CRISPY ALMOND BUTTER THINS (COOKIES)

Crispy, buttery and so delicious! -- plan ahead the dough needs to chill for a minimum of 3 hours or up to 3 days --- the success of this cookie will depend on the quality of butter that you use so purchase the best! Since the dough is very thick I suggest to use a stand mixer for mixing --- for *CHRISTMAS* coat in coloured sugar, also haven't tried it as yet but I plan on adding in some finely chopped candied maraschino cherries or dried fruit to the cookie batter for Christmas, so you might want to give that a try! --- servings is only estimated.

2 cups butter, room temperature (1-pound butter, no substitutes please!)
2 cups white sugar (for a sweeter cookie increase sugar slightly)
2 -3 teaspoons almond extract
2 large egg yolks
1/2 teaspoon salt
2 cups all-purpose flour
sugar, for coating (optional)

Steps:

  • Using a heavy duty stand mixer cream butter with sugar and almond extract on medium speed until well combined (about 5 minutes or until no sugar granules should remain).
  • Beat in egg yolks until combined.
  • In a small bowl combine the flour with salt until combined; add to the creamed mixture and mix on low speed until combined.
  • Remove to a surface and work the dough using with clean hands until smooth.
  • Divide the dough evenly in half.
  • Shape into two logs, wrap in waxed paper or plastic wrap and chill for minimum 3 hours or until very hard.
  • Set oven to 350°F.
  • Set oven rack to second-lowest position.
  • Unwrap the dough log then slice into about 1/4-inch slices (the thinner that you slice these the crispier they will be when they bake).
  • Place onto lightly greased baking sheet.
  • Bake until lightly browned around the edges (about 12-15 minutes, the cookies will not be crispy if you under bake them).
  • Cool slightly on baking sheet (the cookies will harden even more upon sitting) then coat in sugar.

1-1/2 cups confectioners' sugar
2 egg whites
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1/2 teaspoon baking powder

Steps:

  • In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in egg whites and vanilla. Combine the flour, baking powder and baking soda; gradually add to the creamed mixture and mix well. , Roll into 1-1/2-in. balls, then roll in sugar. Place 2 in. apart on greased baking sheets. Flatten with a fork. Bake at 350° for 12-14 minutes or until edges are lightly browned. Remove to wire racks to cool.

1 c unsalted butter
1 1/2 c peanut butter, creamy or crunchy
1 c sugar
1 c light brown sugar
2 large eggs, room temp.
2 1/2 c sifted, all-purpose flour
2 tsp baking soda
1/2 tsp salt

Steps:

  • 1. OVEN:Preheat oven to 350°F.
  • 2. BATTER:In a large mixer bowl add the butter and both the regular and brown sugars.
  • 3. BEATING:Beat the butter and sugars together on med/hight speed, until light and creamy, about 3 mins.
  • 4. Scarp the sides of the bowl before adding the eggs... making sure there is no remaining sugar on the bottom of bowl.
  • 5. Add eggs, one at a time.. .beating well after each addition.
  • 6. Add the peanut butter, beating on medium to high speed for 30 seconds, or until well incorporated.
  • 7. In a large bowl, sift the flour, baking soda and salt together.
  • 8. Slowly, add the flour mixture a little at a time to the creamed mixture.
  • 9. Gently blend ingredients only to combine. Do not over mix or cookies will be tough.
  • 10. SHAPING THE DOUGH:For cookies, spoon dough by the tablespoon; roll into balls. NOTE: Sometimes I roll cookie dough into sugar before placing on cookie sheet.
  • 11. Place cookie balls 2 inches apart on parchment-lined cookie sheets.
  • 12. Using a fork, press balls in a crisscross pattern, flattening each cookie to a 1/2-inch thickness.
  • 13. AND YES... Sometimes, I tend to get side tracked, and end up putting the peanut butter cookies in the oven BEFORE flattening with a fork!
  • 14. BAKING: Place cookies in the preheat oven and bake the cookies until lightly golden, 15-17 minutes... Time varies on oven actual temp.
  • 15. Remove the peanut butter cookies the oven. Transferthe peanut butter cookies to a wire rack. Cool cookies completely.
  • 16. STORING COOKIES:After cookies have completely cooled, wrap tightly in plastic wrap and place in airtight container or freezer-weight resealable plastic bag. Place in freezer. Cookies can be frozen for up to 1 month. Bring cookies to room temperature before serving. Yields: 6 Dozen Cookies!!

