1/2 cup peanut butter (crunchy or creamy)
2 teaspoons ginger
2 tablespoons soy sauce
2 teaspoons lime juice

Steps:

  • Put all ingredients in crock pot on low for 6-8 hours.
  • Garnish with cilantro, scallions, and peanuts.
  • Serve with jasmine rice made with half coconut milk and half water (1 cup raw rice, 1 cup water, 1 cup coconut milk).

1/2-1 cup water, broth or 1/2-1 cup white wine
2 cups vegetables (whatever combo you like)
1 ounce onion soup mix (1 package)
14 ounces cream soup (1 can, choose your fave flavor)
1 cup low carb barbecue sauce
1 ounce taco seasoning mix (1 package)
1/2 cup soya sauce and 1/2 cup red wine (if using this version use the broth or water with this combo)

Steps:

  • Place the chicken, liquid, and veggies in the crock pot.
  • Mix in one of the additions.
  • Cook on high for 4 hours or low for 6 hours.

1 (14 ounce) can Italian-style diced tomatoes, undrained. (I look for the one with the lowest sodium)
1 (6 ounce) can tomato paste (same here on the low sodium)
1 medium chopped white onion
1 tablespoon bottled minced garlic (I used 4 cloves through a press)
1 teaspoon dried Italian seasoning
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place chicken in 4 quart crock pot.
  • Combine tomatoes and next 6 ingredients.
  • Stir well.
  • Pour sauce over chicken.
  • Cover and cook on high for 1 hour then reduce heat to low and continue to cook for 4-5 hours or until chicken is tender.

I also used all-natural peanut butter so if you use a commercially prepared type, the end result may be a bit different. Also, I cooked this about 9 hours (we were late getting home) and it was just fine.

1/2 tsp freshly ground black pepper, divided use
1/4 c chicken broth
1/4 c dry white wine
1 tsp minced garlic
1/2 tsp dried thyme
1 tsp paprika

Steps:

  • 1. Place onion in a lightly greased 6-quart round slow cooker; top with potatoes and carrots. Combine 3/4 teaspoon salt, 1/4 teaspoon pepper, the broth, and next 3 ingredients. Pour broth mixture over vegetables. Combine paprika, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper; rub evenly over chicken thighs, and arrange over vegetables.
  • 2. Cover and cook on HIGH setting 1 hour; reduce heat to LOW setting, and cook 6 hours, or until chicken and vegetables are cooked and tender.
