1 pound ground beef
1/2 pound bulk spicy pork sausage
2 pounds cubed Velveeta
2 cans (10 ounces each) diced tomatoes and green chiles
Tortilla chip scoops, red pepper and cucumber sticks

Steps:

  • In a large skillet, cook beef and sausage over medium heat until no longer pink; drain. Transfer to a 3- or 4-qt. slow cooker. Stir in cheese and tomatoes., Cover and cook on low for 4-5 hours or until cheese is melted, stirring occasionally. Serve with tortilla chips, red pepper and cucumber sticks.

This Ro-Tel dip is a party favorite, and it is very easy to whip up and heat in the slow cooker. Serve the dip with tortilla chips, bagel chips, or crackers.

1 1/2 pounds Velveeta cheese (shredded or cubed)
1 (10-ounce) can tomatoes with green chiles (or a favorite salsa)
1 pound lean ground beef
1/4 cup onion (finely chopped)
Optional : 1 (4-ounce) can mild green chile peppers (chopped)
Optional : 1 (4-ounce) can sliced mushrooms (drained)

Steps:

  • Gather the ingredients.
  • Melt the Velveeta along with the tomatoes with green chiles in the slow cooker on high.
  • Meanwhile, brown the chopped onion and ground beef in a skillet or sauté pan over medium heat. Add the mushrooms and chile peppers, if using.
  • Drain off the excess grease. Add the meat mixture to the slow cooker cheese mixture and cook on high for about 30 minutes.
  • Turn to low and serve the dip from the slow cooker with tortilla chips or crackers.

I found this recipe at about.com/Southern Food when I was searching for a variation on the traditional velveeta and rotel holiday dip. I didn't have cream of mushroom, so I substituted cream of chicken. This is really YUMMY, and it's easy to carry in the crockpot to your holiday gathering.

1 lb lean ground beef or 1 lb chuck
1 lb pork sausage
1 cup picante sauce or 1 cup chunky salsa
1 teaspoon garlic powder
10 3/4 ounces condensed cream of mushroom soup
10 1/2 ounces Rotel Tomatoes or 10 1/2 ounces other diced tomatoes with green chilies
3/4 teaspoon dried oregano leaves
2 lbs Velveeta cheese, cut into cubes

Steps:

  • In a large skillet, brown the ground beef and sausage together. Break it up while stirring and cook until no longer pink.
  • Drain meat well and transfer to a slow cooker.
  • Combine salsa, garlic powder, soup, tomatoes, oregano, and cheese with the meat in slow cooker.
  • Cook on low until cheese is melted and ingredients are well blended (about 2 hours).
  • Serve with your favorite chips or crackers.
