1 kg (2.2lbs) potatoes
2 eggs
1 onion
2 tablespoons flour
1-2 teaspoons salt
1/2 teaspoon black pepper

Steps:

  • 1. prepare a large bowl with cold water. 2. Peel the potatoes and onion. Grate the potatoes and onion and transfer to the cold water. 3. Drain the liquids and then wrap grated potatoes and onion with cheesecloth or kitchen towel, twist cheesecloth into a pouch and squeeze out excess liquids. 4. Transfer to a large bowl, add salt, pepper, flour and beaten eggs. Mix well. 5. In a large skillet heat oil over medium-high heat. spoon 2-3 tablespoons of potato mixture the hot oil, flatten slightly. 6. Fry 3-4 minutes on each side or until golden brown. Transfer to paper towels to drain and season with salt. 7. Serve with sour cream.

2 large russet potatoes , peeled and grated, about 2lbs
1 large onion, chopped finely
3 Tbsp fresh parsley, minced
2 eggs, beaten
3-4 Tbsp flour, as needed
salt and pepper, to taste

Steps:

  • 1. Place grated potatoes in a dish towel and pat completely dry.
  • 2. Mix potatoes, eggs, onions, parsley together. Add enough flour to make the mixture stick together.
  • 3. Fry the mixture in hot oil approx. 350 F until golden brown on both sides.
  • 4. Drain on paper towels

1 egg
1/3 cup chopped onion
1 tablespoon all-purpose flour
1/2 teaspoon salt

This is the perfect comforting and delicious recipe for using up leftover mashed potatoes. These Potato Fritters with Chives are creamy with a golden crust. Serve the fritters as a satisfying side dish that is made vegetarian and gluten-free.

3 cups prepared mashed potatoes, chilled
½ cup flour plus 2 tablespoons flour, divided (I used the Bob's 1-to-1 gluten-free baking flour)
1 egg, beaten
1 tablespoon fresh chopped chives
1 teaspoon sea salt
4 tablespoons olive oil, for cooking the fritters
Sour cream (optional, for dipping)

Steps:

  • In a large bowl, combine the mashed potatoes, ½ cup of the flour, egg, chives, and sea salt.
  • Use a spatula to mix the ingredients together to make the fritter batter. Add up to 2 extra tablespoons of the flour until your fritter batter is thick enough that it will stick together.
  • Then, use your hands to form 12 fritters. Pat them down so they look like small and thin burger patties. Place the formed fritters on a plate.
  • In a large nonstick skillet, heat up two tablespoons of the oil. Let it heat up for a few minutes over medium-high heat. Then, carefully place as many fritters as you can in the pan without them overlapping. You will probably need to cook them in two batches.
  • Let the fritters cook for about 5 minutes. Then, use a spatula to flip them over to cook for another 5 minutes.
  • The fritters should be golden brown on both sides when they are done.
  • Transfer the cooked fritters to a serving plate lined with paper towels and cook the second batch in the remaining two tablespoons of oil.
  • Serve the fritters hot with optional sour cream (for dipping).
