MOM'S SUPER THIN AND CRISPY CHICKEN CUTLETS



Mom's Super Thin and Crispy Chicken Cutlets image

3 large eggs
2 cups panko breadcrumbs
1/4 cup chopped fresh parsley, plus whole leaves for garnish
2 tablespoons freshly grated pecorino, plus more for garnish
1 tablespoon granulated garlic
1 teaspoon kosher salt
Two 6- to 8-ounce chicken breasts
2 cups olive oil
4 large or 6 small cloves garlic
1 stick unsalted butter
2 lemons, halved

Steps:

  • Beat the eggs and 1 tablespoon water in a shallow bowl. Set aside until ready to fry.
  • In a food processor, pulse the breadcrumbs with the parsley, pecorino, granulated garlic and salt until just incorporated. Transfer the breadcrumbs to a shallow dish.
  • Cut the chicken breasts in half crosswise. On a sturdy cutting board, place a piece of chicken between 2 pieces of plastic wrap. Using a mallet or other blunt object, pound the chicken into a flat piece about 1/8-inch to 1/4-inch thick. Repeat with the remaining chicken.
  • Heat 1 cup olive oil to 350 degrees F in a 14-inch cast-iron pan with the garlic cloves. Line a sheet tray with a wire rack.
  • Working in an assembly line, dredge the cutlets in the egg and then the breading. Double-bread by going back to the egg wash and back into the breading. Add the first piece of breaded chicken to the preheated oil along with 1/2 stick butter. Once the butter is mostly melted, add another piece of chicken. Fry until an internal temperature of 160 degrees F is reached, 2 to 3 minutes on each side. Add more oil and butter to the pan as needed while you fry the rest of your batches, allowing the oil to come back to heat between batches. Rest on the wire rack.
  • Meanwhile, preheat a 10-inch cast-iron pan over medium-high heat until hot, then place the lemon halves, cut-side down, directly in the pan and allow to caramelize, 1 to 2 minutes. Reserve for garnish.
  • Place the chicken cutlets on a large platter and garnish with freshly grated pecorino, parsley leaves and caramelized lemon halves.

Dredge chicken with seasoned flour and pass through egg mixture. Shake off excess egg. For an even crispier crust, dredge with flour again and pass through egg mixture one more time.
  • Now completely cover chicken breasts with Panko crumbs, pressing crumbs down gently if needed.
  • Heat oil in frying pan on medium-high heat. Cook for 4 minutes on each side (or until no longer pink inside) and serve.

2 large egg yolks
1/2 cup mayonnaise
2 tsp. kosher salt
4 lb. skinless, boneless chicken cutlets, pounded 1/4" thick (for smaller pieces, quarter cutlet before pounding)
3/4 cup extra-virgin olive oil
6 cups panko (Japanese breadcrumbs)
2 Tbsp. mustard powder, garlic powder, finely grated Parmesan, or dried herbs (optional)

Steps:

  • Whisk egg yolks, mayonnaise, and salt in a large bowl until smooth. Add chicken and turn several times with tongs until evenly coated.
  • Heat oil in a large skillet over medium-high until shimmering. Add panko and cook, stirring constantly with a wooden spoon, making sure to get around the edges to incorporate darker breadcrumbs, until golden brown, about 5 minutes. Let cool slightly, then stir in mustard powder, if using.
  • Using tongs, place a cutlet in skillet. Pat surrounding toasted panko onto cutlet with one of your hands, pressing firmly to adhere. Turn and repeat on the other side with more breadcrumbs. Lightly shake off excess breadcrumbs. Transfer to a wire rack set inside a rimmed baking sheet (if you are making these ahead and freezing, skip wire rack and place directly on a baking sheet). Repeat with remaining cutlets, spacing evenly apart on baking sheet. Discard any remaining panko. At this point, breaded cutlets can be frozen up to 3 months. Freeze chicken on baking sheets until firm, about 1 hour, then transfer to resealable freezer bags or layer in an airtight container with sheets of parchment between cutlets.
  • Preheat oven to 450°F and bake cutlets until cooked through and juices run clear when pierced with a knife, 10-12 minutes. If cutlets are frozen, they will take a little longer, 14-16 minutes. You can also bake chicken 1 or 2 at a time in a toaster oven at 450°F. Bake directly on rack, 12-14 minutes.

