CRISPY FRIED CABBAGE

A British Chinese takeaway classic, often called crispy seaweed, this dish is in fact made with dark green cabbage!

Yield Serves 2 as a side

Number Of Ingredients 5

10-12 leaves savoy cabbage, tough outer leaves discarded
½ tsp flaky sea salt
½ tsp soft light brown sugar
a pinch Chinese five-spice
vegetable oil, for deep-frying

Steps:

  • Separate the leaves from the cabbage, cut out the stalks and shred the leaves finely. Blanch in boiling water for 1 minute and drain thoroughly. Pat the shredded cabbage with kitchen paper until thoroughly dried.
  • Mix together the salt, sugar and five-spice in a small bowl.
  • Fill 1 /3 of a pan with vegetable oil and heat to 160C or until a cube of bread browns in 45 seconds. Fry small batches of the cabbage for 30 seconds, taking care as it may spit when put into the oil, until really crisp, then drain on kitchen paper.
  • Tip into a bowl and season with the spice mixture, to serve.

1 cabbage head
or if you're cooking for 1 or 2 people you cna cut it down to 1/2 a head
3 Tbsp extra virgin olive oil
salt and pepper

Steps:

  • 1. Cut Cabbage so that it looks shredded, or into bite size pieces.
  • 2. mix with olive oil and salt and pepper to taste. Put in a pan, preferably in a single layer, but that doesn't always happen.
  • 3. Bake at 375 - 400 in the oven until crispy or if you rather it be less crispy take it out earlier. Stir periodically so that the bottom or top doesn't burn. The cook time will vary depending on liking, how much cabbage you have, and how high your temp is.

2 tablespoons butter
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon pepper
6 cups coarsely chopped cabbage
1 tablespoon water

Steps:

  • In a large skillet, melt butter over medium heat. Stir in the sugar, salt, pepper flakes and pepper. Add the cabbage and water. Cook for 5-6 minutes or until tender, stirring occasionally.
