1 large garlic clove, minced
⅓ cup mayonnaise
⅓ cup sour cream
⅓ cup buttermilk
3 tablespoons rice wine vinegar
2 tablespoons salt
1 pound bow tie (farfalle) pasta
8 ounces trimmed asparagus, cut into 1-inch lengths
1 pound cooked chicken breast strips, pulled into bite-size pieces
8 ounces cherry tomatoes, halved and lightly salted
1 (14 ounce) can whole artichoke hearts, drained, cut into sixths
3 green onions, thinly sliced
½ cup pine nuts, toasted in a small skillet over low heat until golden
¼ cup pesto (homemade or refrigerated prepared variety)

Steps:

  • Mix dressing ingredients in a small bowl; keep chilled until ready to toss with salad. (Store in clean jar with lid.)
  • Bring 1 gallon of water and 2 Tbs. of salt to boil in a large soup kettle. Add pasta and, using package times as a guide, boil, stirring frequently and adding asparagus the last 1 minute, until just tender. Drain thoroughly (do not rinse) and dump onto a large, lipped cookie sheet. Set aside to cool while preparing remaining salad ingredients.
  • Place all salad ingredients (except buttermilk dressing) in a large bowl or transfer to a gallon-size zippered bag. (Can be covered and refrigerated several hours at this point.) When ready to serve, add dressing; toss to coat and serve.

Steps:

  • In a large pot or Dutch oven over medium-high heat, cook the bacon until crispy. Add chicken and season with salt, pepper, and garlic powder. Cook until the chicken is no longer pink, then remove from the pot and set aside.
  • Add the onions and garlic and cook to the pot and cook until softened. When onions are caramelized, add spinach and cook until wilted. Add the milk and bring to boil. 3 cloves garlic
⅓ cup freshly grated Parmesan cheese
⅓ cup pine nuts
1 medium ripe tomato, chopped
¼ cup olive oil
¼ cup chicken broth
1 cup white wine

2 teaspoons dried oregano
2 cloves garlic, minced

Steps:

  • Place basil, garlic, Parmesan, pine nuts, and tomato in a food processor. Gradually add olive oil, while pulsing, until mixture is smooth and creamy.
  • In a bowl, stir together chicken broth, 1 cup white wine, dried basil, oregano, and minced garlic. Stir in chicken pieces.
  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook until just al dente, about 8 minutes. Drain, and rinse under cold water. Toss with 2 tablespoons olive oil. Set aside.
  • Heat 3 tablespoons olive oil in a skillet over medium heat. Stir in onions, and sprinkle with sugar. Cook until the onions are soft and translucent. When I make it, I thaw the shrimp by putting them in the same colander I am going to use for the pasta. Then I pour the pasta and its boiling water over the shrimp, and--voila--thawed shrimp! The recipe is very pesto-y, so, if you like, feel free to cut down on the pesto and use more sun-dried tomatoes. Also, use whatever pasta shape you like (we prefer long noodles, for instance).

The addition of avocado lends a lovely creamy texture to this pesto. The ripe fruit imparts richness to the sauce, while nutty roasted pepitas add a deep toasty flavor. If you can only find raw pepitas, simply toss them with olive oil and salt, then toast in a skillet over medium-low heat, stirring, until they start to pop and turn golden brown. Shower the dressed pasta with more crunchy pepitas for a nice contrast to the velvety sauce. Leftover pesto can be refrigerated for two days; press the surface with plastic wrap to avoid discoloration (any browned areas on top should be scraped off before using). Steps:

  • Bring a large pot of salted water to a boil.
  • Meanwhile, in a food processor, pulse pepitas and garlic until finely chopped. Halve avocado, discard the pit and scoop out flesh. (You should have about 3/4 cup, or 5 ounces.) Add avocado flesh, lemon juice, 1 teaspoon salt and 1/2 teaspoon pepper to food processor and pulse until chunky.
  • Add cheese and basil to food processor. With motor running, drizzle in 1/2 cup water, then drizzle in oil until well blended, scraping down sides as needed. Transfer 2 cups of pesto to a large bowl. Refrigerate any remaining pesto for another use.
  • Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain pasta. Add pasta and pasta water to pesto in large bowl and toss until pasta is nicely coated in sauce.

