CREAMY SHRIMP TORTELLINI
My husband and I love entertaining. This recipe is easy yet elegant, allowing us to visit with company while serving a dish that's sure to impress. Here, it's sized for two.

Steps:
- In a skillet, saute the green pepper, red pepper, mushrooms, onion and garlic in butter until almost tender. Stir in the flour, garlic salt, basil and oregano until blended. Combine cream and wine; gradually stir into pepper mixture. Add bay leaf. Cook and stir until mixture comes to a boil. Reduce heat; simmer, uncovered, for about 8 minutes or until thickened, stirring several times., Meanwhile, cook tortellini in boiling water for about 5 minutes or until tender; drain. Cook shrimp in boiling water for 3 minutes or until they turn pink; drain. Discard bay leaf. Stir tortellini and shrimp into sauce.

CREAMY SHRIMP & TORTELLINI SALAD
A creamy tortellini salad that's fit to serve company. I came up with this on an extremely warm day when I wanted to prepare dinner early and serve something cool. This can be adjusted according to amounts or type herbs you prefer.You can substitute chicken for the shrimp.Reduce fat by using low fat mayo and sour cream. Serve this one with a green salad and a glass of your favorite white wine.Cook time is prep and chill time

Steps:
- Cook tortellini according to package directions. Drain and set aside to cool.
- Mix together sour cream, mayonnaise, basil and chives. Stir in lemon pepper and garlic powder and salt.
- Add sour cream dressing mixture to the cooked tortellini and shrimp. Gently toss.
- Chill at least 2 hours.

CREAMY HERB CHICKEN TORTELLINI (OR SHRIMP/SCALLOPS, OR MEATLESS)
A flavourful cream cheese dip based sauce encasing plump cheese tortellini and a mixture of fresh vegetables. The original recipe called for chicken, but we have substituted shrimp and scallops many times, which makes it just as good. You may also omit the chicken/seafood to make it part of a vegetarian meal.

Steps:
- In a small bowl, blend herb and garlic dip, milk, and seasonings until smooth.
- In a medium/large pot cook tortellini according to directions.
- If using Chicken: In a skillet on Medium-High, add oil, chicken slices and garlic; stir fry for 5 minutes.
- If using Shrimp/Scallops: In a skillet on Medium-High, add oil and scallops; cook until done; remove from skillet, drain excess water, set aside; Add shrimp, garlic and vegetables (re-add the scallops in step 6).
- For both variations: Now add vegetables; stir fry until tender (and chicken is done).
- Reduce to low heat, stir in cooked tortellini and dip mixture.
- Heat through.
- Serves 5-6.
