This will also work well using cooked cubed chicken, make, the complete casserole may be assembled and refrigerated up to 24 hours in advance, do not add in any extra salt to this recipe as the canned soups already have enough sodium content, low-sodium soups may be used if desired.

8 ounces dry medium egg noodles
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1 (10 3/4 ounce) can cream of chicken soup, undiluted
1 cup reduced-fat sour cream
2 tablespoons melted butter
1/2 teaspoon garlic powder (can use more)
1 pinch cayenne pepper (optional or adjust to taste)
1/2 cup shredded cheddar cheese
1 (10 ounce) can sliced mushrooms, well drained (squeeze out excess moisture with hands)
1 small onion, finely chopped (you may omit if desired)
1 celery rib, finely diced
4 cups cooked cubed turkey (or chicken, can use more or less)
1/4 teaspoon fresh ground black pepper (or to taste)
1 1/2 cups crushed unsalted butter-flavored crackers (such as Ritz crackers)
1/4 cup melted butter

Steps:

  • Grease a 2-quart casserole dish (can use an 11 x 7-inch baking pan).
  • In a bowl combine both soups with sour cream, melted butter, garlic powder and cayenne pepper; whisk until smooth.
  • Mix in cheddar cheese, mushrooms, onion, celery, cubed turkey and black pepper; set aside.
  • Cook the egg noodles in boiling water until tender; drain transfer to the bowl with with soup mixture; toss to combine.
  • Transfer/spread to the prepared baking dish (at this point you may cover and refrigerate for up to 24 hours, remove from refrigerator 30 minutes prior to baking).
  • In a small bowl combine the crushed cracker crumbs with melted butter, then sprinkle evenly on top of the casserole.
  • Bake in a preheated 350 degree F oven for 30 minutes or until bubbly and browned on top.

½ cup cream cheese
½ cup sour cream
1 (16 ounce) package frozen spinach, thawed
1 (10.5 ounce) can condensed cream of celery soup
salt and ground black pepper to taste
2 cups leftover prepared stuffing

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine turkey, cream cheese, sour cream, spinach, condensed soup, salt, and pepper in a pan over medium heat. Cook, stirring frequently, until hot, 7 to 8 minutes. Transfer mixture to a 3 1/2-quart baking dish and top with leftover stuffing.
  • Cover and bake until heated through, about 30 minutes.

1 can(s) progresso creamy parmesan basil recipe starter
2 lb ground turkey
1 lb frozen broccoli & cauliflower pieces
6 oz dry egg noodles
1 pkg lipton beefy onion soup mix
1/2 c parmesan cheese
1/2 c panko bread crumbs
1/2 c half and half
1 c italian blend shredded cheese
1 tsp garlic powder
1/2 tsp black pepper

Steps:

  • 1. Pre-heat oven to 375. In a large mixing bowl, combine ground turkey and soup mix, black pepper and garlic powder. Pre-heat skillet with 1 tablespoon of olive oil. Place turkey mixture in skillet and cook until no longer pink.
  • 2. Meanwhile, cook egg noodles to package directions. Place frozen broccoli and cauliflower in the bottom of an ungreased 9 X 13 pan. Mix in the cooked turkey mixture with the frozen broccoli and cauliflower.
  • 3. Drain egg noodles and mix with turkey and vegetables. In a medium saucepan, combine Progresso Creamy Parmesan Basil Recipe Starter with the Half & Half and heat through. Pour soup over the noodle, turkey, vegetable mixture and stir together.
  • 4. Top casserole with the shredded Italian Blend cheese, then sprinkle with the Parmesan cheese and lastly with the Panko bread crumbs.
  • 5. Bake uncovered for approximately 30 minutes or until golden brown on top. Do not over cook!
  • 6. Let rest for 5 minutes and serve. Makes 8 generous portions.

1 can (8 ounces) sliced water chestnuts, drained
1 jar (4 ounces) sliced mushrooms, drained

If you're short on time, cook in skillet on low until bubbly, add cheese until melted. It tastes better the next day and freezes well. Serve with colorful vegetables or a green salad.

3 cups rice, prepared
1 lb ground turkey (or chicken)
1 tablespoon olive oil (DIVIDED)
1 (10 3/4 ounce) can mushroom soup (use chicken if you don't like mushrooms)
1 cup sour cream
1/2 cup mayonnaise
1/4-1/2 teaspoon ground pepper
1 -2 tablespoon dried parsley
2 -4 tablespoons Worcestershire sauce
4 -8 dashes hot sauce
1/4 cup sherry wine or 1/4 cup red wine
1/2-1 cup onion, chopped
1/4-1/2 cup green bell peppers or 1/4-1/2 cup red bell pepper, chopped
1 -2 teaspoon garlic, minced
1 -1 1/2 cup cheddar cheese, grated

Steps:

  • Prepare rice as instructed on package.
  • In skillet, brown turkey in 1/2 tablespoon of olive oil, drizzling it evenly over turkey. Your meat shouldn't be chunky (small pieces). Place in large mixing bowl.
  • In same skillet, add remaining olive oil, sherry and sauté onion, green pepper, and garlic until tender.
  • In sm-medium bowl, mix together sour cream, mayo, ground pepper, parsley, Worcestershire sauce and hot sauce.
  • Combine soup mixture into large bowl with meat mixture and mix well.
  • Stir rice into meat mixture until covered well (don't overwork the rice - prevents mushy results).
  • Spray oil over an oblong casserole dish and pour mixture evenly into dish.
  • Sprinkle grated cheese evenly over top of mixture.
  • Bake COVERED for 40-45 minutes until bubbly.
  • Before adding cheese, if you think your mixture looks a little dry, evenly pour 3-6 tablespoons of cream or milk over the top. Fork a few tiny openings for cream to work its way down into casserole dish.

1-1/2 stick melted butter
2 c cooked, cubed or shredded left-over turkey
1 8 oz can water chestnuts, drained, chopped
1 10.75 oz can fat-free cream of mushroom soup
1 10.75 oz can fat-free cream of chicken soup
1 c lite sour cream
1/2 c water
1 tsp minced garlic
1 tsp dried basil
1/8 tsp pepper

Steps:

  • 1. Heat oven to 325. Spray a 9 x 13" casserole dish w/ cooking spray. In lg bowl, combine crackers and butter, mix well. Set aside 1/4 cup crumb mix.
  • 2. Spoon remaining cracker crumb mix into bottom of casserole dish. Evenly spread turkey over crumbs. Sprinkle turkey w/ water chestnuts.
  • 3. In another lg bowl, combine soups, sour cream, water, garlic, basil and pepper. Mix well. Pour over turkey mix. Sprinkle w/ reserved cracker crumbs. Bake 1 hr, or until golden and bubbly.