Steps:

Ramps are one of those items that seem so appealing at the market but can be a challenge to use when you get them home. This dish solves the problem. Because the recipe comes from Rachael Ray, who made her name teaching a generation to get dinner on the table in 30 minutes, it's quick to make once you have the ramps blanched. The pesto comes together fast, so you can make it while the pasta is boiling. The creaminess of the ricotta tempers the ramps, which can vary in their pungency. Pink peppercorns are berries, not true peppercorns. They add a lovely look to the finished pasta and bring a more delicate fruitiness and a quieter heat than black pepper; if you can't find them, black pepper will do just fine.

1 large bunch of ramps (about 1/2 pound), cleaned, roots trimmed, bulbs and stems separated from leaves
Zest and juice of 1 lemon
1/4 cup shelled pistachios (preferably the bright green Sicilian variety), lightly toasted
1/2 cup grated Parmigiano-Reggiano
1/3 cup extra-virgin olive oil
Kosher salt, to taste
3/4 cup bufala ricotta, fresh cow's milk ricotta or mascarpone (6 ounces)
1 pound fusilli lunghi or bucatini
Freshly ground pink peppercorns, for serving (or use ground black pepper)

Steps:

  • Bring a large pot of water to a boil for pasta. Set aside an ice-water bath in a medium bowl.
  • Blanch the ramp leaves in boiling water for 15 seconds. Remove with a spider or slotted spoon and immediately plunge them into the ice bath. Drain the leaves and dry on a kitchen towel. Tops should be bright and vibrant green in color.
  • Add the blanched leaves to a food processor with 1/4 of the ramp bulbs and stems, plus the lemon zest and juice, the pistachios and the Parmigiano-Reggiano. Pulse to finely chop, and stream in the olive oil until the pesto comes together into a thick sauce. Taste and, if desired, add more bulbs and stems, a few at a time, then add salt to taste and pulse to combine. (Reserve the remaining bulbs and stems for use in dressings, sautéed vegetable dishes or eggs.)
  • Place the ricotta or mascarpone in large mixing bowl.
  • Salt the pasta water and cook pasta about 1 minute less than package directions for al dente. Just before draining, remove 1/2 cup of the pasta cooking water and add to the ricotta or mascarpone to soften and loosen the cheese. Add the ramp pesto and stir to combine. Drain pasta, add to sauce and toss to coat. Transfer pasta to a serving dish or individual bowls, and top with a generous amount of pink peppercorn.

1 small bunch kale, stems removed, roughly chopped
½ cup fresh basil
½ cup olive oil
½ cup roasted salted almonds
½ cup grated Parmesan cheese
2 cloves garlic
1 lemon, zested and juiced
Salt and pepper, to taste

Steps:

  • In a Dutch oven or large pasta pot, cook pasta according to package directions. Drain pasta water, rinse and return to pot. Set aside.
  • In a saucepan over medium-low heat, saute shallots and garlic in olive oil until softened and fragrant, about 3 to 4 minutes. Season with a hefty pinch of salt and pepper. Add flour, coating shallot and garlic to start a roux. Slowly pour in Almond Breeze, whisking constantly until smooth, and bring mixture to a simmer. Let cook for an additional 5 to 8 minutes, or until thickened. Add lemon juice and nutritional yeast, and season with salt and pepper, to taste.
  • Transfer to a blender and puree until smooth. Blending will help the sauce thicken.
  • While sauce is cooking, pulse pesto ingredients in a blender or food processor, scraping down the sides with a rubber spatula, until mixture is smooth. Season to taste, and set aside.
  • To finish, combine sauce, 1/2 cup of the kale almond pesto and pasta, and stir until well mixed. Serve on plates or in deep bowls, and garnish with extra Parmesan cheese and basil.

