- SPREAD one slice of bread with Hellmann's® or Best Foods® Real Mayonnaise. Place bread Mayonnaise-side-down into hot skillet; add cheese.

CRISPY GRILLED CHEESE

- Heat a nonstick or cast-iron skillet over medium-low heat.
- Spread one side of each piece of bread with a small amount of softened butter. Sprinkle 2 tablespoons of the Parmesan on each slice so it sticks to the butter. Turn one piece over and sprinkle the mixed cheese on top (this will be the filling). Place the other piece of bread on top, with the Parmesan side facing up.
- Carefully transfer the sandwich to the skillet and cook on both sides until the middle filling is melted and gooey. Watch carefully so the surface doesn't burn; it should be a nice deep golden brown. Slice in half and dig in!
SPLIT PEA SOUP WITH BACON AND CRISPY WHITE CHEDDAR GRILLED CHEESE

- Make the soup: If you have not yet, soak your split peas in water for 2 hours or overnight. This will improve the cook time of your soup. If the peas are not soaked, you will just need to cook them longer, about 30 to 40 extra minutes.
- Heat the olive oil in a large pot over medium heat. Add the diced bacon and cook until crispy and brown. Use a slotted spoon to remove the bacon and rest it on a paper towel-lined plate. Pour off all but 1/4 cup of the drippings from the pot.
- Place the pot back over medium heat and add the onions, garlic and marjoram leaves. Cook until they turn translucent, about 2 minutes.
- Add the split peas, stock and milk and simmer until the peas start to fall apart, about 20 minutes.
- Once cooked, transfer half of the peas and cooking liquid to a blender with half of the spinach. Puree until smooth, adding more liquid if needed to thin out the soup. Repeat this step for the remaining half of the peas and cooking liquid.
- Combine all of the soup together and season with salt and lemon juice. Serve garnished with the bacon bits, sour cream and some fresh marjoram.
- Make the grilled cheese: Using the flat side of a knife or the back of a spoon or fork, crush the cloves of garlic and place into a small microwave-safe bowl. Add the butter and microwave on high for about 30 seconds or until the butter is boiling hot and fully melted.
- Brush the garlic butter over the back of the top and bottom pieces of bread for each sandwich. Flip the bread over and spread mayonnaise on each side and place 2 pieces of sharp white cheddar cheese in the middle of half of the pieces of bread.
- In a saute pan or skillet over medium heat, toast the sandwich butter side down until an even brown color is achieved, about 1 1/2 minutes. Flip the sandwich and repeat on the other side.
- Sprinkle with a pinch of salt, cut in half and serve hot with soup.
GRILLED CHEESE TOMATO PANINI WITH CRISPY APPLES
OH BOY, OH BOY! Tried these for lunch today, they are so good! We thought we would share one of these for lunch, but had to make a second one, it was just too good! (I will try fresh tomatoes next time, although the canned were great.) from the local newspaper.

- Sprinkle half of cheese evenly over one of bread slices.
- Arrange tomato halves over cheese, covering bread slices evenly.
- Top with apple slices.
- Sprinkle with remainder of cheese.
- Top with remaining bread slice.
- Heat a non stick sauté pan and spray lightly with veggie oil.
- Place sandwich in pan and weigh top down by pressing a plate over sandwich,topped with a can.
- Sauté over low heat 3 to 4 minutes.
- Turn sandwich over and repeat process until bread is golden brown and cheese is melted.
- Slice in two and serve immediately.

- Line a baking sheet with foil. For EASY clean up.
- Lay bacon slices on the foil lined baking sheet.
- Sprinkle bacon with brown sugar and chili powder giving them a toss to coat then spread bacon out in a single layer.
- Place pan on the center rack of a cold oven.
- Close oven door.
- Turn oven on to 400°F Check 17 to 20 minutes later. The exact time will depend on the thickness of the bacon slices, and also on how quickly your oven reaches 400 degrees.
- Keep your eye on the bacon during the final few minutes of cooking to make sure that it doesn't burn. Also, remove the cooked bacon from the hot pan right away. The heat from the pan and the hot bacon fat will continue cooking the bacon.
- Heat a cast iron or heavy bottom skillet to medium high heat.
- Layer your sandwich:.
- Start with bread slice, cheese, red bell pepper slices, pickle slices, bacon, cheese, optional basil, bread slice. Spread butter over the top of the sandwich. Place the sandwich top side down (butter side down) on the hot pan. Butter the exposed side of the sandwich.
- Let cook for a minute and then flip over to its other side.
- Press down on the sandwich with a spatula or lay a heavy pan on the sandwich. Cook for 2 minutes flip and wiegh down and cook for 1 minute more. If you have a panini press do use it.
- The sandwich is done when the sides are toasted and the cheese is melted. Cut in half and ENJOY!
