1-1/2 cups stuffing mix, finely crushed
2 tablespoons grated Parmesan cheese
1/4 cup butter, melted
1 garlic clove, minced
5 boneless skinless chicken breast halves (6 ounces each)

Steps:

  • In a shallow dish, combine the stuffing crumbs and Parmesan cheese. In another shallow dish, combine butter and garlic. Dip chicken in butter mixture, then coat with stuffing mixture. Place in a greased 13x9-in. baking dish. , Sprinkle with remaining stuffing mixture and drizzle with remaining butter mixture. Bake, uncovered, at 350° for 40-45 minutes or until a thermometer reads 170°.

1/4 cup butter or 1/4 cup margarine, melted
1 egg
1/4 cup half-and-half

  • Heat oven to 375 degrees; spray 13x9-inch (3 quart) glass baking dish with cooking spray.
  • Place stuffing crumbs in resealable food storage plastic bag; seal bag and coarsely crush with rolling pin.
  • In shallow bowl or pie plate, mix stuffing crumbs and butter.
  • In another shallow bowl, beat egg and half-and-half with fork until well mixed.

4 boneless, skinless chicken breasts
2 cups buttermilk
2 cups crushed herb-seasoned stuffing mix
1 cup all-purpose flour
1 teaspoon salt
½ teaspoon ground black pepper
1 egg
1 tablespoon water
2 tablespoons peanut oil

Steps:

  • Place chicken breasts and buttermilk into a large resealable plastic bag, knead several times to coat chicken with buttermilk, and squeeze air from the bag. Seal and refrigerate at least 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Placed crushed herb-seasoned stuffing mix into a shallow bowl. Mix flour, salt, and black pepper in a separate flat dish. Beat egg with water in a bowl. Pour peanut oil into the bottom of a 9x13-inch baking pan.
  • Remove chicken from buttermilk, shake off excess buttermilk, and discard used buttermilk marinade. Dredge chicken breasts in seasoned flour. Dip each floured breast in egg, then press gently into stuffing mix to coat. Place coated chicken breasts into the pan with peanut oil.

1 box Stovetop Stuffing Mix (flavor of your choice (I use Chicken))
10 ounce can cream of chicken soup*
1/2 cup milk

  • Place stuffing mix in large zipper seal bag and crush with a rolling pin or meat tenderizer (or your hands).
  • In bowl or measuring cup, stir together soup and milk until well blended. Pour stuffing mix crumbs in one bowl and soup mixture into another.

1 poblano pepper
7 slices stale whole wheat bread
1 garlic clove
2 tablespoons olive oil (30 milliliters)
Kosher salt and freshly ground black pepper
1/2 cup feta cheese, crumbled (about 50 grams)
4 boneless, skinless chicken breasts
1/2 cup all-purpose flour (65 grams)
1/4 cup mayonnaise (60 milliliters)
2 eggs

Steps:

  • Using a pair of metal kitchen tongs or a fork, hold the pepper over the flame of a gas burner until well charred, turning occasionally. Alternatively, char the pepper under your broiler set to high, turning occasionally until charred. Transfer to a small bowl and cover with plastic or a plate to seal in the steam and set aside.
  • Tear the bread into small pieces and roughly chop the garlic. Add both to the bowl of a food processor fitted with a steel blade and pulse until the mixture is finely ground into breadcrumbs. Add the olive oil, season with salt and pepper and pulse to combine.
  • Heat a large skillet over medium-high heat and add the breadcrumb mixture. Toast, stirring occasionally, until golden brown and crisp, about 5 minutes. Transfer to a shallow dish and spread into a thin layer to cool completely.
  • Meanwhile, peel the charred skin off of the pepper, finely dice and add it to a small bowl along with the crumbled feta. Mix well to combine and set aside.
  • Preheat the oven to 375 degrees F (190 degrees C) and set out two baking sheets.
  • Prepare the chicken by removing the tender from each and slicing two of the breasts into four or five long pieces that are about the same size as the tenders. Slice a pocket into the side of the two remaining chicken breasts and stuff each with the pepper and feta mixture.
  • Scatter the flour into a shallow dish. Season with salt. Beat the mayonnaise and eggs together in a separate shallow dish. Set up a breading station with the flour, egg mixture and toasted breadcrumbs. Dredge the tenders by coating in flour, dipping in the egg and finally pressing into the breadcrumbs to coat. Continue with the rest of the tenders, placing the coated pieces onto one of the baking sheets, leaving space between each. Coat the stuffed chicken breasts as you did the tenders, being careful not to let any of the stuffing fall out, and place onto the second baking sheet.
  • Place both the tenders and the stuffed chicken breasts into the oven, placing the stuffed breasts onto the lower shelf if needed for space. Bake until cooked through to 165 degrees F (75 degrees C), 20 to 25 minutes for the tenders and 25 to 30 minutes for the stuffed breasts. Allow the chicken to rest for 3 to 5 minutes.

CRISP STUFFED CHICKEN CUTLETS

The chef Alexandra Raij modeled this recipe on a traditional Spanish dish called flamenquines, in which flattened chicken breasts are stuffed with ham and cheese, then rolled up, coated in egg and bread crumbs and fried. Her recipe mostly follows that lead, but instead of pounding the breasts and rolling them up with the stuffing, she used thin cutlets of chicken and layered the stuffing between two of them, sealing them together with an egg mixture. Fried to a golden hue, the dish is both crunchy and greaseless. The crumbs insulate the delicate meat and help keep it from overcooking.

1 1/2 ounces thinly sliced provolone cheese (1 1/2 slices)

  • Brush one side of each chicken cutlet with mustard. Divide cheese and ham among 3 cutlets and place on mustard side. Top each with 1 tablespoon sauerkraut and 1/8 teaspoon caraway seeds.   • Dip stuffed cutlets in egg white mixture and dredge in bread crumbs. (You can do this several hours ahead and refrigerate until needed).
  • Heat oil in a large skillet over medium-high heat. Carefully place cutlets in hot pan and fry until dark brown and cooked through, 2 to 3 minutes a side. Transfer to a paper towel-lined plate to drain; serve hot, with additional sauerkraut on the side.

This one is soooooooo good! Chicken comes out super moist and tender. Another recipe from my Mom. This will be one you'll be again and again once you try it. Make sure to use the regular stuffing, not the cubed kind. This recipe works well with Perdue thin sliced chicken as well. Just depends on how thick you want the chicken to be. Sour cream and stuffing amounts are not exact. If you use more chicken you will need more of each.

2 lbs boneless skinless chicken breasts
16 ounces sour cream
4 cups Pepperidge Farm Herb Stuffing (unprepared)
1/2 cup butter

Steps:

  • Wash chicken and pat dry.
  • Smother sour cream on both sides of the chicken.
  • Sour cream needs to be slathered on thick.
  • Dump stuffing mix out onto a flat plate.
  • Press sour cream coated chicken into stuffing so that you cover both sides of chicken with as much stuffing as possible.
  • Heat 1/2 stick of butter in the bottom of a large casserole baking dish until melted.
  • Add chicken to the dish and bake at 350 for 30 minutes.
  • Remove from oven and put another 1/2 stick of butter into dish.
  • Flip chicken over and bake for another 30-45 minutes (cook time may vary depending on how thick the chicken you use is).
  • Enjoy!