100 g mushrooms, sliced
60 g prosciutto or 60 g ham, chopped
2 tablespoons pesto sauce
500 g penne pasta
2 tablespoons butter
2 garlic cloves, minced
2 tablespoons flour
3/4 cup chicken stock
3/4 cup milk
salt and pepper, to taste
1/3 cup grated cheese (cheddar, parmesan, whatever takes your fancy)

Steps:

  • Put pasta on to boil.
  • While the pasta is cooking, melt the first lot of butter and saute mushrooms, garlic and proscuitto (or ham). Remove from pan, keep warm.
  • Melt second lot of butter. Add flour and cook 1 minute, stirring constantly.
  • Stir in stock and milk and cook, stirring frequently, until sauce thickens.
  • Add the mushrooms, proscuitto and cheese.
  • Stir until cheese is melted.
  • Add the pesto, salt and pepper.
  • Toss hot pasta with sauce and serve immediately.

2 cups dry pasta (or equivalent of fresh pasta)
1 tablespoon olive oil
2 chicken breasts, diced
1 red onion, peeled and diced
1/3 cup sun-dried tomato pesto
1/3 cup creme fraiche
1/2 tablespoon finely grated parmesan cheese
salt and pepper, to taste

Steps:

  • Bring water to the boil in a saucepan and start to cook the pasta (if using fresh pasta, start cooking it later).
  • Heat the oil in a skillet over a medium heat. Add the diced chicken and cook for 4 minutes.
  • Add the diced red onion and cook for a further 5 minutes.
  • Add the sundried tomato pesto and creme fraiche to the chicken and onion in the skillet. Stir and heat through thoroughly, making sure the chicken is fully cooked.
  • Stir in the grated parmesan cheese and season to taste with salt and pepper.
  • Add the sauce to the pasta, stir through and serve, or alternatively serve the pasta topped with the sauce.

3 boneless skinless chicken breasts
1 cup bottled lemon pepper marinade (I used Ken's)
2 tsp dried basil
2 Tbsp butter
1 tsp minced garlic
2 Tbsp flour
1 cup milk
1 tsp lemon zest
1/3 cup pesto
12 oz linguine
1 tomato, chopped and seeded

Steps:

  • Combine lemon pepper marinade and dried basil. Pour over chicken and marinate in the refrigerator for at least 30 minutes. (I usually marinate the chicken overnight) Grill chicken for 12-15 minutes, or until done (165 degrees). While the chicken is grilling, cook pasta according to package directions; drain. Set pasta aside and keep warm. Meanwhile, prepare the pesto sauce. Melt butter in a medium saucepan over medium heat. Stir in garlic and cook until fragrant, about 30 seconds. Whisk in flour until it thickens and bubbles, then whisk in milk and lemon zest. Continue to whisk mixture and cook until slightly thickened, about 3-5 minutes. Add pesto and mix well. To serve, slice chicken into strips. Toss cooked pasta in the pesto, top with chicken and garnish with tomatoes.

1 lb pasta (penne, linquini or bow ties)
3 boneless chicken breasts
1 teaspoon olive oil
2 tablespoons butter
3 tablespoons sun-dried tomatoes, chopped
1 teaspoon garlic powder
1/4 cup butter
2 cups heavy cream
1 cup grated parmesan cheese
2 tablespoons basil pesto
shredded parmesan cheese (to garnish)

Steps:

  • Cook pasta according to package. Drain and set aside.
  • In large skillet, melt 2 tablespoons butter and the olive oil over medium heat.
  • Brown chicken breasts on both sides until nicely golden and cooked through, about 8-9 minutes each side. Remove from pan and cut into 1/2 pieces.
  • Pour out drippings from pan but don't wipe the pan out. In the same pan, melt 1/4 cup butter on medium heat. Add the garlic and sun-dried tomatoes. Sauté for 2 minutes. Stir in heavy cream and dash of white pepper. Cook 5-6 minutes, stirring frequently. Slowly stir in the parmesan cheese into a creamy mixture, stirring constantly. Stir in the pesto sauce and cook for about 5 minutes, until thickened. Stir in the chicken pieces for about 3 minutes.
  • Serve with breadsticks.
  • Serve chicken and sauce over the hot noodles.
  • Garnish with parmesan cheese and fresh ground black pepper (optional).
