My family's favorite macaroni and cheese - cooked on top of the stove rather than baked! It's flavor is enhanced by the addition of prepared mustard. Little children love it because it's so creamy and cheese-y. For potlucks, make ahead and reheat in microwave, stirring, just before carrying to dinner.

2 cups macaroni, cooked according to package directions
1 1/2 tablespoons butter
2 tablespoons flour
1 1/2-2 cups whole milk or 1 1/2-2 cups skim milk
2 tablespoons prepared mustard
12 -16 ounces shredded cheddar cheese (medium , sharp or extra-sharp, 3-4 cups)

Steps:

  • In skillet on medium heat, melt butter; quickly whisk in flour to form a paste.
  • Immediately add milk, whisking constantly, to form a smooth medium white sauce.
  • Cook until mixture gnently boils and sauce thickens, adding a little more milk to make the sauce the consistency of gravy.
  • Add mustard and cheese, stirring to mix.
  • Cook until cheese melts and sauce is creamy.
  • Reduce heat to low and add macaroni, stirring to mix well and heat macaroni.
  • Serve.

This is a simple and quick main dish that is recommended to be served with a 7-Layer salad for a full meal. They suggest assembling the salad while the water comes to a boil for the pasta and making the sauce while the pasta cooks. Quick and easy for a weeknight meal.

4 cups elbow macaroni, uncooked
3 tablespoons flour
1 teaspoon salt
1/4 teaspoon black pepper
2 1/4 cups nonfat milk
1/4 cup reduced-fat cream cheese, softened
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1/2 teaspoon garlic, minced
1 1/4 cups reduced-fat cheddar cheese, shredded

Steps:

  • Cook pasta according to package directions, omitting salt and fat. Drain and set aside.
  • While the pasta cooks, place flour, salt, and pepper in a large saucepan.
  • Add milk, stirring with a whisk until well blended. Drop cream cheese by teaspoonfuls into milk mixture; bring to a boil over medium-high heat, stirring constantly.
  • Reduce heat; simmer 2 minutes or until thick and cream cheese melts, stirring occasionally.
  • Stir in mustard, Worcestershire, and garlic; simmer 1 minute.
  • Remove from heat.
  • Add cheddar cheese, stirring until cheese melts.
  • Combine pasta and cheese sauce in a large bowl; toss well.

2 c dry wheat macaroni OR other small-ish pasta (I used Barilla Piccolini Mini Rotini)
2 c skim milk
1 t salt
½ t mustard powder
generous dash of nutmeg
1 c grated cheese (Pick something strong and flavorful to maximize the taste - the better quality the cheese, the better your dish will be! I used Black Diamond Vintage Reserved Aged Five Years Cheddar Cheese)
2 T + 2 t seasoned bread crumbs

Steps:

  • 1. Place the dry pasta in a colander and run it under water quickly to rinse. Let drain. 2. In a medium saucepan, combine the uncooked pasta, milk, salt, mustard powder and nutmeg and bring to a simmer over medium heat. Make sure to stir frequently and stay near the stove during this step - milk goes from simmer to boil very quickly and can overflow if not watched! Once the mixture is simmering, turn the heat to low and cook for 15 minutes, stirring frequently, until milk is absorbed and macaroni is fully cooked. 3. Add grated cheese and stir into pasta. Turn off burner heat and cover saucepan. Let sit for about 5 minutes. 4. Heat a dry skillet over medium heat and add bread crumbs. Toast bread crumbs, stirring occasionally for a few minutes until browned. 5. Split macaroni & cheese into 4 bowls and sprinkle two teaspoons of toasted bread crumbs onto each serving. Enjoy! This is a nice, very creamy stove top macaroni and cheese that doesn't require a $6 brick of Velveeta. It has a very nice cheddar flavor and my family just loves it.

1 box (12 oz.) large macaroni noodles or mini ziti
3/4 stick butter
4 Tbsp all purpose flour
2 c milk
1/2 tsp salt
1 tsp seasoned salt
1/8 tsp dry mustard
1 can(s) cheddar cheese soup
1 pkg (8 oz.) shredded cheddar cheese

Steps:

  • 1. Cook the macaroni according to package directions, drain, set aside.
  • 2. Melt butter in pot over medium heat. Wisk in flour, 1 tablespoon at a time.
  • 3. Pour milk and continue to stir with wisk until thickened. This will make a thick white sauce.
  • 4. Add salts and dry mustard and stir to blend seasonings.
  • 5. Add macaroni & cheddar cheese. Mix until cheese is melted and sauce is smooth.
  • 6. If cheese sauce is too thick, add a bit more milk to thin out.
  • 7. Occasionally I like to add meatballs to this dish. Smoked sausage or diced ham are also good additions to this macaroni & cheese.
