2 Tbsp olive oil ($0.22)
2 cloves garlic ($0.16)
1/2 tsp dried oregano ($0.05)
1/2 tsp dried basil ($0.05)
1/4 tsp dried thyme ($0.03)
1/4 tsp dried rosemary ($0.03)
1 pinch crushed red pepper ($0.02)
Freshly cracked black pepper ($0.05)
3 oz. tomato paste (about 1/4 cup) ($0.33)
1/2 tsp brown sugar ($0.02)
1/4 tsp salt ($0.02)
1 yellow onion ($0.25)
1 15oz. can fire roasted diced tomatoes ($1.50)
1 15oz. can cannellini beans ($1.29)
1/4 lb. frozen chopped spinach ($0.43)
1 cup uncooked long grain white rice ($0.48)
1.5 cups vegetable broth* ($0.19)

Steps:

  • Place the spinach in a bowl and allow it to thaw slightly as you prepare the beginning of the recipe.
  • Dice the onion and mince the garlic. Set the onion aside. Add the olive oil, minced garlic, oregano, basil, thyme, rosemary, a pinch of crushed red pepper, and a little freshly cracked black pepper (about 10 cranks of a pepper mill) to a heavy bottomed pot or deep skillet. Sauté the garlic and spices over medium-low heat for about one minute.
  • Add the tomato paste and brown sugar to the pot and continue to sauté for 2-3 minutes, or until the tomato paste takes on a deep burgundy color. Add the onion and salt and continue to sauté for a few minutes more, or until the onions become soft and transparent.
  • Meanwhile, drain and rinse the cannellini beans in a colander. Add the diced tomatoes (with juices), cannellini beans, spinach, and uncooked rice to the pot. Pour in the vegetable broth and stir briefly to combine the ingredients.
  • Place a lid on the pot and turn the heat up to medium-high. Allow the contents to come up to a boil. Once it reaches a boil, turn the heat down to the lowest setting that allows the liquid to maintain a simmer. Let the pot simmer for 15-20 minutes, or until most of the liquid is absorbed (there may still be some around the edges. Turn the heat off and let the pot rest, undisturbed, for 10 additional minutes.
  • Finally, fluff the contents of the pot with a fork, making sure to not stir vigorously. Serve immediately.

2 tbsp olive oil
1/2 lb sliced smoked sausage (preferably andouille)
1 medium green pepper, thinly sliced
1 medium red pepper, thinly sliced
1 medium onion, diced
2 cloves garlic, minced
1 1/2 cups long-grain rice
1 can (398ml / 16 oz) diced tomatoes
1 3/4 cups chicken broth
2 tsp Creole seasoning
1 bay leaf
1/2 tsp salt

Steps:

  • In a large deep skillet or wide heavy-bottomed saucepan set over medium-high heat, saute the sausage in olive oil until browned on both sides, about 5 minutes. Add the peppers and onion, and continue cooking until the onions are soft and translucent, about 5 minutes longer. Add the garlic and cook until fragrant, about 1 minute.
  • Stir in the rice, tomatoes, chicken broth, seasoning, bay leaf, and salt. Bring to a simmer, then reduce heat to low and cook, covered, for 15 minutes or until rice has is cooked through and has absorbed most of the liquid. Serve immediately.

1 small green pepper, chopped

1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
2 tablespoons savory herb with garlic soup mix
1 teaspoon Worcestershire sauce
1 bay leaf
1/8 teaspoon cayenne pepper
1 pound cooked medium shrimp, peeled and deveined
2 cups hot cooked rice

Steps:

  • In a large skillet, saute the celery, onion and green pepper in oil until tender. Add garlic; cook 1 minute longer. Add the tomatoes, soup mix, Worcestershire sauce, bay leaf and cayenne. Bring to a boil. Reduce heat; cover and simmer for 15 minutes., Add shrimp; heat through. Discard bay leaf. Serve with rice. Freeze option: Stir in shrimp but do not heat through. Cool mixture; freeze in freezer containers for up to 3 months. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little water if necessary. Serve with rice.

1 cup raw rice
4 cups water
2 tablespoons butter
1/2 cup finely chopped onion
1/2 cup ripe red tomato cut into 1/4-inch dice
Salt to taste if desired
Freshly ground pepper to taste
2 tablespoons finely chopped fresh basil
1 tablespoon freshly squeezed lemon juice

Steps:

  • Rinse rice and drain well.
  • Bring the water to a boil in a saucepan. Add rice. Cook at full rolling boil exactly 17 minutes. Drain immediately and return rice to saucepan.
