1 (2 pound) package frozen hash brown potatoes
⅓ cup chopped green onions
2 cups shredded Cheddar cheese, divided
1 (10.75 ounce) can condensed cream of potato soup
¼ cup butter
2 cups sour cream
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a small pot, heat the soup, butter or margarine and sour cream over low heat.
  • Combine potatoes, green onion and 1 cup cheese into a large mixing bowl. Mix in the heated soup mixture. Season with salt and pepper. Pour into a 9x13 inch dish. Sprinkle one cup of cheese over the top of the casserole.
  • Bake 30 to 45 minutes. Serve warm.

Total comfort food! You will need 3/4-inch thick pork chops for this, make certain to slice the potatoes the same thickness as the chops to assure that both are cooked at the same time. You can use fresh mushrooms instead of canned but they will need to be sauteed firstly to release their liquid. Serve this with hot cooked buttered egg noodles and green beans!

8 boneless pork chops (about 3/4-inch thick)
seasoning salt
black pepper
2 tablespoons oil
2 tablespoons butter
6 medium russet potatoes (sliced about 3/4-inch thick)
2 medium onions, halved and thinly sliced (can use 1 onion)
1 -2 tablespoon fresh minced garlic
2 small celery ribs, finely diced
1 (10 ounce) can mushroom pieces, well drained
2 (10 ounce) cans cream of mushroom soup, undiluited
1 (8 ounce) container sour cream
1/2 cup milk
1/4 cup grated parmesan cheese
2 cups shredded old cheddar cheese, divided

Steps:

  • Het oven to 325 degrees.
  • Butter a 13 x 9-inch baking dish.
  • Heat oil with butter in a skillet.
  • Season the chops with seasoned salt and black pepper, add to the skillet and lightly brown on both sides; remove to a plate and set aside.
  • To the same skillet (add in more butter and/or oil if needed) add in onion, garlic, celery and mushroom pieces; saute for about 3 minutes; remove from heat.
  • Arrange the potato slices in the buttered baking dish, then top with the onion/celery mixture.
  • In a bowl combine the mushroom soup with sour cream, milk and Parmesan cheese, 1 cup grated old cheddar cheese, 1 teaspoon seasoned salt and black pepper to taste.
  • Spoon the soup mixture over the potatoes and onions.
  • Arrange the browned chops on top.
  • Cover with foil and bake about 1-3/4 to 2 hours or until the chops and potatoes are tender.
  • Remove from oven and sprinkle with about 1 cup (or more or less) grated old cheddar cheese, then return to oven uncovered for another 8-10 minutes.
  • Let stand about 10 minutes before serving.

2 cups crumbled feta cheese, to taste
2 -3 cloves fresh minced garlic, to taste

Steps:

  • Cook the poatoes in boiling water until very tender.
  • Mash with a potato masher or a fork.
  • In a large bowl, mix together the mashed potatoes with the butter, sour cream, salt and pepper.
  • Set the oven to 350 degrees.
  • Butter a 10 cup casserole dish.
  • Wash the fresh spinach leaves (if using fresh spinach).
  • Place the wet leaves in a microwave-safe dish; cover, and microwave on HIGH for 2-3 minutes, when cool, enough to handle, squeeze out all excess moisture.
  • Chop coarsley, and place in a medium-size bowl; stir in the feta cheese and the garlic.
  • Stir the spinach mixture into the potatoes.

A friend of my mother's made this when I was younger. It was the BEST potato dish I'd ever had. Thirty years later - and lots of tinkering - I finally replicated it. Now my husband and kids are big fans, too. I hope your family enjoys this as much as we do.

6 large potatoes
1/4 cup butter
1 (10 3/4 ounce) can cream of chicken soup
1/3 cup green onion, chopped
1 pint sour cream
1 1/2 cups shredded cheddar cheese
1 cup crushed corn flakes
2 tablespoons butter

Steps:

  • Preheat oven to 350.
  • Butter 2.5 quart casserole dish and set aside.
  • Bring 6 quarts of water to boil.
  • Peel the potatoes, rinse them, then slip them into the boiling water. Cook them until they are easily pierced with a fork (around 15 minutes). Drain, return to pot and immediately mash with hand-masher or beater.
  • While potatoes are cooking, melt 1/4 cup butter in a saucepan over medium heat. Once melted, stir in the can of soup. Remove the pan from heat.
  • Blend into soup mixture: sour cream, onion (reserve a few for garnish) and the shredded cheddar.
  • Stir this soup mixture into the mashed potatoes.
  • Pour it all into buttered 2.5 quart casserole.
  • Mix cornflakes with melted 2 T. butter. Sprinkle on top of potatoes.
  • Bake 45 minutes at 350.
  • Sprinkle with reserved chopped green onions before serving.

Do not skimp on the salt, pepper, and nutmeg otherwise the casserole will be too bland (but you can of course always salt at the table).

