Creamy Tortellini Salad with Chicken, Bacon, and Ranch Dressing image

When I moved to Oklahoma, I discovered a pizza called "chicken bacon ranch" and this pasta salad is a nod to the flavors in the pizza. If desired, marinate chicken in ranch dressing, and grill chicken to bump up the flavor.

1 (9 ounce) package refrigerated cheese tortellini
¼ cup ranch dressing
1 tablespoon milk
8 ounces cubed, cooked chicken
2 ½ ounces fresh mozzarella, diced
⅓ cup chopped cooked bacon
2 tablespoons chopped green onions
1 tablespoon chopped fresh flat-leaf parsley
salt and freshly ground black pepper to taste (optional)

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, about 3 minutes. Run tortellini under cold water and drain. Store in the refrigerator until chilled, at least 30 minutes.
  • Stir ranch dressing and milk together in a large bowl. Add chilled pasta, cooked chicken, mozzarella, bacon, green onions, and parsley.
  • Toss to combine. Season with salt and pepper if desired.

from William Sonoma. We had this at an engagement party recently and I was so happy to be told where the recipe is from! If you want to use dried herbs to taste, go ahead and just use your best judgement and use them to your taste.

Number Of Ingredients 12

3 ounces cream cheese, softened
1/2 cup plain yogurt
1 tablespoon finely chopped fresh dill
1 tablespoon finely chopped fresh chives
1 small garlic clove, finely chopped
salt & freshly ground black pepper, to taste
2 teaspoons salt, plus more, to taste
1 large carrot, peeled
9 ounces fresh cheese-filled tortellini (about 2 cups)
1/4 lb green beans, ends trimmed, cut into 1-inch pieces
2 tablespoons milk
fresh ground pepper, to taste

Steps:

  • Set a large pot of water on to boil according to package directions.
  • Next, make the dressing, in a small bowl, using a wooden spoon, mix together the cream cheese, yogurt, dill, chives and garlic until smooth. Season with salt and pepper. Set the dressing aside.
  • Next, add pasta to water when it is boiling and cook according to package directions.
  • Meanwhile, shred the carrot set the shredded carrot aside.
  • When pasta has about 3 minutes to go add the green beans to the pot.
  • When the pasta has about 1 minute to go add the carrot to the pot.
  • Drain and Rinse the pasta and vegetables with cold water and drain well again.
  • Dump the drained pasta and vegetables into a serving bowl. Add the dressing and the milk. Gently toss the salad with the wooden spoon until well blended. Season with salt and pepper. Serve warm or chilled.

This can be adjusted according to amounts or type herbs you prefer.You can substitute chicken for the shrimp.Reduce fat by using low fat mayo and sour cream. Serve this one with a green salad and a glass of your favorite white wine.Cook time is prep and chill time

1/2 lb peeled & cooked cocktail shrimp
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh chives
1/2 teaspoon lemon pepper
2 tablespoons fresh grated fresh grated style parmesan cheese
garlic powder
salt

Steps:

  • Cook tortellini according to package directions. Drain and set aside to cool.
  • Mix together sour cream, mayonnaise, basil and chives. Stir in lemon pepper and garlic powder and salt.
  • Add sour cream dressing mixture to the cooked tortellini and shrimp. Gently toss.

Creamy Salsa Dressing
3/4 cup smooth salsa (medium for more of a kick)
1/2 cup sour cream (may sub.plain Greek yogurt)
1/4 cup mayonnaise
juice from 1 lime (2 tablespoons)
1 jalapeno, seeded, deveined and roughly chopped
2 cloves garlic, peeled
1/3 cup loosely packed cilantro
1/2 teaspoon sugar**

1 1 red bell pepper, chopped
1 cup cherry or grape tomatoes, cut in half
1 cup black beans, rinsed and drained
1/2 of a small red onion, chopped
1 large Avocado, chopped
6 slices thick cut bacon, crumbled ((more or less to taste))
1/2 cup finely grated Pepper Jack cheese (or more to taste)
3/4 cup salsa ((medium for more of a kick))
1/2 cup sour cream ((may sub.plain Greek yogurt))
1/4 cup mayonnaise
juice from 1 lime ((2 tablespoons))
1 jalapeno (seeded, deveined and roughly chopped)
2 garlic cloves, peeled
1/3 cup loosely packed cilantro
1/2 tsp EACH salt, ground cumin, sugar**

Steps:

  • Add all of the Creamy Salsa Dressing ingredients to a blender or food processor and "chop" then puree until smooth, scraping sides down as needed. Add milk, a tablespoon at a time, to reach desired consistency.
  • Cook Tortellini in generously salted water just until al dente according to package directions (do NOT overcook - we don't want soggy tortellini). Rinse tortellini in cool water and add to a large serving bowl. Add. corn, bell pepper, tomatoes, black beans, red onion and half of the dressing. Gently toss. Cover and chill in the refrigerator for at least one hour.
  • When ready to serve, add avocado, bacon, cheese and the desired amount of dressing to the salad (you may not use all it) and gently toss to combine. Add additional dressing if needed so its nice and creamy. Taste and season with salt and pepper and hot sauce if desired.

The orginial recipe called for GOOD SEASONS Italian Salad Dressing & Recipe Mix but the reviews suggested Ranch Dressing so I will try it with that. I think this would also be good with some shredded pre-cooked chicken as a main dish.
