I came up with this by combining other recipes. We keep a small slow cooker in our camper and I often make this when we go camping. I just throw everything together before we go to sleep and it's ready for us in the morning.

16 ounces hash browns, frozen
1/2 lb bacon, cooked and crumbled
1/2 medium onion, diced
1/2 medium bell pepper, diced
3/4 cup cheddar cheese, shredded
6 eggs
1/2 cup milk
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place a layer of frozen hash browns on the bottom of the crock pot, followed by a layer of bacon, then onions, bell pepper and cheese.
  • Repeat the layering process two more times, ending with a layer of cheese.
  • Beat the eggs, milk, salt and pepper together.
  • Pour over the crock pot mixture.
  • Cover and cook on low 8-10 hours. Note based on harsh review: If you know your slow cooker runs hot, reduce the time accordingly. I have made this many times at the stated time with great results - best between 8-9 hours, well done at 10, but not burnt.

This is an adaptation from Tom & Candy's recipe. I have made this twice for Thanksgiving breakfast for the school teachers and always get lots of compliments....and requests for the recipe. You can switch out the meat for any type of breakfast meat you might like.

30 ounces frozen hash brown O'Brien potatoes (cubes, with onion and pepper)
1/4 lb bacon, cooked
3/4 lb sausage, cooked
1 1/2 cups cheddar cheese, shredded
12 eggs
1 cup milk
1 teaspoon pepper

Steps:

  • Spray your crock pot with cooking spray!
  • Place layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of meat, then cheese.
  • Repeat the layering process two or three more times, ending with a layer of cheese.
  • Beat the eggs, milk and pepper together.
  • Pour over the Crock pot mixture, cover and turn on low.
  • Cook for 8-10 hours.

I made this when all my family was home for the holidays, we have 5 sons and 4 grandbabies and wives and girlfriends :) just added some toast and was a filling and perfectly flavored breakfast, you can sub the sun dried tomatoes for reg. tomatoes but I wouldn't recommend it, the flavor from the sun dried tomatoes must makes this!...

1 pkg 36-32 oz. frozen shredded has brown potatoes
1 pkg jimmy den hearty original sausage crubles
2 c shredded mozzarella cheese
1/2 c shredded parmesan cheese
1/2 c julienne cut sun dried tomatoes packed in oild, drained
6 green onions, sliced
12 eggs
1/2 c milk
1/2 tsp salt
1/4 tsp ground black pepper

Steps:

  • 1. SPRAY A 6 QT. SLOW COOKER WITH COOKING SPRAY. LAYER 1/2 THE POTATOES ON THE BOTTOM OF THE SLOW COOKER.
  • 2. TOP WITH HALF OF THE SAUSAGE, MOZZARELLA AND PARMESAN CHEESE, SUN DRIED TOMATOES AND GREEN ONION, REPEAT LAYERING.
  • 3. BEAT EGGS, MILK SALT AND PEPPER IN A LARGE BOWL WITH A FORK OR WHISK UNTIL WELL BLENDED.
  • 4. POUR EVENLY OVER POTATOE-SAUSAGE MIXTURE.
  • 5. COOK ON LOW SETTING FOR 8 HOURS OR ON HIGH SETTING FOR 4 HOURS OR UNTIL EGGS ARE SET

4 cups cheddar cheese (or cheese blend)
1 dozen egg
1 cup milk

nonstick cooking spray

  • Spray Crock Pot with the No Stick spray.
  • Layer Potatoes, ham, and cheese (make about 3 layers of each, ending with a layer of cheese.).
  • In a mixing bowl, beat together the eggs, milk and salt and pepper.

1 (26 ounce) bag frozen hash browns
12 eggs
1/2 cup milk
1 tablespoon ground mustard
16 ounces sausage (maple, sage or regular sausage.)
1 teaspoon salt
16 ounces shredded cheddar cheese
2 garlic cloves (minced)
1 large onion (sliced)
1/2 teaspoon pepper
1/4 teaspoon nutmeg

Steps:

  • Spray crock pot and evenly spread hash browns at the bottom.
  • Crack 12 eggs in a large bowl.
  • Mix well (and slowly) using a whisk.
  • Add the milk.
  • Go ahead and sprinkle in the ground mustard. This might sound like a weird ingredient, but I've come to love (and use) this in most of my recipes.
  • Add plenty of salt, the nutmeg and lots of fresh pepper. Mix well and set aside.
  • Cook the sausage on high heat, drain and set aside. Using the leftover fat from the sausage, sauté the garlic and onions until translucent.
  • Add sausage, onions and garlic on top of hash browns.
  • Is this enough cheese? Maybe? Probably. Throw the whole big bag in there.
  • Mix it up well. Or good, depending on where you're from.
  • Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it's spread evenly.
  • Turn the crock pot on low for 5-7 hours. Crockpots vary so yours may need more or less time.

1 8ct Pillsbury Refrigerated Grands Biscuits
8 Slices of Bacon, cooked and chopped
1 Small Tomato, chopped
1/2 Green Pepper, chopped
5 Eggs
1/4 Cup Milk
1 Cup Shredded Cheddar Cheese

Steps:

  • In a bowl, mix eggs, milk , tomato, green pepper, cheese and chopped bacon.
  • Open biscuits and cut each single biscuit into 4 equal parts.
  • Drop the cut biscuits into the egg/milk mixture.
  • Fold the biscuits into the mixture until biscuits are well covered with the mixture.
  • Spray the inside of the crock-pot with Cooking Oil.
  • Pour the mixture into the crock-pot.
  • Cook on HIGH for 3 1/2 Hours.