1 cup Italian bread crumbs
1/3 to 1/2 cup grated Parmigiano, a couple of handfuls
1 teaspoon crushed red pepper flakes
2 teaspoons poultry seasoning
1 clove garlic
1 (3-ounce) jar pine nuts (pignoli)
1 lemon, zested
2 eggs, beaten
Olive oil, for shallow frying
1 cup loosely packed basil leaves
1/2 cup loosely packed parsley leaves
1/2 lemon, juiced
Salt and freshly ground black pepper
1/4 cup extra-virgin olive oil, eyeball it
1 Roma or plum tomato, seeded and finely chopped, for garnish
2 tablespoons extra-virgin olive oil
1 large clove garlic, finely chopped
1 small onion, finely chopped
1 cup arborio rice
Salt and pepper
1/2 cup dry white wine
3 to 4 cups chicken stock, 1 quart size box, available in soup aisle of the market

  • Season the cutlets with salt and pepper on both sides turn lightly in flour.
  • Combine next 7 ingredients in food processor and pulse-process the crumbs to chop the spices, garlic and nuts and evenly distribute the flavors throughout the crumb and cheese mixture. Transfer the mixture to a plate. Beat eggs in a separate shallow dish.
  • Heat a thin layer of oil in a large skillet, just enough to coat the bottom of the pan, over medium to medium high heat. Coat the cutlets in eggs then breading and add to the hot oil. Cook cutlets in a single layer, in 2 batches if necessary, about 3 or 4 minutes on each side, until cutlets' juices run clear and breading is evenly browned.
  • Return food processor bowl to base and add basil, parsley and lemon juice. Add a little salt and pepper. Turn processor on and stream in oil until a loose paste forms.
  • Serve chicken cutlets with a generous amount of basil and parsley sauce poured over the cutlets. Garnish the chicken with finely chopped Roma tomato. Serve Cheesy Risi e Bisi alongside.
  • Heat a medium skillet over medium high heat. Add extra-virgin olive oil and garlic and onion and saute, stirring constantly 2 to 3 minutes then add rice and season with a little salt and pepper. Cook another minute or so then add wine and let it completely absorb, 30 seconds. Add about 1 cup chicken stock and stir. Reduce heat a bit to medium. Stir often and continue adding a half cup of liquid each time liquid becomes completely absorbed. Cook 22 minutes, using as much stock as is necessary to result in creamy-consistency rice with a bite to it.
  • When rice is cooked to desired consistency, remove from heat and stir in cheese, parsley and peas and stir to combine and to heat peas through.

3 Persian cucumbers, or any small cucumber
3 medium tricolor carrots
Kosher salt and freshly cracked black pepper
1 lemon
1 shallot, minced
1/4 cup olive oil
Two 5- to 6-ounce boneless, skinless chicken breasts
1/2 cup all-purpose flour
1 packet ranch seasoning
2 large eggs
1 1/2 cups panko breadcrumbs
1/3 cup canola oil
1 bunch dill
1 bunch parsley

Steps:

  • Thinly slice the radishes, cucumbers and carrots lengthwise using a mandoline or a very sharp knife. Place in a large bowl, sprinkle with salt and pepper and set aside.
  • Zest and juice the lemon. Combine the zest, juice and shallot in a mason jar or other jar with a tightly fitting lid and add salt and pepper to taste. Give it a good mix, then add the olive oil. Screw on the lid and shake to combine. Set aside.
  • Pat the chicken breasts dry. Using a sharp knife, slice each chicken breast in two horizontally so you have a total of 4 thin cutlets.

1/4 cup thick teriyaki sauce
1 tablespoon butter

Leaving the skin on gives these cutlets a satisfying layer of fatty crunch when cooked.

1/4 small onion, thinly sliced
3 tablespoons distilled white vinegar, divided
Kosher salt, freshly ground pepper
6 tablespoons olive oil, divided
1 cup torn country-style bread, (from about 1/4 small loaf)
2 skin-on, bone-in chicken breasts
2 tablespoons vegetable oil
1 pound cherry tomatoes
Pinch of sugar
3/4 cup parsley leaves with tender stems

Steps:

  • Combine onion and 2 tablespoons vinegar in a small bowl. Season with salt and pepper; set aside.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high. Add bread; season with salt and pepper. Cook, tossing, until golden brown, 5-8 minutes. Transfer to a medium bowl. Wipe out skillet.
  • Using a thin, sharp knife, cut bones and cartilage from chicken breasts. Pound chicken between 2 sheets of plastic wrap to 1/4" thick; season with salt and pepper.
  • Heat 1 tablespoon vegetable oil in skillet over medium-high. Cook 1 chicken breast, skin side down, until golden brown and nearly cooked through, about 4 minutes. Turn and cook until cooked through, about 1 minute more; second side will not brown. Transfer to a platter. Repeat with remaining cutlet and 1 tablespoon vegetable oil (no need to wipe out skillet).
  • Cut half of tomatoes in half. Heat 2 tablespoons olive oil in same skillet over medium-high. Add whole tomatoes; season with salt and pepper. Cook, tossing occasionally, until lightly blistered and starting to burst, about 5 minutes. Toss in sugar and remaining 1 tablespoon vinegar. Transfer to bowl with croutons. Add pickled onion with pickling liquid, halved tomatoes, parsley, and remaining 2 tablespoons olive oil and toss. Serve chicken with panzanella spooned over.

Eric Kim's ultra-crispy curried chicken cutlets and cabbage slaw come together for a delicious and easy weeknight dinner.

Number Of Ingredients 16

2 Tbsp. rice vinegar
2 Tbsp. sugar
½ tsp. kosher salt
½ lb. (about 3 cups) green cabbage, cored and as thinly sliced as possible
2 Tbsp. Worcestershire sauce
2 Tbsp. ketchup
1 Tbsp. dark brown sugar
2 boneless, skinless chicken breasts (6 to 8 oz. each)
Kosher salt and freshly ground black pepper
¼ cup mayonnaise
2 Tbsp. Dijon mustard
1 cup panko bread crumbs, plus more as needed
1 ½ tsp. curry powder
1 tsp. garlic powder
4 Tbsp. vegetable oil
Cooked white rice, for serving

Steps:

  • Prepare the cabbage: In a medium bowl, whisk together ¼ cup water, the vinegar, sugar, and salt until the sugar and salt are dissolved. Add the cabbage and toss until well coated. Set aside.
  • Make the kkasseu sauce: In a small bowl, stir together the Worcestershire sauce, ketchup, and brown sugar until smooth. Set aside.
  • Make the chicken cutlets: Place the chicken breasts between two sheets of parchment paper or plastic wrap (or in a large resealable plastic bag) and pound them with a rolling pin until they are flat and uniformly ¼-inch thick. Season with salt and pepper on both sides.
  • On a large plate, stir together the mayonnaise and mustard. On another large plate, stir together the panko, curry powder, garlic powder, and some salt and pepper. Set the chicken on the first plate and smother both sides with the mayo-mustard mixture. Then transfer chicken to the second plate and press down, flipping and pressing down multiple times to ensure even panko stickage on both sides.
  • In a large skillet, heat 2 tablespoons of the oil over high heat until hot and shimmering. Add one of the chicken cutlets and fry until golden and crisp, about 2 minutes. Turn the chicken over and fry on the second side until the chicken is cooked through, 1 to 2 minutes. Transfer to a large plate, wipe the skillet out with a paper towel, and repeat with the remaining 2 tablespoons oil and the second cutlet.
  • To serve, divide the cutlets between two plates and pour the kkasseu sauce over each cutlet. Divide the quick-pickled cabbage between the two plates and add some white rice alongside

Are you tired of chicken coated with the usual flour and/or breadcrumbs? Well, try this and I think you'll enjoy it. Please feel free to add more or take away any amount of the seasonings you wish. If you don't want a real crispy coating, just dip in the egg, then the cornmeal mixture. For more even cooking, pound chicken until slightly thin. This will serve six or three with an appetite. 3/4 cup baking mix (like the Bisquick brand)
3/4 cup yellow cornmeal (I use the Martha White yellow cornmeal mix)
2 teaspoons garlic powder
1 1/2 teaspoons seasoning salt
1/2-3/4 teaspoon ground black pepper
1 1/2 teaspoons paprika
1 egg
3/4 cup milk
3 boneless skinless chicken breasts, halves cut in half (make six pieces)
canola oil (for frying)

Steps:

  • In a shallow dish (such as a deep dish pie plate) combine all dry ingredients, mixing well.
  • In another shallow dish, mix egg and milk until well blended.
  • Preheat oil in large skillet over medium to medium high heat.
  • Coat both sides of each chicken in dry mix.
  • Dip each piece in egg/milk mixture, coating both sides well.
  • Then coat each piece of chicken in dry mix again, making sure each piece is well coated.
  • Fry on both sides until coating is a golden brown, about 8 to 10 minute on each side; drain on paper towels.
  • Serve with your favorite sides and enjoy.

