2 cups unsweetened vanilla almond milk
1/3 cup canned pumpkin puree
2 Tbsp. unsweetened cocoa powder
2 Tbsp. maple syrup
1/2 tsp. ground cinnamon
dash of nutmeg
dash of cloves
coconut whipped cream (I love this tutorial)

Steps:

  • In a small saucepan over medium heat, whisk together almond milk, pumpkin puree, cocoa powder, maple syrup, and spices. Bring to a boil and continue stirring to ensure that everything is well-combined. Reduce heat to low and allow to simmer for about 5 minutes.
  • Remove from heat and transfer to mugs. Top with vegan whipped cream or your favourite hot chocolate toppings.

¼ c pumpkin puree (canned or homemade)
1 Tbsp cocoa powder
3-4 packets Truvia, or other sweetener to taste
¼ tsp cinnamon
pinch of salt (do not omit)
1 c unsweetened vanilla almond milk (see Notes)

Steps:

  • In the bottom of your mug, mix the first 5 ingredients plus 1 Tbsp of the almond milk with a fork until smooth.
  • Add ¼ of the remaining almond milk and mix again until smooth.
  • Add the rest of the almond milk, stir until smooth, and microwave for 1-1½ minutes. Give it a final stir and enjoy!
  • Whiz all ingredients in a blender, transfer to a mug, and microwave 1-2 minutes until hot.

2 tablespoons cacao powder
2 tablespoons maple syrup (see Tips section above in post for other options)
1 teaspoon unrefined coconut oil
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
2 tablespoons pure pumpkin puree

Steps:

  • In a blender or food processor combine milk, cacao powder, maple syrup, coconut oil and spices. Blend until smooth.
  • Add pumpkin puree. Blend until smooth and frothy.
  • Pour into a saucepan and heat over medium heat until warmed throughout.

Seeing the popularity of Recipe #395033, I decided to make up my own vegan hot chocolate recipe-- a perfect fall or winter drink! It has just the perfect consistency and warming flavor without being too sweet. Feel free to add a little sugar if you think it needs it. Soymilk might do fine for this recipe too but vanilla ricemilk is what I had on hand.

1 cup vanilla-flavored rice milk (approx)
2 tablespoons pumpkin puree
2 teaspoons cocoa powder
3 dashes pumpkin pie spice (a few shakes)

Steps:

  • STOVETOP: Whisk all the ingredients together and heat gently.
  • MICROWAVE: Put the pumpkin, cocoa powder, and spice in the bottom of the standard size mug first, mix together well. Pour on the vanilla ricemilk on until almost full then mix together, nuke it until hot. (Double recipe if using an extra tall or wide mug.).
