2 hearts romaine lettuce
2 cups jarred citrus salad of orange and grapefruit sections, drained - fresh oranges and grapefruits may also be used but to supreme fruit (method below*) takes extra time
2 tablespoons marmalade
2 tablespoons white wine or cider vinegar
1/3 cup extra-virgin olive oil
Salt and pepper
2 tablespoons chopped or snipped chives

Steps:

  • Chop lettuce. Arrange lettuce on platter and top with pieces of grapefruit and orange.
  • *To supreme fresh oranges and/or grapefruits instead, cut off ends then remove skin in strips working all the way around the fruit from top to bottom. Cut along the side of the membrane to remove the sections of the citrus fruit.
  • Combine marmalade with 2 splashes of vinegar and stream in extra-virgin olive oil. Pour dressing over the salad and season with salt and pepper. Garnish platter with chopped or snipped chives.

1 tsp. lime zest
1 Tbsp. slivered almonds, toasted

Steps:

  • Combine fruit.
  • Spoon into 2 serving bowls.

1 tablespoon orange juice
2 teaspoons honey
1 1/2 teaspoons champagne vinegar
1 teaspoon Dijon mustard
6 to 7 oranges, preferably a mix of regular and blood oranges (or just regular oranges)
4 limes
12 radishes, sliced
Handful fresh mint leaves

Steps:

  • For the dressing: Add the oil, orange juice, honey, vinegar and mustard to a mason jar and shake to mix.
  • For the citrus salad: Carefully cut off the peel of the oranges and limes to remove the pith, then slice.
  • Layer the orange and lime slices on a plate and sprinkle over the radishes. Drizzle with some of the dressing and top with the mint leaves.

My mom always made this salad for Christmas dinner, so it's been a family favorite for many years. I teach special education at the high school level and often incorporate cooking into my lessons. Whenever we make this recipe at school, it's always a hit with the students.

The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest

3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

1/4 cup lemon juice

2 tablespoons Triple Sec, optional
2 medium kiwifruit, peeled, sliced and halved
2 medium ripe pears, peeled and chopped
2 medium Red Delicious apples, chopped
2 medium navel oranges, peeled and sectioned
2 cups seedless red grapes, halved
1 medium pink grapefruit, peeled and sectioned
CITRUS YOGURT SAUCE:
1 cup plain yogurt
2 tablespoons brown sugar
2 tablespoons sour cream
1 teaspoon grated orange zest
1/2 teaspoon vanilla extract

Steps:

  • For syrup, in a large saucepan combine the first five ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Cool. Stir in triple sec if desired. , In a large bowl, combine the kiwi, pears, apples, oranges, grapes and grapefruit; add syrup and gently toss. Cover and refrigerate overnight. In a small bowl, combine sauce ingredients. Cover and refrigerate overnight. Serve fruit salad with a slotted spoon; drizzle with yogurt sauce.