LEMONY CRISPY CHICKEN CUTLETS AND ROASTED TOMATO SALAD WITH PINE NUTS AND BLUE CHEESE



Lemony Crispy Chicken Cutlets and Roasted Tomato Salad with Pine Nuts and Blue Cheese image

6 plum tomatoes, cut in half lengthwise
Extra-virgin olive oil (EVOO), for drizzling
1/2 tablespoon fresh thyme leaves, chopped
2 garlic cloves, minced
Salt and freshly ground black pepper
1/4 cup pine nuts
1/2 cup all-purpose flour
2 cups Italian bread crumbs
Zest and juice of 1 lemon, plus 1 lemon cut into wedges
2 eggs
Vegetable oil, for shallow frying
2 pounds thin chicken cutlets
1 sack (12 ounces) baby spinach or 3/4 pound from bulk bins, washed and patted dry
3/4 cup crumbled blue cheese

Steps:

  • Preheat the oven to 375°F.
  • Toss the tomatoes with a little drizzle of EVOO and season with the thyme, garlic, salt, and pepper. Arrange the seasoned tomatoes on a rimmed cookie sheet and roast for 20 minutes.
  • Preheat a small skillet over medium heat. Add the pine nuts and toast, stirring and tossing frequently, until lightly golden. Or you can toast the pine nuts in the oven on a rimmed cookie sheet until golden all over, about 10 minutes. Reserve the nuts.
  • Place the flour in a shallow dish. In another shallow dish combine the bread crumbs and lemon zest. Beat the eggs in a separate shallow dish with a splash of water.
  • Heat a thin layer of vegetable oil in a large skillet over medium to medium-high heat. Season the cutlets with salt and pepper on both sides and turn lightly in the flour. Coat the cutlets in the egg mixture, then in the breading, and add to the hot oil. Cook the cutlets in a single layer, in 2 batches if necessary, for 3 or 4 minutes on each side, until the juices run clear and the breading is evenly browned.
  • Remove the roasted tomatoes from the oven and coarsely chop, then transfer to a salad bowl. Add the baby spinach, the lemon juice, a drizzle of EVOO, the reserved toasted pine nuts, salt, and pepper. Toss together and let the heat of the tomatoes slightly wilt the spinach.
  • Serve the chicken cutlets with a generous portion of the roasted tomato salad; sprinkle the salad with the crumbled blue cheese. Arrange lemon wedges alongside.

2 lbs chicken cutlets
salt and pepper
3 -4 tablespoons all-purpose flour
1 cup Italian breadcrumbs
1/3 cup grated parmigiano (I used romano)
1 teaspoon crushed red pepper flakes
2 teaspoons poultry seasoning
1 clove garlic
1 (3 ounce) jar pine nuts
1 lemon, zested
2 eggs, beaten
olive oil, for shallow frying (I used canola oil)
1 cup loosely packed basil leaves
1/2 cup loosely packed fresh parsley leaves
1/2 lemon, juice of
salt & fresh ground pepper
1/4 cup extra virgin olive oil (or more if needed)
1 roma tomatoes or 1 plum tomato, seeded and finely chopped for garnish

Steps:

  • Season cutlets with salt and pepper on both sides and turn lightly in flour.
  • Combine next 7 ingredients in food processor and pulse process the crumbs to chop up the spices, garlic and nuts and evenly distribute the flavors throughout the crumb and cheese nixture.
  • Transfer this mixture to a plate.
  • Beat eggs in separate shallow dish.
  • Heat a thin layer of oil in large skillet, just enough to coat the bottom of the pan, over medium to medium high heat.
  • Coat the cutlets in eggs then breading and then add to the hot oil.
  • Cook cutlets in a single layer, in two batches if necessary about 3-4 minutes on each side.
  • Return food processor bowl to base and add basil, parsley and lemon juice.
  • Add a little salt and pepper.
  • Turn processor on and stream in oil until a loose paste forms.
  • Serve chicken cutlets witha generous amount of basil and parsley sauce poured over the cutlets.
  • Garnish the chicken with finely chopped Roma tomato.

