I found this recipe in one of my many cookbooks. I added a few extra ingredients to this recipe. The family loved this dish.

1 1/2 lb uncooked boneless, skinless chicken breasts
10 1/4 oz cream of chicken soup, fat-free, low-sodium
3 Tbsp flour
1/4 tsp black pepper
9 oz frozen peas and onions, thawed and drained
2 Tbsp chopped pimentos
1/2 tsp paprika

Steps:

  • 1. Spray the inside of the slow cooker/ crock-pot with a non-stick cooking spray.
  • 2. Cut chicken into bite-sized pieces and place in the slow cooker.
  • 3. Combine soup, flour and pepper. Pour over chicken. Do not stir.
  • 4. Cover. Cook on high 2 1/2 hours or low 5-5 1/2 hours.
  • 5. Stir in peas and onions, pimentos and paprika.
  • 6. Cover. Cook on high 20-30 minutes.
  • 7. I added 1 cup of diced onions, since I was unable to locate a bag of peas and onions. 1/2 to 1 cup of diced peppers was also added on top of the soup mixture in Step 3.
  • 8. I added 1 cup of chopped fresh mushrooms when I added the pkg. of peas and mixed all the ingredients together and continued cooking on high until heated throughout.( Look at Step 6 )
  • 9. Note: If your diet allows, you may want to add 1/2 tsp salt to the mixture in Step 2. ( I always end up adding more salt and/or pepper to taste at the end of the cooking time).

I use the slow cooker during the summer for this recipe. I just set it on low and leave it all day while I am at work.

8 boneless chicken breasts
2 tablespoons olive oil
1 whole onion, chopped
2 cups mushrooms, sliced
1 (10 3/4 ounce) can tomato bisque
1 (10 3/4 ounce) can cream of mushroom soup
1 cup red wine (beer will work too)
1 pinch oregano
1 pinch basil
1 pinch salt
1 pinch pepper

Steps:

  • Saute onions and mushrooms in olive oil.
  • Add chicken.
  • Combine remaining ingredients and pour over chicken mixture. Slow cook on top of stove for 1 1/2 to 2 hours. (You can also combine ingredients in the Crock Pot and cook on low for up to 12 hours).
  • Serve over Rice or Pasta.

Number Of Ingredients 11

1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
3 tablespoons all-purpose flour
1/4 teaspoon pepper
Dash cayenne pepper
1 pound boneless skinless chicken breasts, cubed
1 celery rib, chopped
1/2 cup chopped green pepper
1/4 cup chopped onion
1 package (10 ounces) frozen peas, thawed
2 tablespoons diced pimientos, drained
Hot cooked rice

Steps:

  • In a 3-qt. slow cooker, combine soup, flour, pepper and cayenne until smooth. Stir in chicken, celery, green pepper and onion. , Cover and cook on low for 7-8 hours or until meat is no longer pink. Stir in peas and pimientos. Cook 30 minutes longer or until heated through. Serve with rice.
