CRISPY GINGER COOKIES

I originally found this recipe in my mother's cookbook although I altered the recipe/ingredients around a bit. These cookies are crisp with a medium ginger taste which isn't too overpowering yet adds a good flavor to the cookies. Note: I found it easier to use your hands to mix the flour, ginger, cornflakes and butter, sugar and egg mixtures together. Just be sure not to over-mix it. Also, keep an eye on the cookies after the ten minute mark as mine started to turn golden brown pretty quickly.

125 g butter
1/2 cup white sugar
1 egg
1 3/4 cups self-raising flour
1 cup ginger, chopped finely (crystallised)
2 cups corn flakes

Steps:

  • Preheat oven to 180º Celsius (356º Fahrenheit).
  • Use an electric beater to beat the butter and sugar together. Beat until the mixture is combined and has become creamy.
  • Add the egg and continue to beat well.
  • Add the flour, crystallised ginger and half of the cornflakes (1 cup). Mix together with either a spoon or your hands.
  • On a tray, crush the rest of the cornflakes with a rolling pin until the cornflakes are fine.
  • Scoop a teaspoonfull of the mixture and use your hands to shape into balls which you then roll in the cornflakes you crushed earlier.
  • Grease a baking tray with cooking spray/butter or cover with baking paper. Put the cornflake covered balls on the tray about 5cm apart from each other. Flatten the top of the ball with a fork gently.
  • Bake for 10-20 minutes until the cookies are firm and have a light, golden color.
  • Leave cookies on the baking tray for a couple of minutes before transferring to a wire rack to cool. The cookies start to really crispen once cooled.

COCONUT GINGER RICE CRISPY COOKIES

Another great recipe from: EatWisconsinCheese.com These can be spread in large pan and baked also. But best baked as cookies. Candied ginger( crystallized ginger) can be found in many supermarket produce or spice sections or in a health or gourmet store.

1 c real butter,softened
1 1/4 c light brown sugar, firmly packed
1 c granulated sugar
1 tsp pure vanilla extract
1 tsp salt
2 large eggs
2 c all purpose flour
1 1/2 tsp baking powder
1 c shredded unsweetened coconut
1 c candied ginger pieces, diced
4 c rice crispy cereal
2 Tbsp sesame seeds, optional

Steps:

  • 1. Preheat oven to 350^. In a mixing bowl, beat together butter, sugars, vanilla and salt until light and fluffy. Add eggs one at a time and beat until smooth.
  • 2. In a separate bowl, whisk together the flour and baking powder. Add the flour mixture to the butter mixture and beat until blended. Stir in coconut, ginger and cereal, mixing until just blended. Using a teaspoon, drop the dough onto parchment-lined cookie sheets about 1/2 inch apart. Sprinkle the top of each cookie with sesame seeds , if desired. Bake until edges just start to turn golden and centers are still moist, 10-12 minutes. Remove to a cooking rack or paper to cool completely. Store in an airtight container for up to one week.