4 small boneless, skinless chicken breasts
Salt and freshly ground black pepper
1/4 cup all-purpose flour
1/4 cup extra virgin olive oil, divided
3 tablespoons unsalted butter, divided
2 shallots, thinly sliced
2 USA Pears, peeled, cored, and cut in 1/2-inch dice
Juice of 1 lemon
1 teaspoon Dijon mustard
3/4 cup chicken or vegetable stock
4 teaspoons finely chopped fresh thyme (about 4 sprigs)
2 tablespoons coarsely chopped flat leaf parsley
2 cloves garlic, thinly sliced
1 1/4 pounds fresh spinach, trimmed, washed, and dried

Steps:

  • Place each chicken breast between 2 sheets of plastic wrap. Using a heavy skillet or mallet, pound the breasts to a thickness of 1/4-inch. Season both sides with salt and freshly ground black pepper and lightly coat with a dusting of flour.
  • Place 1 tablespoon each of olive oil and butter in a large skillet over medium high heat. When the butter begins to foam, add two of the chicken breasts and saut¿n one side until golden brown, 2 to 3 minutes. Turn the chicken breasts over and saut¿he other side until cooked through, 2 to 3 minutes. Transfer the chicken to a plate, raise the heat to medium high and repeat with another tablespoon each of olive oil and butter and the other 2 chicken breasts.
  • Add the shallot and pears to the pan and cook over medium-high heat until lightly translucent and golden, about 3 minutes. Add the lemon juice, mustard, chicken stock, and any juices on the plate and deglaze the pan, scraping any brown bits on the bottom with a wooden spoon. Simmer until the sauce reduces by half, about 4 minutes. Add the chopped thyme and parsley, and gradually stir in the remaining tablespoon of butter until just melted.
  • For the spinach, add the remaining 2 tablespoons of olive oil and the sliced garlic to a large saute pan. Warm the oil over high heat. When it is very hot, and before the garlic has any color, add the spinach and cook, stirring constantly, for about 2 minutes or until the spinach is bright green and slightly wilted. Season to taste with salt and freshly ground black pepper.
  • To serve, divide the spinach between four plates, placing a mound on each. Top the spinach with a chicken cutlet and spoon the shallot and pear sauce over top.

4 Chicken Cutlets
3 Cups Stale Bread Cubes
1 Teaspoon Grated Lemon Zest
1 Teaspoon Chopped Red Chile Pepper (Optional)
3 Tablespoons Chopped Fresh Parsley
1/2 Cup Grated Parmesan Cheese
1/4 Cup Pine Nuts
Sea Salt
Cracked Black Pepper
2 Large Eggs
2 Tablespoons Butter
2 Tablespoons Olive Oil
4 Slices Tallegio Cheese (About 12 Ounces)
4 Slices Prosciutto
For The Sauce:
4 Cups Ripe Cherry Tomatoes, Halved
2 Cloves Garlic, Minced
2 Tablespoons Olive Oil
3 Tablespoons Chopped Fresh Basil
Sea Salt
Cracked Black Pepper

Steps:

  • Place the bread cubes, lemon zest, chile pepper, parsley, grated cheese, sea salt and pepper in the food processor. Pulse until finely blended. Add the pine nuts and pulse just until the nuts are coarsely chopped. Beat the eggs and dip the cutlets first into the eggs, then the breadcrumbs and press with your fingertips to help the crumbs adhere. Refrigerate the chicken for one hour to allow the crumb coating to set. To prepare the sauce, heat the oil in a small saucepan until hot. Add the garlic and cook just until it is sizzling. Add the cherry tomatoes, salt, pepper, and basil, and cook for about 10 minutes on low heat just until the tomatoes begin to soften and break down. Remove from the heat and set aside. Preheat the oven to 400 degrees F. Place the butter and olive oil in a flat casserole dish or pan large enough to hold all of the cutlets and place the cutlets on top. Cook for 10 minutes until the cutlets are browned on one side and turn. Cook an additional 10 minutes or until the cutlets are cooked through. Place a slice of the cheese on top of each cutlet, and then return to the oven just until the cheese melts. Top with the prosciutto, and serve on individual plates with a scoop of the cherry tomato sauce on each plate.
