2.5 lbs boneless pork chops
Salt and Pepper (to taste)
1 Cup Long-Cooking Rice
10.75 oz Can Cream of Chicken Soup
10.75 oz Can Cream of Mushroom Soup
1.25 Cups Water
1.1 oz Package Onion Dip Mix
½ Tablespoon Seasoning Salt
1 teaspoon Worcestershire sauce

Steps:

  • Place chops evenly on the bottom of the crock.
  • Stir together remaining ingredients until blended well.
  • Spread over top of chops.
  • Cover and cook on low for 4-6 high for 2-3 hours. (Note: Time may vary, dish is done when your chops are tender and the rice has absorbed the liquid.)

6 pork chops, 1 inch thick
1 teaspoon oil
2 medium onions, sliced thin
6 ounces frozen orange juice
2/3 cup water
1 tablespoon lemon juice
2 tablespoons brown sugar
1 1/2 teaspoons ginger
1 teaspoon poultry seasoning
1 teaspoon marjoram
1/2 teaspoon salt

Steps:

  • Using a 5-qt crockpot, place fat in cooker and melt on HIGH.
  • Add chops and turn to coat evenly with fat. Place onions on top of the chops.
  • Combine remaining ingredients and pour over chops.
  • Cook on LOW for 6 to 7 hours.

4 bone-in pork loin chops, (1/2 inch thick and 8 ounces each)
1 tablespoon canola oil
1-1/3 cups uncooked instant rice
1 cup orange juice
Salt and pepper to taste
1 can (10-1/2 ounces) condensed chicken with rice soup, undiluted

Steps:

  • Preheat oven to 350°. In a large skillet, brown pork chops in oil on both sides. Sprinkle rice into a greased 9-in. square baking dish. Add juice; arrange chops over rice. Sprinkle with salt and pepper. Pour soup over chops., Cover and bake 25-30 minutes or until a thermometer reads 145° and rice is tender. Let meat stand 5 minutes before serving.

Using up the last of my bargain pork chops, I decided something fruity - maybe sweet & sour - would be nice. A trip through the pantry and refrigerator yielded plenty of tasty options. So I chose some complementary ingredients and here is the result - a sweet and sour concoction sure to tickle your taste buds!

1 large onion, diced
2 Tbsp olive oil, drizzled over onion
4 thin-cut, boneless pork chops
2 tsp cornstarch, sprinkled over chops
2 tsp garlic, minced
1/2 tsp ginger powder
1 tsp cinnamon, ground
1/2 tsp paprika
1 tsp rosemary, dried
3 Tbsp soy sauce
1/4 c goldschlager (or other cinnamon liqueur)
1/4 c crown royal whiskey (or similar quality)
1 c beef broth
1 c orange marmalade
3/4 c vinegar
2 Tbsp brown sugar (i used splenda brown sugar)
1 1/2 c white rice, uncooked
salt and pepper, to taste
cooking spray

Steps:

  • 1. Spray crock pot with cooking spray.
  • 2. Place first 13 ingredients in crock pot in order listed. In a small bowl, combine orange marmalade, vinegar and brown sugar until well-blended. Pour over ingredients in crock pot. Cook on high for 3.5 - 4 hours, until pork chops are fork tender and juices run clear. If using a thicker cut chop, increase cooking time by one hour.
  • 3. One half hour before the end of the cooking time, carefully remove the chops from the crock pot. Stir all ingredients to blend and stir in white rice, ensuring it is covered by liquid. Add beef broth or water, if necessary, to cover. Replace chops in crock pot and continue to cook on high for 30 minutes or until rice is tender. Plate chops on top of rice and enjoy!
  • 4. NOTE: For those of you who do not cook with spirits, replace the whiskey and cinnamon liqueur with 1/2 cup beef broth, 2 Tbsp of lemon juice and 1/4 tsp additional ground cinnamon.

SLOW COOKER PORK CHOPS AND RICE

A creamy one-dish crock pot meal made with pork chops, rice, onion soup mix, and cream of mushroom soup.

4 pork chops or pork steaks
1 cup long grain rice, uncooked
1 envelope onion soup mix
1 can (10.75 ounce size) cream of mushroom soup
2 cups water

Steps:

  • If desired, brown the pork chops in a skillet first. Add the rice to the crock pot. Sprinkle with 1/3 of the onion soup mix. Evenly place the pork chops over the top or the rice. Spoon the mushroom soup over the pork, then sprinkle the remaining onion soup mix over that. Pour the water over the top. Cover, cook on low for 4-6 hours or until done. Optional: Add one can of sliced mushrooms (drained) on top of the chops.
