Recipe video above. Pasta in a pink tomato cream sauce! You'll love how creamy this sauce is, how there's plenty of it and yet you don't need gallons of cream. Slurp-worthy as it is, or use it as a base for add ins of your choice - suggestions in the recipe notes.

300g/10 oz spaghetti
2 tbsp / 30g unsalted butter
3 garlic cloves (, minced)
½ onion (, finely chopped)
1 cup / 250 ml tomato passata (/ tomato puree (Note 1))
3/4 cup / 185 ml heavy / thickened cream ((Note 2 for subs))
1/2 cup / 125 ml milk (, low fat)
3/4 cup / 30g parmesan (, finely freshly grated (Note 3))
1 tsp dried basil, or other herb of choice
1 tsp chicken or vegetable stock powder (, or 1 bouillon cube, crumbled (Note 4))
Finely ground pepper + salt

Steps:

  • Cook pasta in a big pot of boiling water for time per packet MINUS 2 minutes. Just before draining, scoop out a mugful of pasta cooking water.
  • Melt butter in large skillet over medium heat. Add garlic and onion, cook until translucent - about 2 minutes.
  • Add remaining ingredients. Stir until parmesan is melted. Turn heat up slightly and simmer for 2 minutes. Adjust salt to taste.
  • Add pasta. Toss for 1 to 2 minutes or until sauce thickens and is clinging to pasta instead of swimming on the base of the skillet (video shows this well). Use reserved pasta cooking water if required to thin the sauce out if it gets too thick.
  • Serve immediately, garnished with more parmesan and parsley if desired.

Easy enough for a weeknight, but fancy enough for a dinner party, this Creamy Shrimp and Tomato Pasta is creamy and cheesy and so packed full of flavor.

1 lb spaghetti noodles
2 tablespoons olive oil, (divided)
1 cup chopped onion
5 cloves garlic, (minced)
2 (15-oz each) cans tomato sauce
1 teaspoon Italian seasoning
1 cup heavy whipping cream
1 cup freshly grated Parmesan cheese
1 lb shrimp, (peeled and deveined, tails removed)
fresh parsley (for garnish)

Steps:

  • Bring a large pot of water to a boil. Salt generously, then add the spaghetti. Cook until al dente. Before draining, reserve a mug full (at least a cup) of the pasta water.
  • In a large skillet, heat 1 tablespoon of the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook another 30 seconds, until fragrant. Add the tomato sauce and the Italian seasoning. Bring to a bubble, then reduce the heat to a simmer. Let the sauce cook and reduce for about 10 minutes.
  • Increase the heat slightly, and stir in the cream. Once the sauce is back to a simmer, add the cheese and stir until melted. Taste the sauce and season with salt and pepper, if needed.
  • In another skillet, heat the remaining 1 tablespoon of oil over medium heat. Add the shrimp and cook just until pink, 4-5 minutes.
  • Add the cooked pasta to the sauce, along with the shrimp. Stir to combine, adding the starchy pasta water as needed to loosen the sauce. Serve, topped with parsley if desired.

1 tbsp olive oil
2 fat garlic cloves , thinly sliced
2 large or 400g baby courgettes , sliced
400g orecchiette pasta, or any other small pasta shape
2 x 400g cans cherry tomatoes
good pinch of sugar
200g raw prawn , peeled
100g half-fat crème fraîche
small pack basil , leaves only, torn

Steps:

  • Heat the oil in a large pan, add the garlic and sizzle for a few mins, then add the courgettes and cook for a few mins more until starting to soften. Cook the pasta following pack instructions.
  • Add the tomatoes, sugar and seasoning to the pan, stir and simmer, uncovered, for about 10 mins while the pasta cooks.
  • Add the prawns to the sauce and bubble until they just turn pink. Drain the pasta and add to the sauce with the crème fraîche. Simmer for another 1-2 mins, then add the basil and serve.

2 tbsp olive oil
2 courgettes (about 500g), trimmed and coarsely grated
1 large garlic clove , finely grated
1 small red chilli , finely chopped
180g tagliatelle
150g raw king prawns , peeled and deveined
1 lemon , zested and juiced
½ small bunch of parsley , finely chopped

Steps:

  • Heat the oil in a frying pan and fry the courgette for 4-5 mins, then stir through the garlic and chilli.
  • Cook the tagliatelle following pack instructions. Drain, reserving some of the cooking water.
  • Add the prawns to the courgette mixture, and cook for 2 mins until pink. Toss through the tagliatelle, the lemon zest and juice, parsley, some seasoning and a splash of the reserved cooking water. Divide between bowls and serve.

400g bag cooked frozen prawn , defrosted
100g bag rocket
3 tbsp crème fraîche
25g parmesan , grated
400g linguine

Steps:

  • Bring a large pan of water to the boil, then cook the linguine according to pack instructions. Reserve a little pasta cooking water, then tip in the prawns, just to heat through, before draining.
  • Return the prawns and pasta to the pan, then tip in the rest of the ingredients. toss everything together, adding a little of the cooking water if the pasta is dry. Serve straight away.
