HARD TIMES CREAMED TUNA
Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

Steps:
- Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
- Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
- Ladle tuna mixture over toasted bread to serve.

TUNA-CHEESE TWIST
This is a simple and tasty recipe to prepare. As being a single working mom with two teenage kids, I find this meal to never leave any leftovers.

Steps:
- Heat oven to 425 degrees.
- Lightly grease cookie sheet.
- Mix tuna, olives, celery, green pepper, onion and 1/4 cup of the soup.
- Mix baking mix and 1/2 cup cold water until soft dough forms: beat vigorously 20 strokes.
- Gently smooth dough into ball on floured cloth-covered board.
- Knead 5 times.
- Roll dough into rectangle, 14 x 11"; place on cookie sheet.
- Spoon tuna mixture lengthwise down center of rectangle; sprinkle with 1 cup of the cheese.
- Make cuts, 2 1/2" long, at 1" intervals on 14" sides of rectangle.
- Fold strips over filling.
- Mix egg and 1 tbsp water; brush over dough.
- Bake until light brown- 15 to 20 minutes.
- Mix remaining soup, remaining 1/2 cup cheese and the milk over medium heat, stirring occasionally until hot.
- Serve over slices of twist.

old recipe from darlene kossman i dont know that the vinegar adds much start out with a teaspoon ,and go from there .and some people dont like as much mayo so go with what you like

- add tuna

- toss to coat well

CREAMY TUNA TART
As my DS does not like Tuna, I take any chance to try something different when he is not home and usually want something that is quick and so easy. Ahh well, when the kids are away....lol ;-) Found this recipe from Kraft, and it works quite well with salad & I think would work really well in winter with vegetables...... although I think a nice salsa or sauce would go really well with it also. Which I will add next time.

Steps:
- Pre-heat youtr oven to 200ºC. Combine the tuna, cream cheese, corn, tasty cheese, spring onions, parsley and pepper. Mix until well combined.
- Lay one puff pastry sheet on benchtop. Spread tuna mixture over one half of the pastry, leaving a 2cm border from the edge. Using a sharp knife, cut 6 x 4cm slits in the other side of pastry. Fold over filling and seal at edges. Repeat with remaining pastry and filling for another slice.
- Brush pastry with milk and bake for 20 minutes, or until golden.
- Cut into slices to serve with green salad and or vegatables.
