CROCK POT CITRUS CHICKEN

Number Of Ingredients 15

2 lemons (very ripe)
1 orange
2 Tbsp soy sauce
1/4 c cornstarch
2 knorr's chicken bullions
3 c water
2 Tbsp curry powder
1 pinch salt
1/4 c sugar
1 egg, well beaten
1 lb chicken tenderloins (frozen)
3 carrots (shredded)
SUGGESTIONS
1 head of cabbage, shredded and pan fried with butter
rice to serve over

Steps:

  • 1. Squeeze out the juice of lemons and orange into crock pot (fish out the seeds). Add the well beaten egg, soy sauce, curry powder, bullion, sugar, salt, and the cornstarch blended in water and then the frozen chicken.
  • 2. Shred carrots directly into the crock pot. Set on high for 3 hours.
  • 3. Serve over stir fried veggies (I did cabbage) and rice or noodles.

HONEY CITRUS CROCK POT CHICKEN

This is such a good recipe and a family favorite. the combination of citrus and garlic gives it just the right flavor. I usually get some baby carrots and cook them in some orange juice and honey in a saucepan to go along with it.

1 whole roasting chicken
1 whole lemon, pierced with a fork
1 clove garlic
1/2 cup orange juice
1/4 cup honey
1/4 teaspoon pepper

Steps:

  • Roll Lemon on kitchen counter to loosen insides and pierce with a fork.
  • Place Lemon inside of chicken cavity along with the clove of garlic.
  • Put chicken into crock pot.
  • Pour orange juice and honey over the chicken.
  • Sprinkle pepper on top.
  • Cover and cook on high for about 8 hours.
  • Enjoy.

This was created to fit my 1.5 quart crock pot for traveling in our RV. While we are out sightseeing, the crock pot is cooking up a delicious meal for us to enjoy!

1/4 cup lemon juice
1 cup green beans
4 chicken thighs (boneless)
8 ounces orange juice
1/2 cup honey

Steps:

  • In a 1.5 quart crock pot add lemon juice to the bottom.
  • Then cut green beans in bite sized pieces and add to crock pot.
  • Add chicken thighs on top of lemon juice.
  • Pour orange juice on top of chicken.
  • Add honey.
  • Cover and cook on low 6-7 hours.
  • Enjoy.

CROCK POT CITRUS GINGER CHICKEN

This is one of my favorites. The flavor is best if you marinate the chicken in the sauce overnight or freeze in the sauce and thaw in the fridge overnight before cooking. This can also be baked in the oven in around 30 minutes. Serve over a bed of aromatic rice such as jasmine or basmati rice with a mix of steamed vegetables on the side.

2 lbs boneless skinless chicken
1/4 cup orange marmalade
1 tablespoon lime juice
1/4 cup crushed pineapple
2 teaspoons soy sauce
1 tablespoon Dijon mustard
1 tablespoon grated gingerroot
1/4 teaspoon cayenne pepper
1 minced garlic clove
1/4 cup sugar

Steps:

  • Combine marmalade, lime juice, pineapple, soy sauce, mustard, ginger, cayenne, garlic and sugar in a gallon size zip lock bag.
  • Cut chicken into serving size pieces and add to the sauce. Refrigerate overnight or freeze.
  • To thaw, place in fridge overnight.
  • Empty contents of bag into your crockpot and cook on low for 6-8 hours or high for 4-6 hours.
  • You can also bake this in a 350 degree oven for 25-30 minutes or until juices run clear.
  • If the sauce is too runny when cooked in a crockpot, mix 2 teaspoons cornstarch and 2 tablespoons of water and stir into the sauce. Cook on high until thickened.
