CRISPY SOUTHERN FRIED CATFISH

Simple is best, and this Southern Fried Catfish is no exception. The easy dinner recipe only requires a handful of pantry staples and it's ready about 20 minutes!!!

Number Of Ingredients 9

4 catfish fillets ((about 3-4 ounces each))
1 cup yellow cornmeal
1 tablespoon seasoned salt ((I use Lawry's brand))
¼ teaspoon pepper
¼ teaspoon garlic powder
1 cup milk
3 tablespoons vegetable oil
3 tablespoons butter
Optional garnish: lemon wedges and fresh parsley

Steps:

  • Combine cornmeal, seasoned salt, pepper, and garlic powder in a shallow dish.
  • Pour milk into a separate dish.
  • Heat oil and butter in a large skillet over medium heat.
  • Dip a catfish fillet in the milk, and shake off any excess.
  • Transfer milk-soaked fish to the cornmeal mixture and gently roll to coat on both sides.
  • Repeat with remaining fillets.
  • Place fish in the hot skillet and cook until golden brown on each side (about 5-7 minutes per side). The fish will flake easily with a fork when it's done.
  • Depending on the size of your skillet, you may need to cook the fish in batches. Don't overcrowd the skillet! Feel free to wipe out the pan and use additional butter/oil, as necessary, for subsequent batches.
  • Drain fish on paper towels.
  • Serve warm, garnished with chopped fresh parsley and a lemon wedge, if desired.

3/4 cup finely crushed saltines (about 22 crackers)
1 teaspoon seasoned salt
1/2 teaspoon celery salt
1/2 teaspoon garlic salt
1/3 cup butter, melted
4 catfish fillets (about 8 ounces each)

Steps:

  • In a shallow dish, combine the first four ingredients. Pat fillets dry; dip in butter, then coat with crumb mixture. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fillets, covered, over medium-hot heat or broil 4 in. from the heat for 5 minutes on each side or until fish flakes easily with a fork.

1 teaspoon dried thyme
1 teaspoon table salt

1/4 cup skim milk
2 spray(s) cooking spray
1 lb catfish, fillet(s)

  • . * Preheat oven to 425°F Coat a large nonstick baking sheet with cooking spray.
  • * In a shallow soup bowl, combine cornmeal, paprika, thyme, salt, celery seeds, onion powder, garlic powder and pepper. Pour milk into another shallow soup bowl.
  • * Dredge fillets first in milk and then in cornmeal mixture, coating both sides and pressing cornmeal mixture gently to adhere. Place coated fillets on baking sheet and lightly spray each with cooking spray.

½ cup buttermilk
½ cup water
salt and pepper, to taste
1 pound catfish fillets, cut in strips
1 ½ cups fine cornmeal
½ cup all-purpose flour
1 teaspoon seafood seasoning, such as Old Bay™
1 quart vegetable oil for deep frying

Steps:

  • In a small bowl, mix buttermilk, water, salt, and pepper. Pour mixture into a flat pan large enough to hold the fillets. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate.
  • In a 2 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly.
  • Heat oil in deep fryer to 365 degrees F (185 degrees C).
  • Deep fry fillets until golden brown, about 3 minutes. Avoid overcrowding so fillets have room to brown properly. Fish should be slightly crisp outside, and moist and flaky inside. Drain on paper towels.

nonstick cooking spray
8 (5 -6 ounce) catfish fillets
1 tablespoon Old Bay Seasoning
1/2 cup buttermilk
1 large egg
1 cup dried breadcrumbs, seasoned

Steps:

  • Position a rack in the top third of the oven and preheat to 400 degrees F.
  • Spray a large baking sheet with cooking spray.
  • Season fish with Old Bay seasoning.
  • In a shallow dish, whisk the buttermilk and egg to combine.
  • Dip the fillets in the buttermilk, then coat on both sides with the breadcrumbs.
  • Arrange in single layer on the baking sheet.
  • Spray the fillets with the cooking oil and bake for 8 minutes.

2 egg whites
6 tablespoons cornmeal
1/4 cup grated parmesan cheese
2 tablespoons all-purpose flour
1/4 teaspoon ground red pepper
1/8 teaspoon salt
4 -6 ounces catfish fillets
cooking spray
lemon wedge

Steps:

  • Preheat oven to 425°F.
  • Combine dressing and egg whites, whisk well.
  • Combine cornmeal, parmesan, flour, pepper and salt in shallow dish.
  • Pat fish dry, dip in egg mixture and dredge in cornmeal mixture.
  • Place fish on a baking sheet coated with cooking spray.
  • Bake 8-12 minutes each side until lightly browned and fish flakes easily.
  • Serve with lemon wedges.
