- 1. EMPTY CAN SALMON LIGUID AND ALL IN BOWL, ADD ALL OTHER INGREDIENTS LIGHTLY MIX TOGETHER, TILL YOU CAN FORM BALL AND MAKE PATTY IN YOUR HAND, FRY TILL GOLDEN BROWN ON EACH SIDE THIS RECIPE CAN BE DOUBLED EASYILY, I NEVER HAVE ENOUGH, GRANDKIDS EATING THEM AS I FRY OR GONE BY NEXT DAY, THEY LOVE TO EAT THEM COLD.
- 2. FOR CREAMED PEAS......MELT BUTTER IN SAUCE PAN, ADD FLOUR AND STIR TILL SMOOTH CREAMY PASTE, DO NOT BURN OR BROWN, WE WANT A LIGHT COLOR REAUX, JUST ENOUGH TO COOK FLOUR TASTE OFF, THEN ADD MILK, WISKING OR STIRRING THE WHOLE TIME...AS IT COMES TO BOIL, IT WILL THICKEN, ADD MORE MILK IF NEEDED OR TILL CONSISTENCY YOU LIKE...THEN ADD THE WHOLE BAG PEAS, AND LOWER HEAT AND SIMMER TILL PEAS TENDER...WONT TAKE LONG....SERVE ALONG SIDE THE SALMON PATTIES OR TUNA PATTIES.

CRISPY SALMON PATTIES
My family has always loved these salmon patties. They come out very crisp and have a wonderful flavor and they're easy to make. I serve them with potatoes or mac & cheese and a vegetable for a great meal. Hope y'all enjoy!

Steps:
- 1. Open canned salmon and drain. Remove ALL skin and ALL bones from salmon. Place in a large bowl. Crush crackers into crumbs and add to salmon; add eggs. Using hands, mix all ingredients together well.
- 2. Heat canola oil in large skillet. When oil is hot, form salmon mixture into patties and fry 3-5 minutes or until golden brown. Gently turn and brown on other side. Sprinkle with salt and pepper to taste. Drain on paper towels and serve hot.
- 3. HELPFUL TIPS: When forming patties, try not to make them too thin or they may break apart when turning. Be sure to remove all of the skin and bones from the salmon before mixing and forming into patties. When browned well in hot oil, these patties are very crispy and delicious.

- 1. If using boned salmon, remove the bones and skin and discard. Place salmon into a medium bowl. Flake with a fork until separated; add the egg, cracker crumbs, minced onion , dill, and parsley. Mix well.
- 2. With clean hands, shape salmon into 4-6 patties. Place on waxed paper, and dredge in flour. If they have a tendency to fall apart, add more cracker crumbs.
- 3. Heat oil in large skillet until hot. Add salmon patties and brown on both sides over medium-high heat until golden brown. Drain on paper towels and serve with lemon juice, tartar sauce, or any topping of your choice. Or maybe you prefer them plain. Enjoy!
CRISPY SALMON PATTIES
Steps:
- Drain salmon, saving liquid. Place salmon in medium size mixing bowl and debone salmon. Add egg and onion to deboned salmon, blending well until mixture is sticky. Stir in flour, mixing well.
- In small bowl, combine baking powder with 2 Tbsp. of the saved liquid, stirring until mixture is frothy. Pour baking powder mixture into salmon mixture, mixing well.
- Form into small patties and fry in oil until golden brown (about 5 minutes).