1 pound parsnips (about 3 large)
1 onion (about 1/2 pound)
1 pound russet (baking) potatoes (about 2 medium)
3 1/2 tablespoons unsalted butter
2 teaspoons salt
freshly grated nutmeg to taste
5 ounces fresh Robiola cheese* (about 150 grams) or mascarpone cheese* (about 2/3 cup)

Steps:

  • Keeping cabbage whole, cut out and discard core and any discolored outer leaves. Beginning at top of head and working with 1 leaf at a time, remove 6 outer leaves, rolling each one back on itself until it can be loosened intact from head, and reserve. Cut remaining cabbage head into 8 wedges and cut each wedge crosswise into 3 pieces. Separate layers of cabbage pieces. Peel parsnips and diagonally cut into 1/8-inch-thick slices. Chop onion. Peel potatoes and cut crosswise into 1/8-inch-thick slices.
  • Bring a large kettle of salted water to a boil and cook reserved cabbage leaves until just tender, 3 to 5 minutes. With a slotted spoon transfer cabbage leaves to a kitchen towel to drain. Add cabbage pieces to boiling water and cook until crisp-tender, about 3 minutes. With slotted spoon transfer pieces to a colander to drain and transfer to a bowl. Add potatoes to boiling water and cook until just tender, about 4 minutes. With slotted spoon transfer potatoes to colander to drain and transfer to another bowl. Add parsnips to boiling water and cook until just tender, about 3 minutes. Drain parsnips in colander.
  • In a 12-inch heavy skillet cook onion in 3 tablespoons butter over moderately low heat, stirring, until softened. Add cabbage pieces, salt, nutmeg, and pepper to taste and cook mixture over moderate heat, stirring occasionally, until cabbage is tender, about 10 minutes. If any liquid remains in skillet, cook mixture over high heat until liquid is evaporated, about 1 minute.
  • If using Robiola, cut into pieces. Stir Robiola or mascarpone into cabbage mixture and cook over moderate heat, stirring, until cheese is melted.
  • Preheat oven to 375°F.
  • Butter a 2-quart ovenproof round serving dish (about 8 1/2 to 9 inches across and 2 1/2 inches deep) and line with cabbage leaves, letting leaves overhang 1 to 2 inches. Arrange half of potatoes in serving dish and season with salt and pepper. Top potatoes in dish with half of cabbage mixture and arrange half of parsnips over cabbage. Repeat layering with remaining potatoes, cabbage mixture, and parsnips, arranging last layer of parsnips decoratively around edge of casserole and leaving cabbage exposed in center. Dot parsnips with remaining 1/2 tablespoon butter. Fold cabbage leaves over parsnips and cover tightly with a double layer of foil. Casserole may be prepared up to this point 1 day ahead and chilled. Bring casserole to room temperature before proceeding. Bake casserole until heated through and bubbling, about 1 hour.

1 cup nonfat sour cream
1 cup fat-free cottage cheese

1 teaspoon dried basil

Steps:

  • Mix sour cream, cottage cheese, about 1/2 the cheddar, garlic, salt, pepper& basil in large mixing bowl.

  • Pour mixture in a 13 by 9 pan that you sprayed with Pam.

  • In a baggie, crush corn flakes and then add some salt, pepper and garlic powder and toss around a bit.

1 can cream of chicken soup

2 cups shredded sargento mexican 4-blend cheese
1 cup durkee fried onions, regular or cheese-flavored

  • 1. In large bowl, blend soups and cream cheese. Microwave til creamy and cheese is melted, stirring occasionally. Stir in well, the dressing mix, then fold in 1 cup (half) the shredded cheese, then the potatoes. Fold well til all potatoes are coated. Pour/spoon into lightly greased 13x9 glass baking dish, mashing down a little, and spreading in pan evenly. Sprinkle top with rest of shredded cheese. COVER and bake at 350º for 50-55 minutes. This hash brown potato casserole recipe is the best I've ever had. The extra sour cream really makes it moist unlike other, drier recipes! The Velveeta shredded cheese is very important. If you can't find it in a superstore retailer's grocery section, try a dedicated grocery store. This recipe came from my good friend Nancy.

2 lbs frozen hash brown potatoes, defrosted
1/2 cup margarine, melted
1 (10 ounce) can cream of chicken soup
2 cups Velveeta cheese, shredded ("Velveeta Shreds")
1/4 teaspoon pepper
1/4 teaspoon garlic powder (optional)
1/4 cup onion, finely chopped
1 teaspoon salt
1 pint sour cream
1/2 cup milk

Steps:

  • Preheat oven to 350 degrees.
  • Mix all ingredients together.

1 can (10 3/4 oz) condensed cream of mushroom soup
1/2 cup milk
1/4 teaspoon pepper
1 can (2.8 oz) French-fried onions
4 cups frozen country-style shredded hash brown potatoes (from 30-oz bag)
1 bag (12 oz) frozen cut green beans

Steps:

  • In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until brown; drain. Stir in soup, milk, pepper and half of the onions.
  • Spray 3 1/2- to 4-quart slow cooker with cooking spray. Layer potatoes and green beans in cooker. Top with beef mixture; spread evenly.
  • Cover; cook on Low heat setting 6 to 7 hours. Top with remaining onions before serving.
