CRISPY CHILLI BEEF

Ditch the takeaway and whip up this Chinese flash-fried steak with a sweet gingery sauce and red peppers

350g thin-cut minute steak, very thinly sliced into strips
3 tbsp cornflour
2 tsp Chinese five-spice powder
100ml vegetable oil
1 red pepper, thinly sliced
1 red chilli, thinly sliced
4 spring onions, sliced, green and white parts separated
2 garlic cloves, crushed
thumb-sized piece ginger, cut into matchsticks
4 tbsp rice wine vinegar or white wine vinegar
1 tbsp soy sauce
2 tbsp sweet chilli sauce
2 tbsp tomato ketchup
cooked noodles, to serve (optional)
prawn crackers, to serve (optional)

Steps:

  • Put 350g thin-cut minute steak strips in a bowl and toss in 3 tbsp cornflour and 2 tsp Chinese five-spice powder.
  • Heat 100ml vegetable oil in a wok or large frying pan until hot, then add the beef and fry until golden and crisp.
  • Scoop out the beef and drain on kitchen paper. Pour away all but 1 tbsp oil.
  • Add 1 thinly sliced red pepper, ½ thinly sliced red chilli, sliced white ends of 4 spring onions, 2 crushed garlic cloves and thumb-sized piece ginger, cut into matchsticks, to the pan. Stir-fry for 3 mins to soften, but don't let the garlic and ginger burn.
  • Mix the 4 tbsp rice wine vinegar or white wine vinegar, 1 tbsp soy sauce, 2 tbsp sweet chilli sauce and 2 tbsp tomato ketchup in a jug with 2 tbsp water, then pour over the veg.
  • Bubble for 2 mins, then add the beef back to the pan and toss well to coat.
  • Serve the beef on noodles with prawn crackers, if you like, scattered with the remaining ½ sliced red chilli and sliced green parts of the spring onions.

When it comes to getting take-out, this is my go-to. Orange-flavored crispy beef is just so yummy! This recipe beats any take-out, and what's better is that it's so easy to make.

Vegetable oil, for frying
1 pound skirt steak, thinly sliced into 1/4-inch pieces
1/2 cup cornstarch
3/4 cup sweet chili sauce
1/2 cup fresh orange juice
3 tablespoons soy sauce
Cooked rice, for serving
2 scallions, finely chopped
1/4 cup toasted sesame seeds

Steps:

  • For the steak: Pour about 2 inches of oil in a large heavy-bottomed saucepan and heat to 350 degrees F over medium heat.
  • Meanwhile, toss the steak with the cornstarch in a medium bowl. Let sit for 5 minutes and then toss again.
  • Cook the steak in batches until lightly browned, 4 to 5 minutes; transfer to a plate with a mesh spider and set aside.
  • For the sauce: Combine the chili sauce, orange juice and soy sauce in another large heavy-bottomed saucepan. Stir and simmer until the sauce thickens, 2 to 3 minutes. Add the steak to the saucepan and stir to coat in the sauce.
  • Serve the orange beef with cooked rice, garnish with the scallions and sprinkle with the sesame seeds.

SPICY CRISPY BEEF

I've never found a recipe for crispy ginger beef like the ones in the restaurants. I have experimented, and found something pretty close. Serve with rice and some steamed veggies.

¼ cup cornstarch
¼ tablespoon salt
black pepper
12 ounces flank steak, thinly sliced
1 quart oil for frying
4 tablespoons soy sauce
1 tablespoon rice vinegar
½ tablespoon rice wine
1 ½ tablespoons honey
7 tablespoons granulated sugar
½ tablespoon chile paste
¼ cup water
3 tablespoons chopped fresh ginger root
1 tablespoon vegetable oil
2 cloves garlic, chopped
¼ cup sliced onion
¼ cup diced red bell pepper

Steps:

  • Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Meanwhile, in a mixing bowl, combine cornstarch, salt and pepper together. Mix thoroughly. Toss the steak slices in the cornstarch mixture and coat well.
  • Deep fry the coated steak slices until golden brown. Check to make sure they are cooked through. Remove from oil, and set aside.
  • In another mixing bowl, combine the soy sauce, rice vinegar, rice wine and honey. Add sugar, chili paste, water, and ginger. Mix well and set aside.
  • Heat a wok or deep frying pan over medium high heat. Add 1 tablespoon of oil, and quickly saute the onion, garlic and red pepper for 30 seconds. Add the sauce mixture, and cook another 30 seconds. Finally, add the strips of fried steak and toss to heat through and coat with sauce.

