A Company's Coming recipe that is totally delicious! Got this out of the CC Potato Book. This recipe is SO easy and SO good!

Number Of Ingredients 11

1 1/2 lbs peeled potatoes, cut up (about 3 medium)
water, to cook potato
2 tablespoons margarine (or butter)
1/4 cup all-purpose flour
2 cups milk
1/2 teaspoon onion salt
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon garlic powder (optional)
1 (10 ounce) box frozen chopped spinach, thawed and squeezed dry
1 tablespoon grated parmesan cheese

Steps:

  • Cook potato in water in med. saucepan until tender. Drain and then coarsely mash.
  • Melt margarine in medium saucepan. Stir in flour until smooth. Slowly whisk in milk. Add next 4 ingredients. Heat and stir until boiling and thickened.
  • Stir in spinach. Turn potato into greased 2 quart (2 L) baking dish. Pour sauce on top. Poke randomly with spoon to allow some sauce down into potato.
  • Sprinkle with Parmesan cheese. Bake in 350°F (175°C) oven for 30 minutes until hot. Serves 6.

Creamy Tarragon Scallops With Spinach & Smashed Potatoes image

Sauteed scallops in rich creamy tarragon sauce on bed of smashed potatoes and steamed fresh spinach. Great for a romantic twosome or dinner party! This serves two; can multiply for more. (Will post photo when published)

Number Of Ingredients 11

1 large potato, peeled, cut into 1 inch pieces
salt and pepper, to taste
3 -4 tablespoons unsalted butter, divided
3/4-1 cup half-and-half, divided
10 -12 sea scallops
10 -12 whole baby spinach leaves, stems removed
1 teaspoon garlic, minced
1/8 cup dry white wine
3 tablespoons yellow onions, chopped finely
1/4 cup half-and-half
1 1/2 teaspoons dried tarragon or 1 1/2 teaspoons fresh tarragon, if you have it

Steps:

  • Boil until potatoes are tender, about 8 minutes.
  • Drain.
  • Return to pot.
  • Smash potatoes.
  • Stir in 1 tablespoons butter. Stir in Half and Half and ½ teas. tarragon into warm smashed potatoes.
  • Season to taste with salt and pepper.
  • Set aside and keep warm.
  • Steam spinach leaves and keep warm.
  • Melt 2 tablespoons butter in cast iron or heavy skillet over medium-high heat.
  • Dry scallops and sprinkle with salt and pepper.
  • Add scallops; sauté until just opaque in center, about 2 minutes per side.
  • Transfer to plate; tent with foil.
  • Reserve juices in skillet.
  • Sauté onions in skillet until softened; add garlic, then wine.
  • Deglaze skillet.
  • Simmer over medium heat until absorbed, about 2 minutes. Reduce heat to MED-LOW.
  • Stir in about 1/2 cup Half and Half and 1 teas. tarragon; simmer 1-2 minute to thicken.
  • Season sauce to taste with salt and pepper.
  • To serve: Divide and place steamed spinach on top smashed potatoes on two warmed plates.
  • Divide scallops and place on spinach.
  • Divide sauce over all.

Fresh Spinach - 10 oz. bag (boiled & grinded)
Garlic - 4 cloves (roughly chopped)
Ginger - 1 inch piece (chopped)
Green Chilies - 2 to 3 (chopped)
Onions - 2 small (chopped)
Oil - 1.5 tbsp
Cumin Seeds - 1 tsp
Turmeric Powder - 1/2 tsp
Potatoes - 3 small (bite size cubes)
Tomato - 1 (chopped)
Red Chili Powder - 1 tsp
Coriander Powder - 3 tsp
salt to taste
Garam Masala - 1 tsp
Light Sour Cream - 2 to 3 dollops
Dry Fenugreek Leaves - 2 big spoons

Steps:

  • Boil a pot of water. When it boils, add the spinach leaves to the boiling water. Allow this to cook for 3 minutes. Drain. Set aside and allow this to cool. Chop garlic, ginger, green chilies and onions. Heat a pot on low-medium heat (dial #4), add oil, add cumin seeds. Once the cumin seeds sizzle, add the turmeric powder. Saute for 10 seconds. Add the ginger, garlic and green chillies. Saute for 20 seconds or so. Add the chopped onions. Saute for 3 minutes and then add salt. Cook for another 3-5 minutes until the onions are slightly carmelized. Stir to avoid burning. In the meantime, peel and chop the potatoes. Use 3 small. Once the onions are done, Add the potatoes. Combine. Lower heat to dial #3, cook this for 5 minutes. In the meantime, chop the tomato. Now add the tomato, salt, 1/2 tsp of red chili powder, and 2 tsp coriander powder. Combine. Cover and simmer on dial #3 for 10-15 minutes, or until the tomatoes and onions have combined into a paste. In the meantime, make the spinach paste. Add the spinach to a blender or Magic Bullet. You may need to add 2 tbsp - 4 tbsp of water to get the spinach to a smooth paste. Back to the onion-tomato mixture, this is what you should have after 10-15 minutes. Add the Spinach Puree....Combine. Cover and allow this to simmer for 10 minutes on dial #3. After 10 minutes, this is what you should have. There should be bubbles forming around the corners. The color will be an intense dark green. Check the potato, make sure it is fork tender, if it is pretty close, that is okay too. Proceed to the next step. Season with salt, 1 tsp garam masala, 1/2 tsp chili powder and 1 tsp coriander powder. Combine. Cover and cook for another 5 minutes on low (dial #3). Add 2-3 dollops of LIGHT Sour Cream... I used 3. Take 2 spoons of dry fenugreek leaves in your palm, rub them. Add the fenugreek leaves to the spinach. Make sure the Potato is fully cooked. Turn off the stove. Combine. Wait 20 minutes before serving... this will allow the flavors to combine. Serve with rice or roti... goes well with Onion Coriander Raita.

Number Of Ingredients 7

2-1/2 lb. new potatoes, quartered (7 cups)
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, cubed
1 cup milk
2 large shallots, finely chopped (about 1/2 cup)
4 cups loosely packed baby spinach leaves
3/4 cup KRAFT Finely Shredded Italian* Five Cheese Blend
6 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Cook potatoes in boiling water in large saucepan 15 min. or until tender.
  • Meanwhile, microwave Neufchatel, milk and shallots in microwaveable bowl on HIGH 2 to 3 min. or until Neufchatel is melted and mixture is hot, stirring after each minute.
  • Drain potatoes. Place spinach leaves in saucepan. Add potatoes, cream cheese sauce and shredded cheese; mix lightly. Transfer to shallow serving bowl; top with bacon. Serve immediately.