1 c butter flavored crisco shortening
1 c sugar
1 c firmly packed brown sugar
1 tsp vanilla extract (just pour it in)
2 eggs, beaten
1 c jif peanut butter (i put an extra hunk in)
2 c all-purpose flour
2 tsp baking soda
1 tsp salt

Steps:

  • 1. Preheat oven to 350°
  • 2. I use a Kitchen Aid stand mixer & leave it running the whole time I'm putting this together.
  • 3. Cream shortening, sugars, and vanilla extract.
  • 4. Add beaten eggs, and beat thoroughly. (Just throw them in, don't beat first)
  • 5. Stir in peanut butter.
  • 6. Combine dry ingredients; stir into creamed mixture.
  • 7. Using big scoop, place 6 level scoops on ungreased air bake cookie sheets.
  • 8. Press with back of fork dipped in milk to make a crisscross design. Original recipe calls for flour but milk makes it crisper. Refer to picture above. It shows one that is in the ball & the others show how much to flatten.
  • 9. Bake at 350° for exactly 14 minutes. Set your timer.
  • 10. Remove from oven & let cool on cookie sheet for at least 5 minutes. Then transfer to wire cooling rack until completely cool. I stack these standing up in large air tight container to keep them from weighing heavy on each other.

1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup corn oil margarine
1 cup peanut butter
1 cup sugar
1 cup firmly packed brown sugar
2 eggs, beaten
1 teaspoon vanilla

Steps:

  • Sift together flour, baking powder, baking soda and salt.
  • In large bowl with mixer at medium speed, beat margarine and peanut butter until smooth.
  • Beat in sugars until blended.
  • Beat in eggs and vanilla.
  • Add flour mixture and beat well.
  • If necessary, chill dough.
  • Shape into 1 inch balls.
  • Roll into sugar.
  • Place on ungreased cookie sheet, 2 inches apart.
  • Flatten with fork, making criss cross pattern.
  • Bake 350*.
  • 12 minutes or until lightly browned.
  • Peanut Butter Crackles: Follow basic recipe.
  • Roll into sugar before placing on cookie sheet.
  • Do not flatten.
  • Bake 15- 18 minutes.
  • Immediately press chocolate candy kiss firmly into top of each cookie.
  • Cookie will crack around edges.

1 cup peanut butter

2 1/4 cups crisp rice cereal
1 cup quick-cooking oats
3/4 cup chopped peanuts

Steps:

  • Set oven 350°.
  • Prepare a lightly greased cookie sheet.
  • In a large mixing bowl cream together the butter, shortening, peanut butter and vanilla until well blended.
  • Add in egg whites and beat until fluffy (about 5 minutes,).
  • In a small bowl mix together flour with baking powder and baking soda.
  • In another bowl mix together rice cereal with oats and chopped peanuts.
  • Add/mix in the flour mixture into the creamed mixture until well combined.
  • Mix in the rice cereal mixture.
  • Place in refrigerator until well chilled (about 3 hours or up to 24 hours).
  • Set oven to 350°F.
  • Drop by by rounded tablespoonfuls onto baking sheet about 2" apart.
  • Flatten with a fork forming a crisscross pattern.
  • Bake for about 7-8 minutes.
  • Transfer to wire rack (these will crisp up more upon standing).

  • 1. Crush KELLOGG'S PRODUCT 19 cereal to measure 1 1/2 cups. Set aside.2. In medium mixing bowl, stir together flour, baking soda and salt. Set aside.3. In large mixing bowl, beat margarine, peanut butter, granulated sugar and brown sugar until light and fluffy. Add eggs and vanilla. Beat well. Add flour mixture and crushed cereal. Crispy, crunchy Brown Butter Cinnamon Cookies have lovely, sophisticated flavor in a simple cookie. Bonus points for being made with basic baking ingredients!

Number Of Ingredients 12

1 cup (226g) unsalted butter
2 & 2/3 cups (320g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup (150g) firmly packed light brown sugar
1/2 cup (100g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup chopped nuts (pecans, hazelnuts, walnuts, etc.)
about 1/4 cup cinnamon-sugar*

Steps:

  • Place the butter in a medium saucepan. Cook over medium heat, stirring frequently. Once the butter melts and begins to foam, continue to cook until brown specks begin to appear beneath the foam. The butter will have a nutty aroma. Remove from the heat and transfer to a large mixing bowl. Allow to cool about 10 minutes, or until warm to the touch but not hot.
  • Whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  • Using an electric mixer on medium speed, mix the cooled butter, brown sugar, and sugar until thoroughly combined. Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla.
  • Reduce mixer speed to low. Gradually add the flour mixture, mixing just until combined or a few streaks of flour remain. Stir in the nuts. (The dough will be thick.)
  • Cover and refrigerate the dough for 30 minutes.
  • Preheat the oven to 350°F. Line baking sheets with parchment paper or silicone liners.
  • Using a tablespoonful of dough at a time, form the dough into balls. Roll each ball of dough in cinnamon-sugar. Place the cookies on the prepared pans, leaving about 2 inches between cookies.
  • Bake, one pan at a time, 14 to 16 minutes or until the edges are lightly browned.
  • Cool on the pans on a wire rack for 5 minutes. Then transfer the cookies from the pan to a wire rack to cool completely.