These tacos are inspired by the beef machaca tacos from The Talpa Restaurant and Bar in Los Angeles, CA.

1/2 cup vegetable oil
1/4 cup Worcestershire sauce
Juice of 2 limes
1 teaspoon ancho chile powder
1 teaspoon guajillo chile powder
1 teaspoon ground cumin
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
1/4 teaspoon dried thyme
2 1/2 pound chuck roast, cut into 4-ounce portions
3 tablespoons vegetable oil
2 1/2 cups water
One 14-ounce can diced tomatoes
1 tablespoon ground cumin
1 tablespoon dried oregano
1 teaspoon Mexican hot sauce, such as Tapatio or Cholula
Kosher salt and freshly ground black pepper
Ten 6-inch flour tortillas, warmed
Vegetable oil, for frying
Shredded Cheddar, for serving
Shredded iceberg lettuce, for serving
Wedged tomatoes, for serving

Steps:

  • For the marinade: Whisk the oil, Worcestershire sauce, lime juice, chile powders, cumin, garlic powder, oregano, pepper, salt and thyme together in a large bowl. Add the beef, making sure every piece is evenly coated. Cover and refrigerate overnight.
  • For the machaca: Heat the oil in a large pot over medium-high heat. Drain the beef, pat it dry and then sear in batches until browned on all sides. Remove to a plate. Add the water, tomatoes, cumin, oregano, hot sauce and some salt and pepper to the pot and bring to a boil, scraping the browned bits off the bottom of the pan.
  • Return the beef to the pan and reduce the heat to low. Cover and simmer until the meat is fork tender, about 2 hours.
  • Remove from the heat and pull out the meat, shredding it with forks. Return the meat to the pot and bring to a simmer over medium heat, uncovered. Reduce the liquid until very thick, almost dry, about 1 hour. Season with salt and pepper.
  • For the tacos: Take a warm tortilla and fill with 3 tablespoons of the machaca beef. Fold the tortilla over and close with two toothpicks along the sides. Continue with the remaining tortillas.
  • Fill a large heavy-bottomed saucepan with enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. (If you don't have a thermometer, a cube of bread will brown in about 3 minutes.)
  • Fry the tacos in batches until golden brown and the shell is hard, about 3 minutes on each side. Set aside on a tray lined with parchment paper. Remove the toothpicks and fill each taco with cheese, lettuce and tomato.

2 eggs, beaten
1/2 teaspoon salt
1 1/2 tablespoons cornflour
150 g beef frying steak, thinly sliced strips (0.5-1 cm wide)
vegetable oil, for deep frying
2 carrots, finely julienned
1 spring onion, julienned
1/2 garlic clove, minced
1 red chili, finely chopped
10 g sugar
2 tablespoons rice vinegar
3 tablespoons sweet chilli dipping sauce
splash soy sauce

Steps:

  • Beat together eggs, salt and cornflour. Mix in the beef until well coated.
  • Heat oil to 180C and deep-fry the beef strips, adding them individually. Leave them ten seconds before stirring, to prevent them sticking together.
  • Cook for 6-7 minutes until brown and crispy. Don't overload the pan or they will end up soggy.
  • As the beef cooks, remove it and drain on kitchen paper.
  • Using a little of the frying oil, stir fry the carrot, onion, garlic and chilli. Add the sugar, vinegar, chilli sauce and soy sauce and mix.
  • Add the beef and toss together.
