TUSCAN WHITE ONION SOUP WITH CROSTINI



Tuscan White Onion Soup with Crostini image

Number Of Ingredients 17

1/2 pound butter
4 large Spanish onions, sliced
8 cloves garlic, shaved
8 shallots, sliced
1 fresh thyme sprig
1 teaspoon cardamom
1 quart fresh chicken stock
Sea salt and fresh pepper, to taste
Balsamic Reduction, for garnish
Crostini, for garnish, recipe follows
Shaved Parmigiano-Reggiano cheese, for garnish
Unsweetened whipped cream, for garnish
1 bottle balsamic vinegar
1 baguette, cut in half and sliced lengthwise into 1/4-inch thick slices
Extra-virgin olive oil
Cracked black peppercorn and sea salt to taste
Parmigiano Reggiano cheese, grated

Steps:

  • Melt butter and sweat onions, garlic, shallots until translucent. Add thyme and cardamom. Cover with chicken stock and bring to a boil. Season with salt and pepper. Simmer until tender. Blend really well in a blender. Strain through a chinoise. Adjust seasoning and texture.
  • For the Balsamic Reduction: In a saucepot over medium-high heat, reduce 1 bottle balsamic vinegar until it's the consistency of syrup.
  • For the Crostini: Preheat the oven to 300 degrees. Line a baking sheet with parchment paper and brush with extra-virgin olive oil. Season the pan with salt and pepper. Place the bread slices on the baking sheet and season the bread with extra-virgin olive oil, salt and pepper to taste. Sprinkle the bread with grated Parmesan cheese. Transfer the slices to the oven and bake until golden, about 5 minutes.
  • To serve, heat soup in a separate pot, whisk in whipped cream. Ladle into bowl. Garnish with Balsamic Reduction, shaved Parmesan cheese and Crostini.

2 cups whole milk
1 small onion, chopped
1 bay leaf
1 dash cayenne
4 tablespoons butter
3 tablespoons flour
salt
white pepper (optional)
1/2 cup frozen sweet peas, cooked (optional)

Steps:

  • In a medium sauce pan simmer milk on medium-low heat.
  • Add the onion, bay leaf and cayenne. Simmer for a few minutes stirring constantly to prevent scorching.
  • Strain the milk into a bowl and discard the onion and bay leaf.
  • Melt the butter in the sauce pan and whisk in flour until thick, this is called the roux.
  • Stir in the milk and simmer until the desired consistancy is reached (5-10 mins). Sauce will thicken as it stands.
  • Salt and pepper to taste.
  • Stir in peas if desired.

4 1/2 lbs white pearl onions, peeled (6 jars Sm. onions can also be used)
4 cups water
1/2 cup butter
1/2 cup all-purpose flour
2 cups half-and-half
2 cups milk
1 cup cheddar cheese (4 oz.)
1 1/2 teaspoons salt
1/4 teaspoon nutmeg
1/8 teaspoon ground red pepper
2 tablespoons crushed saltine crackers
1 teaspoon paprika

Steps:

  • Lightly grease a 13x9 inch baking dish.
  • Bring onions to a boil in a large pot. Cover, reduce heat to medium low and simmer 45 to 50 minutes until tender. Drain well.
  • Melt butter in a medium sized saucepan over low heat. Whisk in flour until blended, then gradually add the half and half and milk. Increase heat and simmer 3 to 4 minutes whisking often. Remove from heat, whisk cheese until melted, then salt, nutmeg, and red pepper.
  • Put onions in baking dish. Pour cream sauce over top and sprinkle with cracker crumbs and paprika. Bake 25 minutes until hot and bubbly.

1 onion, peeled and quartered
¾ cup water, or more as needed
1 teaspoon sunflower seed oil
1 teaspoon all-purpose flour
1 teaspoon white wine vinegar
¼ teaspoon sea salt

Steps:

  • Bring onion and water to a boil in a saucepan. Cover, reduce heat, and simmer until tender, 15 to 20 minutes. Transfer onion and water to a blender; puree until smooth.n
  • Heat oil in a saucepan over medium heat. Whisk in flour to form a thick paste the consistency of cake frosting. Continue cooking, whisking constantly, until flour has turned golden and begins to smell like toast, about 20 minutes.n
