bring to a simmer. Taste and adjust for salt. The liquid should be salted just right.
- Pour the contents of the pan into the slow cooker over the ribs. Stir to distribute the ingredients evenly.
- Set the slow cooker to low and cook for about 4-5 hours or until the pork ribs are fork-tender. You can also cook the meat on high for 2-3 hours.
- Once the meat is tender, check for salt and seasonings again and adjust if needed.
- If you want the liquid thickened, now is the time to do it. Carefully remove the ribs from the slow cooker and set aside. Dissolve three tablespoons of cornstarch in three tablespoons of cold water. Add the cornstarch to the slow cooker and stir well. Let simmer for about 20 minutes until desired thickness is achieved. If needed, add more cornstarch.
- Return the ribs to the slow cooker and keep on 'warm' until ready to serve.
- Serve with with rice, mashed potatoes, potato pancakes, pasta or other favorite side dish.

- For the barbecue sauce: In the bowl of a blender, combine the ketchup, apple cider vinegar, molasses, mustard, garlic, chipotles and sauce and onion. Season generously with salt and pepper. Blend until smooth.
- For the ribs: In a small bowl, combine the garlic powder, paprika, brown sugar, cayenne, chili powder, 2 tablespoons salt and 2 teaspoons black pepper. Sprinkle the ribs with the rub on all sides.
- In a skillet, warm the olive oil over medium-high heat. When shimmering, add the ribs and brown on all sides, working in batches if necessary. Transfer to a slow cooker.
- Add the barbecue sauce, Mexican oregano and enough chicken stock to come halfway up the ribs. Set the slow cooker to high and cook, 8 to 10 hours. Remove the ribs and shred the meat into bite-sized pieces. (Discard the fat.) Taste the sauce and adjust the seasoning if necessary. Whisk to combine (the sauce may separate during cooking) and transfer to a serving bowl.
- Construct tacos by spreading the tortillas with sauce and topping with pork, cucumbers, avocado wedges, cabbage, Cotija, radishes, pico de gallo and cilantro. Serve immediately with lime wedges.

- Heat olive oil in a cast-iron skillet or heavy bottom pan. Sprinkle ribs with salt and pepper and sear, on all sides, until golden. Remove the ribs from the pan and place them in the Crock Pot.
- To a medium-size bowl, add ketchup, soy sauce, honey, vinegar, garlic, chili powder, onion powder dried thyme, dried parsley, and dried mustard. Whisk together and pour over the ribs. Place the lid on the Crock Pot and cook on HIGH for 6-7 hours or LOW for 8 hours until the ribs are done.

- Lay the ribs on a cutting board and sprinkle generously with salt, pepper, and garlic powder. Now rub a good amount of five-spice powder onto the ribs. I didn't measure, but I was pretty aggressive with it; the top of the ribs were pretty evenly brown with powder. 2. Measure the rice vinegar and the coconut aminos into the bottom of a slow cooker. Add the ribs, cover, and cook on high for about 6 hours or on low for 8-10. Really, you can't cook them too long. They're ribs; they're very forgiving. 3. Chill the liquid left in the bottom of the slow cooker so the fat separates. Bring the remaining liquid to a boil, simmer for a few minutes, then use as a dipping sauce for the meat.
