This Creamy Garlic Parmesan Orzo can be on your table in 15 minutes! While it's perfect as a side dish, I prefer this as a meal on its own because it's cheesy, creamy and really hits the spot.

Number Of Ingredients 11

2 tablespoon olive oil
4 tablespoon butter (unsalted)
1 small onion (chopped)
4 cloves garlic (minced)
2 cups orzo (dry)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
2 cups chicken broth (low sodium)
2 cups half and half
1 1/2 cup Parmesan cheese (freshly grated)
2 tablespoon fresh parsley (chopped)

Steps:

  • In a large skillet add the olive oil, butter and cook for about 30 seconds until the butter melts. Stir in the onion and garlic and let it cook for about 2 minutes until the onion softens and the garlic becomes aromatic.
  • Add the orzo to the skillet and let it cook for about 2 minutes just in the oil so that it starts to toast lightly, this will give it a nutty flavor.
  • Season with salt and pepper then stir in the chicken broth and half and half. Bring to a boil, then turn the heat down to a medium-low, cover with a lid and let it cook for 5 minutes.
  • Remove the lid and stir in the Parmesan cheese and fresh parsley.
  • Serve immediately.

This is a recipe, that I created with what I had and thought would be quite flavorful. I wanted something not heavy to serve with my Tailgate Meatballs.The family absolutely loved it. Was super delicious, if I do say so myself. You could add some cooked chicken or shrimp to this for a more complete meal. Enjoy!

3/4 cup(s) uncooked orzo pasta
2 tablespoon(s) butter
2- 3 teaspoon(s) jarred minced garlic or a few fresh cloves, minced
1/3 cup(s) fine chopped onion
2 slices - mushrooms, diced - optional
2 thin slice(s) prosciutto - diced - optional
2 1/4 teaspoon(s) flour
1 cup(s) milk
1/2 cup(s) shredded parmesan cheese
1 cup(s) fresh spinach, chopped
salt - & pepper to taste
a few pinch(es) ground nutmeg

Steps:

  • Cook pasta according to directions, about 9 minutes once water boils, drain.
  • In a med to large skillet, melt butter over med heat. Stir in onion, garlic and mushrooms if using and proscuitto. Cook for 2 - 3 minutes, stirring often.
  • Stir in the flour and cook for another minute, making sure not to scorch.
  • Whisk in the milk, slowly and bring to a simmer. Continue cooking until becomes bubbly and thickens.
  • Remove from burner and stir in the Parmesan cheese, until melted. Stir in the spinach and orzo and toss to coat. Return to burner, add nutmeg, salt & pepper to taste, cook only long enough to heat pasta and wilt the spinach.
  • Serve immediately. Delicious!

This is one of our favorite side dishes. It is really creamy and quite delicious! It is a recipe that I got from my Grandmother-in-law. Ive kinda changed it around a bit to suit our tastes. Enjoy!!!

1 cup orzo pasta
3 tablespoons extra virgin olive oil
1/4 cup diced onion
2 garlic cloves, minced
2 (10 1/2 ounce) cans chicken broth, warmed. (I like campbells)
1/2 cup parmesan cheese
1/8 teaspoon salt
1/4 teaspoon pepper

Steps:

  • heat the olive oil in a skillet over about medium-high heat.
  • add onion and saute for a few minutes
  • add garlic and orzo pasta and saute until the orzo is starting to brown slightly.
  • add a dash of salt and pepper. BE CARFUL WITH THE SALT! with the chik. broth and parmesan cheese it will be to salty if you add too much.
  • Start adding the warmed chicken broth a little at a time letting it evaporate before you add more. Do this with about half of the chicken broth and then pour in the rest of it.
  • Let this come back to a simmer.
  • cover and reduce heat to low.
  • simmer for about 30 minutes or until orzo is al dente.
  • Just before serving add parmesan cheese to taste. I use a couple of palms full.

From Cooking Light, this is a wonderful side or light main dish. It is good even without the pine nuts if you don't have them on hand, also any herb will work for the basil, you just may need a little more or less depending on the herb.

1 cup orzo pasta
1 1/4 cups low sodium chicken broth
1 1/4 cups water
1/4 cup parmesan cheese, fresh is better
2 tablespoons fresh basil, chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
4 teaspoons pine nuts, toasted

Steps:

  • Heat butter in a medium saucepan over medium heat. Add orzo and cook 3 minutes, stirring constantly.
  • Stir in broth and water; bring to a boil. Reduce heat and simmer until liquid is absorbed, and orzo is done, about 15 minutes.
  • Remove from heat; stir in cheese, basil, salt and pepper. Sprinkle with pine nuts. Serve immediately.
